Steps:

  • Prepare all ingredients and have them ready before starting to cook. Heat a non-stick skillet over medium-high heat. Dry roast the pecans in the skillet, stirring frequently until they start to become fragrant, about 3 minutes. Remove from heat and add 1 tablespoon of butter, the maple syrup and ⅛ teaspoon of salt. Place skillet back over the heat and stir constantly until the nuts are dry about 60 seconds. Reduce heat to medium, remove pecans to a plate and wipe out the skillet. Place the skillet back on the heat and add the remaining butter. When melted add the shallots, orange zest and cayenne pepper to taste. Cook shallots until beginning to soften about 2 or 3 minutes. Add the flour and stir, add the green beans and toss. Add the chicken stock, orange juice, and minced sage; stir/toss together and increase the heat to medium-high. Cover and cook until the beans are just beginning to soften but are still crisp on the inside, about 5 minutes. Reduce heat to medium. Uncover and continue cooking, stirring occasionally until the sauce thickens and the beans are cooked to tender-crisp, about 3 to 4 minutes. Remove from heat, taste and adjust seasoning (salt and black pepper). Transfer to a serving dish and sprinkle with the pecans. Serve to rave reviews.

2 tablespoons maple syrup
2 shallots, minced
2/3 teaspoon orange zest
1 pinch cayenne pepper
2 teaspoons all-purpose flour
1 1/2 lbs green beans
2/3 cup chicken broth
1/3 cup orange juice
1 teaspoon fresh sage, minced
salt & pepper

Steps:

  • Toast pecans in 12" non-stick skillet over medium-high heat, stirring occasionally, about 3 minutes or until fragrant. Stir in maple syrup, 1 tbsp butter, and 1/8 tsp salt. Stir constantly until nuts are dry and glossy, then transfer to plate and set aside.
  • Wipe out skillet. Melt remaining 2 tbsp butter in skillet over medium heat. Add shallots, orange zest, and pinch of cayenne pepper. Cook, stirring occasionally, 2 minutes or until shallots are softened. Stir in flour until combined, then add green beans. Add chicken broth, orange juice, and sage. Increase heat to medium-high, cover, and cook until beans are crisp-tender (about 4 minutes).
  • Uncover and cook about 4 minutes, until beans are tender and sauce has slightly thickened. Remove from heat. Season with salt and pepper to taste. Transfer to serving dish, sprinkle with pecans, and serve.

2/3 c low-sodium chicken broth
1/3 c orange juice
1 tsp minced fresh sage

Steps:

  • 1. Toast pecans in 12-inch nonstick skillet over medium-high heat, stirring occasionally, until fragrant, about 3 minutes.
  • 2. Off heat, stir in 1 tablespoon butter, maple syrup and 1/8 teaspoon salt. Return skillet to medium heat and cook, stirring constantly, until nuts are dry and glossy, about 45 seconds;transfer to plate and set aside.
  • 3. Wipe out skillet. melt remaining 2 tablespoons butter in skillet over medium heat.
  • 4. Add shallots, orange zest and cayenne, and cook, stirring occasionally, until shallots are softened, about 2 minutes
  • 5. Stir in flour until combined, then add green beans.
  • 6. Add chicken broth, orange juice and sage. Increase heat to medium-high, cover and cook until beans are crisp-tender, about 4 minutes
  • 7. Uncover and cook, stirring occasionally, until beans are tender and sauce has thickened slightly, about 4 minutes. Off heat, season with salt and pepper to taste. Transfer to serving dish, sprinkle with pecans and serve.

1 tablespoon Dijon mustard
1 teaspoon brown sugar

1 small red onion, sliced thin

  • bring a medium pot of water to boil . add salt, add green beans, cook 5-6 minutes, drain rinse in cold water to stop cooking, drain on paper towels. in a small bowl whisk together orange juice, mustard and sugar, set aside. in a large skillet melt butter over medium heat add onion and pecans, saute stirring often, until onions are browned and pecans are toasted, 10 minutes.

1 1/2 pounds haricots verts or other thin green beans, trimmed
1/4 cup olive oil
1/2 cup chopped pecans
1 clove garlic, very finely chopped
1 tablespoon chopped fresh basil
Coarse salt and freshly ground black pepper

Steps:

  • Prepare an ice-water bath by filling a large bowl with ice and water.
  • Bring a large pot of salted water to a rolling boil over high heat. Add the beans and cook until crisp-tender, about 3 minutes. Drain well in a colander, then set the colander with beans in the ice-water bath (to set the color and stop the cooking), making sure the beans are submerged.
  • In the same pot, heat the olive oil over medium-low heat. Add the pecans and cook until toasted, about 5 minutes. Add the garlic and basil; cook until fragrant, 45 to 60 seconds.

2 1/2 pounds green beans, trimmed
5 tablespoons unsalted butter
1/3 cup shallot, finely chopped (about 2 medium)
3 tablespoons packed light brown sugar
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Heat oven to 350°F with rack in middle.
  • Spread out pecans on a rimmed sheet pan and bake in oven until pale golden on inside, about 6 to 8 minutes. Cool and coarsely chop.
  • Have ready a colander submerged in a large bowl of ice water. Cook beans in a 6- to 8-quart pot of well-salted boiling water, uncovered, until just tender, 5 to 8 minutes. Using a large slotted spoon and/or tongs, transfer beans to colander in ice water to stop cooking, then drain well and dry on towels.
