8 ounces goat cheese (softened)
4 ounces cream cheese (softened)
1 scallion (thinly sliced)
1 ½ tablespoons flat-leaf parsley (fine chop)
¼ teaspoon black pepper
1 cup garlic and butter croutons
15 pretzel sticks

Steps:

  • Line a sheet tray with parchment paper.
  • Mix the goat cheese, cream cheese, scallions, 1 tablespoon of parsley, and pepper in a medium-sized bowl. Mix with an electric hand mixer until smooth.
  • Taking a tablespoon-sized scoop, roll the mixture into balls and place them on the sheet tray.
  • Place the croutons in a food processor, pulse into crumbs. Place the crumbs in a bowl, add the remaining parsley and stir to combine. Roll the cheese balls in this mixture. Place them back on the sheet tray. Insert the pretzel toothpicks, place them on a serving tray, and enjoy.

6 slice(s) cocktail pumpernickle bread
3 slice(s) smoked ham
3 slice(s) tomato
3 slice(s) cucumber
3 tablespoon(s) hummus
4 - fresh basil leaves
- handful goat cheese crumbles
- handful gorgonzola crumbles
- handful red onion, sliced thin
- handful fresh chopped dill
- handful fresh chopped chives
- pinch of salt

Steps:

  • Top 3 of the bread slices with the crumbled cheeses. Toast ALL slices in convection oven until bread is crispy and cheese is soft and warm.
  • Roll basil up and cut into bits that will unroll into mini strips (basil chiffonade).
  • Assemble: on top of cheesy slices, layer the basil, then the ham, tomato, cucumber, pinch of salt, red onion, chives and dill.
  • Spread hummus on empty slices and top your lovely mini sandwiches. Enjoy.

8 oz goat cheese
4 oz cream cheese, room temperature
1/3 c chopped fresh herbs**parsley, basil, oregano etc...your choice**
1 Tbsp lemon zest
1/2 c walnuts, chopped & toasted
1-2 Tbsp black sesame seeds, toasted
1 tsp granulated garlic
1 tsp granulated onion
salt and pepper to taste
1-2 Tbsp olive oil, extra virgin...for hands

Steps:

  • 1. place herbs, sesame seeds and nuts in 3 separate bowls. combine cheeses, garlic, onion, lemon zest, salt and pepper into a mixing bowl, mix. coat your hands with olive oil. roll mini balls in the palm of your hands. roll each ball into whatever bowl you desire. chill for at least 1 hour. serve with whatever suits your fansy. toast points, salame, fresh veggies, olives are always on point with these delectable balls. BTW, these are excellent on salads...ENJOY!!
