Bulgur with Feta and Grapes image

This is a delicious salad that is popular in the Middle East and Mediterranean area. Perfect for a warm summer day.

¾ cup boiling water
½ cup fine bulgur
½ teaspoon salt
2 tablespoons fresh lemon juice
1 tablespoon olive oil
coarse salt to taste
¾ cup halved seedless grapes
½ cup crumbled feta cheese
2 tablespoons chopped scallions

Steps:

  • Combine boiling water, bulgur, and salt in a bowl. Cover and let stand until bulgur absorbs water and softens, about 30 minutes.
  • Whisk lemon juice, olive oil, and coarse salt together in a large bowl. Mix in grapes, feta cheese, and scallions. Add bulgur; toss to distribute evenly.
