Grain-Free Banana Bread image

1 cup mashed ripe bananas
1 cup Chosen Foods Avocado mayo
1 cup honey
1 cup almond flour
3/4 cup potato starch
2 teaspoons baking powder
1 teaspoon baking soda
1 tablespoon cinnamon
1/4 teaspoon grated nutmeg
1 pinch salt

Steps:

  • Preheat the oven to 350ºF. In a large mixing bowl, whisk together the mashed bananas, mayo, and honey until combined.
  • In a separate bowl, combine the remaining dry ingredients. Whisk together to remove any clumps and all the dry ingredients are fully incorporated. Add the dry ingredients to the wet, banana mixture. Whisk to combine.
  • Line a 9×5 inch loaf pan with parchment paper. Pour the batter into the lined loaf pan and bake for 60-65 minutes. Oven times may vary depending on how uniform your oven is. Allow banana bread to cool for at least 10 minutes before serving.
