A quick and easy recipe to prepare, with a great spicy flavor, especially good when grilled. NOTE: 2 hours of the cooking time is actually the time for marinating.

4 (6 ounce) boneless skinless chicken breasts
1/3 cup canola oil or 1/3 cup vegetable oil
2 1/2 tablespoons cider vinegar
1 tablespoon chopped fresh cilantro
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon italian seasoning
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Flatten chicken breasts into an even thickness (about 1/2 inch); set aside.
  • Combine the oil, vinegar, cilantro, chili powder, garlic powder, Italian seasoning, cumin, salt and pepper.
  • Place chicken in a resealable plastic bag; add marinade. Refrigerate 1-2 hours.
  • Remove the chicken; discard marinade. Grill 4-6 minutes per side or until no longer pink.

1-1/2 pounds boneless skinless chicken thighs, cut into 1-inch cubes
1 tablespoon olive oil
1 smoked ham hock
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
1 can (4 ounces) chopped green chilies
1/4 cup chopped onion
2 tablespoons minced fresh cilantro
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/8 to 1/4 teaspoon crushed red pepper flakes
Sour cream, optional

Steps:

  • In a large skillet, brown chicken in oil. Transfer to a 3-qt. slow cooker. Add the ham hock, beans, broth, chilies, onion and seasonings. Cover and cook on low for 6 to 8 hours or until ham is tender. , Remove ham bone. When cool enough to handle, remove meat from bone; discard bone. Cut meat into bite-size pieces and return to slow cooker. Serve with sour cream if desired.

1 can (11 oz) whole kernel corn, drained
2/3 cup chopped red onion
1/4 cup chopped fresh cilantro
3 tablespoons lime juice
1 tablespoon olive or vegetable oil
1 medium avocado, pitted, peeled and cut into bite-size pieces
1 clove garlic, finely chopped
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 teaspoon chili powder
1/2 teaspoon paprika
1 cut-up whole chicken (3 to 3 1/2 lb)

Steps:

  • In medium nonmetal bowl, mix relish ingredients. Cover; refrigerate at least 1 hour to blend flavors.
  • Mix chili powder and paprika; sprinkle over chicken.
  • Heat gas or charcoal grill. Place chicken, skin sides up, on grill rack over medium heat. Cover grill; cook 15 minutes. Turn chicken. Cover grill; cook 20 to 40 minutes longer, turning occasionally, until juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and drumsticks). Serve with relish.
