Our Fourth of July feast wouldn't be complete without this chilled old-fashioned potato salad. It's my grandma's treasured recipe. —Sue Gronholz, Beaver Dam, Wisconsin

6 pounds medium red potatoes
Water
DRESSING:
1 cup water
1/2 cup butter, cubed
1/4 cup white vinegar
2 large eggs
1/2 cup sugar
4-1/2 teaspoons cornstarch
3/4 cup heavy whipping cream
3/4 cup Miracle Whip
SALAD:
1 small onion, finely chopped
2 green onions, sliced
1 teaspoon salt
1/2 teaspoon pepper
3 hard-boiled large eggs, sliced
Paprika

Steps:

  • Place potatoes in a stockpot and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain. When cool enough to handle, peel and slice potatoes; cool completely., For the dressing, in the top of a double boiler or metal bowl over barely simmering water, heat 1 cup water, butter and vinegar until butter is melted. In a small bowl, beat eggs; add sugar and cornstarch. Add to butter mixture; cook and stir until thickened, 5-7 minutes. Transfer to a large bowl; cool completely. , In a small bowl, beat cream until stiff peaks form. Stir Miracle Whip into cooled dressing mixture; fold in whipped cream. Stir in onion, green onions, salt and pepper. Add potatoes; toss lightly to combine. Refrigerate, covered, until chilled., To serve, top with hard-boiled eggs; sprinkle with paprika.

3 pounds red potatoes
Salt
1 cup mayonnaise
3 tablespoons chopped fresh parsley
2 tablespoons yellow mustard
2 stalks celery, chopped
2 chives, chopped
1 white onion, finely chopped
Freshly ground black pepper
6 hardboiled eggs, chopped

Steps:

  • Place the potatoes and 2 heaping tablespoons of salt in a large pot of water. Bring the water to a boil and cook until the potatoes are tender when forked, 10 to 15 minutes. Chop the potatoes into 1/2-inch pieces.
  • In a large bowl, add the potatoes, mayonnaise, parsley, mustard, celery, chives, onions and salt and pepper. Toss to coat the potatoes with the dressing and then add the eggs. Gently stir the potato salad, taking care not to mash the eggs. Serve immediately.

1 ½ pounds red potatoes, peeled
1 ½ cups mayonnaise
1 cup chopped celery
½ cup chopped onion
1 tablespoon white vinegar
1 tablespoon prepared yellow mustard
1 teaspoon salt
¼ teaspoon ground black pepper
4 hard-cooked eggs, chopped
1 teaspoon paprika, or to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool enough to handle, 10 to 15 minutes. Cut into cubes.
  • Mix mayonnaise, celery, onion, vinegar, mustard, salt, and pepper together in a large bowl. Add potatoes and mix to combine. Stir in eggs and sprinkle with paprika.

6 medium potatoes, peeled and cubed
1/4 cup all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons salt
1 teaspoon ground mustard
1 teaspoon pepper
3/4 cup water
2 large eggs, beaten
1/4 cup white vinegar
4 hard-boiled large eggs
2 celery ribs, chopped
1 medium onion, chopped
Sliced green onions, optional

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain and cool to room temperature., Meanwhile, in a small heavy saucepan, combine flour, sugar, salt, mustard and pepper. Gradually stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat and cool completely. Gently stir in vinegar., Chop and set aside 1 hard-boiled egg; chop the remaining hard-boiled eggs. In a large bowl, combine the potatoes, celery, onion and eggs; add dressing and stir until blended. Refrigerate until chilled. Garnish with reserved chopped egg and, if desired, sliced green onions.

So many potato salad recipes try to make themselves better by adding unusual ingredients. I can guarantee those will be the ones still sitting on the table after the picnic is over. This recipe came from my Grandma who was born in the late 1800's and it's the only one we keep coming back to!

15 medium potatoes, cooked & cubed to the size your family likes*
6 large eggs, hard cooked
1 small onion, minced
2 -3 celery ribs, minced, twice as much as you have onion
1 tablespoon pickle relish, heaping
1 cup mayonnaise, to moisten depends on type of potato
1/4 cup minced fresh parsley

Steps:

  • Mix all ingredients together. Some add crisp fried chopped bacon but its not really necessary.
  • Keep in mind that some types of potato absorb more mayonaise than others.
  • Pile into a nice glass bowl, and decorate top with more thin-sliced eggs and parsley sprigs.
  • *note: 15 potatoes or 5 pounds, whichever comes first.

My Grandmother taught me how to make this great salad when I was a youngster,, been in our family for many years.. when we have parties or gatherings I am begged to make it.

5;bs all purpose potatoes
10 hard boild eggs
half lb bacon
2cups kraft mayo
2/3 c apple cider vinegar
6T granulated sugar
1/2c water
4T celery seed

Steps:

  • 1. boil potatoes till done and let cool, fry cut up bacon till almost brown, set aside,, in small pan, add water, vinegar, sugar, celery seed,bacon, onion
  • 2. cook on simmer till onions are done ,, about 20 min.
  • 3. set aside till cool,
  • 4. peel potatoes and cut in small cubes, chop eggs in small pieces, and add to the potatoes, when vineger solution is cool pour on potatoes and eggs, add the mayo,, if needed taste the vinegar solution first it should be like sweet and sour,, you can add more sugar to taste,, you can eat this warm or cold we eat it both ways,, its great on a picnic also,, instead of the same old potato salad.. For a classic potato salad, this is hand's down the best I've ever tasted. It is time consuming, but the end result is definately worth it! This is more of a white color potato salad, don't make the mistake of adding mustard to color it...I tried it once and it ruined the taste...tasted like any other potato salad. This makes lots, but it goes fast!

1 cup water
1/2 cup butter or 1/2 cup margarine
1/4 cup vinegar
2 eggs
1/4 cup sugar
4 1/2 teaspoons cornstarch
1 teaspoon salt
3 stalks celery, diced
3/4 cup salad dressing
3/4 cup heavy cream, whipped
6 lbs red potatoes, peeled,cooked and diced
1 1/2 cups chopped onions
1/4 cup green onion, sliced
1/2 teaspoon pepper
salt
diced green pepper (optional)
paprika (to garnish)

Steps:

  • In top of a double boiler over boiling water, heat water, butter and vinegar.
  • In bowl, beat eggs, add sugar and cornstarch.
  • Add to butter mixture, cook and stir constantly until thick, 5 to 7 minutes.
  • Remove from the heat and cool.
  • Stir in the salad dressing and fold in the whipped cream.
  • In a large bowl, toss the potatoes, onions and green onions, celery, green pepper if using, salt and pepper.
  • Pour dressing over, toss and mix gently.
  • Chill.
  • Garnish with sliced hard cooked eggs and paprika.
