1 1/2 c canola oil
2 1/2 c sugar
3 eggs
3 c flour (all purpose) or 2 cups ap flour and 1 cup oat flour
1 tsp baking soda
3/4 tsp salt
1/2 c buttermilk
2 ripe bananas mashed
3/4 c blueberries, frozen or fresh
1 1/2 tsp vanilla
1 c pecans , chopped, optional

Steps:

1. Spray and flour cake baker. I used a bundt, but you could also do cupcakes, (will make 24), or make it in a loaf pan. It will take 2 loaf pans.
2. In mixing bowl combine oil, sugar, eggs
3. In separate bowl sift together flour, baking soda, salt
4. Add buttermilk and flour mixture to oil mixture. Alternating 1/2 buttermilk then 1/2 flour mixture.
5. Fold in bananas
6. Add vanilla
7. Toss blueberries with 1 tablespoon flour then fold into batter.
8. Bake on 350* for 35-40 minutes (for bundt) or until a cake tester comes out clean.
