Steps:

  • Spread 1 bread slice with pesto; top with tomatoes, chicken and Singles. Cover with remaining bread slice.
  • Spread outside of sandwich with mayo.
  • Cook in large nonstick skillet on medium-high heat 3 min. on each side or until Singles is melted and sandwich is golden brown on both sides.

2 teaspoons olive oil
4 skinless, boneless chicken breast halves
1 tablespoon red wine vinegar
1 tablespoon fresh lime juice
½ teaspoon white sugar
salt and ground black pepper to taste
1 green onion, chopped
1 clove garlic, minced
½ teaspoon dried oregano
⅓ cup light mayonnaise
1 tablespoon canned chipotle peppers in adobo sauce, seeded and minced
1 ½ tablespoons chopped green onion
1 ½ tablespoons sweet pickle relish
8 slices sourdough bread
4 slices mozzarella cheese
1 cup torn lettuce

Steps:

  • Heat olive oil in a large skillet over medium heat and pan-fry chicken breasts until browned and no longer pink inside, about 10 minutes per side.
  • Sprinkle chicken breasts with red wine vinegar, lime juice, sugar, salt, black pepper, 1 chopped green onion, garlic, and oregano; pan-fry until green onion is soft, an additional 5 minutes per side. Transfer chicken breasts to a plate and keep warm.
  • Place light mayonnaise and chipotle pepper into a blender and blend until smooth. Transfer to a bowl and stir in 1 1/2 tablespoon of chopped green onion and sweet pickle relish.
  • Toast sourdough bread slices.
  • Layer 4 bread slices each with 1/4 cup of lettuce, a chicken breast, and 1 mozzarella cheese slice. Spread remaining slices with chipotle mayonnaise and place on top to make sandwiches. Serve while still warm.

1/2 cup extra-virgin olive oil
1 large clove garlic, cracked away from skin
8 slices crusty Italian bread
1 pound smoked fresh mozzarella cheese, sliced
2 ripe tomatoes, thinly sliced
8 basil leaves, torn

Steps:

  • Heat a grill pan over medium low to medium heat. Heat oil and garlic in a small pot over low heat. Brush 4 slices of the bread with garlic oil on 1 side. Place garlic oil side down on the grill. Top with sliced cheese, tomato and basil. Place another slice of bread on top of each sandwich. Brush sandwiches with garlic oil. Press sandwiches with heavy skillet or a brick covered with tin foil. 1/2 cup KRAFT Zesty Italian Dressing, divided
4 small boneless skinless chicken breasts (1 lb.)
1 cup sliced onions
1/4 cup KRAFT Real Mayo
1 Tbsp. chopped chipotle peppers in adobo sauce
1 large tomato, cut into 1/4-inch-thick slices
4 hamburger buns
4 KRAFT Singles

Steps:

  • Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of each. Repeat with onions and remaining dressing in separate dish. Refrigerate chicken and onions 30 min. to marinate. Meanwhile, combine mayo and chipotle peppers; refrigerate until ready to use.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165°F). Meanwhile, place large sheet of foil on grill grate next to chicken. Place onions and tomatoes on foil. This recipe served as the cover photo for the August 2007 issue of Food and Wine magazine. I couldn't get my mind off the photo and made these the very next day. This is a perfect summertime sandwich! Quick, easy and delicious. Prep time includes marinating time.

1/4 cup extra virgin olive oil, plus
2 tablespoons extra virgin olive oil
1 lemon, zest of, finely grated
1 1/2 tablespoons fresh lemon juice
1 tablespoon thyme leaves
2 garlic cloves, minced
kosher salt & freshly ground black pepper
2 tomatoes, thinly sliced
12 chicken breasts, cutlets (half inch thick totaling 2 1/2 pounds)
6 ciabatta rolls, split
6 slices fresh mozzarella cheese (1/3 inch thick)
6 large basil leaves

Steps:

  • In a large bowl, whisk 1/4 cup of the olive oil with the lemon zest, lemon juice, thyme, garlic and a generous pinch each of salt and pepper. Spoon 1» tablespoons of the mixture into a medium bowl, add the tomatoes and turn to coat. Add the chicken to the large bowl and turn to coat. Let the tomatoes and chicken stand at room temperature for 30 minutes.
  • Light a grill. Brush the rolls with the remaining 2 tablespoons of olive oil and grill over high heat until golden. Add the chicken to the grill, season with salt and pepper and grill over high heat, turning once, until cooked through and lightly charred, about 6 minutes. Place the chicken on the rolls and top with the mozzarella, tomato and basil. Spoon any tomato juices on the top half of the bun, close the sandwiches and serve.

Today I wanted something different, something a little spicier, so I made up the following recipe. I thought it was delicious! Hope you try it and enjoy it!

2 slices bread
2 slices tomatoes
2 slices swiss cheese (or your favorite kind)
2 teaspoons mayonnaise (or mayo to your taste)
1 pinch salt
1 pinch pepper
1 pinch italian seasoning
1 pinch garlic powder or 1 pinch minced garlic
2 tablespoons butter

Steps:

  • Spread both slices of bread with a light layer of mayo.
  • Put slice of cheese on one piece of bread.
  • Add tomato slices.
  • Sprinkle with salt, pepper& Italian Seasoning.
  • Cover tomato slices with other slice of cheese, then cover with other piece of bread.
  • In the meantime, heat griddle or pan with butter and garlic power or minced garlic.
  • Also spread butter on top of each side of bread.
  • Grill until sandwich is brown on both sides and cheese is melted.

1 teaspoon Pickapeppa Sauce
1/2 teaspoon dried coriander
1/2 teaspoon ground chipotle chile pepper
2 slices chipotle cheddar cheese (I use Cabot)
4 slices rosemary bread (sliced thick)
lettuce
tomatoes
red onion, slices
Dijon mustard
fat-free mayonnaise

Steps:

  • Sprinkle chicken breasts with pickapeppa sauce and make sure both sides are covered.
  • Sprinkle remaining seasonings on one side of each breast. Set aside for ten minutes.
  • Grill chicken. When almost done put cheese on top of each breast.
  • Serve on toasted bread with lettuce, tomato, onion, mustard and mayo.
