GRANNY SMITH APPLE CAKE
This recipe is modified from one published in the Cedar Rapids Gazette back in the early 1990's. Like all "Cake-Mix" cakes, it is a breeze to prepare, but it looks and tastes like you labored in the kitchen for hours! It is lovely topped with either vanilla or cinnamon icing and goes great with a fresh cup of coffee. It also keeps very well.

Steps:
- Preheat oven to 350 and grease a Bundt pan with shortening.
- Peel, core, quarter and slice the apples very thinly.
- Set aside.
- Combine all the other ingredients in a large mixing bowl and beat with electric mixer set to"low" for 30 seconds.
- Turn the mixer up to"high" and beat cake batter for another 2 minutes.
- Pour half the batter into the Bundt pan and spread evenly around the bottom.
- Layer apple slices evenly all over the batter, then gently spread the rest of the batter on top of the apple slices.
- Spread this layer of batter evenly so that it"seals" the apples inside the cake.
- Bake at 350 for 50 minutes.
- Cool on wire rack.

GRANDMA SMITH'S APPLE ORANGE CAKE
My Grandmother loved baking and everytime I make this cake i can see her grating up the fruit for the frosting. I tried using a food processor but it doesn't seem to work as good to me. Everywhere I take this cake (Usually around the holidays), everyone begs for the recipe. They are always shocked to know that its a cake mix...

Steps:
- 1. Grease two cake round cake pans 8 inch or 9 inch. Set aside.
- 2. Preheat oven 350
- 3. Cook cake mix according to directions.
- 4. Let cool in pan for about 10 minutes then take out of pan and cool on a cooling rack.
- 5. While cake is cooling, take apples and grate them by hand on a grater. Grate skin and everything except apple core and seeds.
- 6. Grate naval oranges skin and inside of orange also. Note: If apples are small only use one naval orange. Try to get a balance of half orange flavor and half apple flavor.
- 7. Add two cups of sugar to the grated apples and oranges. Stir and let set so sugar will melt in mixture somewhat. After cake is completely cooled spread some of frosting on top of bottom later. Add top layer of cake and try to go up the sides of cake first and then put remainder frosting on top and spread evenly. Sometimes if your fruit is real juicy your frosting will be used as a frosting that can be slowly poured on top and drip along the edges. Either wayt he cake is moist, and delicious and guaranteed to be a big hit where ever you take it.
GRANDMA'S APPLE CAKE
This was a massive hit when i was growing up. My grandma would make this weekly and as visitors called she would have orders to make her guests a cake for the following week. She served it with custard, vanilla ice cream or fresh cream and all were equally delicious! This was a great cake to eat during the winter served hot with custard. I have now started to add a handful of flaked almonds, sprinkled on top of the cake (just before it goes in the oven) The addition of the flaked almonds, seems to be an even bigger hit! Enjoy!

- Grease and flour a 9 inch cake tin.
- Cream butter and orange rind, caster sugar and beat until light and creamy.
- Mix 1 tablespoonful of the flour with apples in a dish.
- Put eggs, milk in bowl with creamed butted.
- Add remaining flour, peel and apples to the creamed mixture; blend well with a metal spoon.
- Turn into prepared tin, sprinkle with granulated sugar.
- Cook at 350°F/Gas 4, for 40-50 minutes until golden brown.
- Serve cold as a cake or hot as a pudding with custard, cream or ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Sift flour, baking soda, cinnamon, and salt together in a bowl. Set aside.
- Mix sugar, egg, and oil together in another bowl. Stir in the flour mixture just until combined; fold in apple, walnuts, and raisins.
- Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 1 hour.

GRANNY SMITH APPLE CAKE
Slightly modified version of a recipe in Everyday Food magazine. This cake is SO good, especially while it's still warm (or reheated). Great for breakfast. Or topped with whipped cream or vanilla ice cream. I choose Granny Smith apples for their tartness and because they hold their shape after baking. The apples come out completely soft after baking. I love the tartness of the apples mixed with the sweetness of the cake. Optional: Add 1/2 cup chopped walnuts if desired. Note: The original recipe called for 1/2c of butter, but I reduced that to 1/4 and added in 1/4 applesauce to lower the fat in the recipe. You won't even miss the extra butter at all.

- Preheat oven to 350. Butter a 9 x 13 inch baking pan, set aside.

- 1. Prepare Bundt pan (butter and flour or Baker's Joy) and preheat oven to 325 degrees.
- 2. Beat together sugar, eggs, oil, vanilla, and orange juice. Mix until smooth.
- 3. Then slowly add the flour, salt, baking soda, cinnamon, and nutmeg mixing as you go.
- 4. Fold in apples and pecans. The batter will be very thick and dense.
- 5. Spoon batter into prepared pan evenly.
- 6. Bake in preheated oven for 1 hour and 15 minutes or until a tester comes clean. Allow cake to sit in the pan for 10-15 minutes and then turn onto a cake plate. Allow to cool completely.
- 7. Mix glaze to desired consistency.
- 8. Drizzle the cake with the glaze and enjoy!
