This one is from Grandma Schultz' collection. Yummy little pastries stuffed with sweet creamy filling! A family favorite : ) You can use the cream cheese filling or the vanilla cream filling (this is my favorite) Add your own choice of extracts to either and you can personalize the flavor. My faves are almond, banana or rum : )

Number Of Ingredients 19

PASTRY
1/2 cup butter
1/4 cup water
1/2 cup flour
2 large eggs
CREAM CHEESE FILLING
4 oz. cream cheese (softened at room temp)
1 cup heavy whipping cream
1/2 tsp. almond, vanilla, or orangeextract ( you can use your favorite or a combination of them to make several different flavors)
1/4 cup powdered sugar
VANILLA CREAM FILLING
2 c milk
2 eggs yolks and 2 egg whites (seperated)
2 and 3/4 tablespoons sugar
4 teaspoons corn starch
1 teaspoon vanilla, lemon, banana or any other extract you prefer
2 tablespoons whipping cream if desired
TOPPING
pwdered sugar, sugar or cinnamon sugar

Steps:

  • 1. Heat the butter and water to a rolling boil on stove top in a saucepan
  • 2. Stir in all the flour and beat quickly for about a minute, or until a nice ball forms.
  • 3. Take sauce pan off of heat and beat eggs in, 1 egg at a time, until this mixture is smooth and shiny looking.
  • 4. On an ungreased baking sheet drop batter by 1/4 cupfuls and be sure to space them about 3 inches apart.
  • 5. Bake 35 to 40 minutes in a preheated 400 degree oven or until pastries are puffy and golden brown.
  • 6. Remove from oven and allow to cool completely on wire rack.
  • 7. Cream Cheese Filling: Beat Filling ingredients together in a bowl until fluffy and will hold form well. Refrigerate until ready to use. Vanilla cream filling: Mix egg yolks with the sugar and starch using some of the reserved milk to make a nice and smooth consistency. In a saucpan bring the remaining milk to a boil, being careful not to scorch or burn the milk, then turn heat down to low. While whisking vigorously stir the egg yolk mixture into the heated milk. Let this come to a puff and then take it from te heat immedietly. Continue to mix this for 40 sec to a minute. Now is the time to add your extract to this. For a nice light texture you can either stir this while it is still hot into the stiffened egg whites or you can fold whipped cream into the cooled cream mixture.
  • 8. When ready to serve,split the pastries in half and using a fluted pastry tube, fill with the cream cheese mixture.
  • 9. Place tops back on pastries and sprinkle with powdered sugar, sugar or cinnamon and sugar and serve immediately. Serve with a scoop of ice cream if desired : )

1 (18 ounce) package German chocolate cake mix
1/2 cup margarine
3 eggs
1 (8 ounce) package cream cheese
1 teaspoon vanilla extract
16 ounces powdered sugar, plus extra (to garnish)
1/2 cup pecans

Steps:

  • In large bowl, combine cake mix, margarine, and 1 of the eggs; mix well.
  • Press mixture into a greased 9x9 inch pan.
  • In a seperate bowl, beat together the cream cheese, remaining 2 eggs, vanilla& powdered sugar.
  • Pour over chocolate mixture.
  • Bake at 350 F for 1 hour.
  • Sprinkle with extra powdered sugar& pecans.

1 (4 ounce) package german's chocolate
5 tablespoons butter
1 (3 ounce) package cream cheese
1 cup sugar
3 eggs
1/2 cup unsifted flour, plus
1 tablespoon unsifted flour
1 1/2 teaspoons vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped nuts
1/4 teaspoon almond extract

Steps:

  • Melt chocolate and 3 tbsps. butter over very low heat, stirring constantly. Cool.
  • Cream remaining butter with the cream cheese until softened. Gradually add 1/4 cup sugar, creaming until light and fluffy. Stir in one egg, 1 tablespoon flour, and 1/2 teaspoon vanilla until blended. Set aside.
  • Beat remaining eggs until fluffy and light in color.
  • Gradually add remaining 3/4 cup sugar, beating until thickened.
  • Fold in baking powder, salt, and remaining 1/2 cup flour.
  • Blend in cooled chocolate mixture. Stir in nuts, almond extract, and remaining 1 teaspoon vanilla. Measure 1 cup chocolate batter and set aside.
  • Spread remaining chocolate batter in a greased 8 or 9 inch square pan.
  • Pour cheese mixture over the top. Drop measured chocolate from tablespoon onto the cheese mixture; swirl the mixtures together with a spatula just to marble.
  • Bake at 350 degrees for 35 to 40 minutes. Cool. Cut into bars or squares.
  • Cover and store in refrigerator.

German Chocolate Crumpets with Sweet Cream Cheese image

I do love crumpets, which are similar but different from the English muffin. Most crumpets use yeast, but I omitted what in this particular recipe. I really loved the chocolate, the coconuts, and the pecans. Give this a try at tea time. I like these best with Lady Earl Grey Tea. Enjoy!

CRUMPETS
4 cup(s) flour
1/2 cup(s) sugar
1/2 cup(s) dark brown sugar
2 tablespoon(s) vanilla
2 cup(s) coconut flakes
1 cup(s) pecans, in pieces
1/2 cup(s) german cocoa powder (or substitute special dark cocoa powder)
1 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 cup(s) vegetable oil
2 - eggs
1 cup(s) whole milk
1 1/2 cup(s) water
CREAM CHEESE SPREAD
1 package(s) cream cheese
1/2 stick(s) butter
1 - drop of bavarian cream flavoring (from a dram)
1 tablespoon(s) dark brown sugar
1/2 teaspoon(s) cinnamon

Steps:

  • Mix all the crumpet ingredients by hand with a wooden spoon. When thoroughly mixed, let rest for 20 minutes in refrigerator.
  • Then in a frying pan and greased crumpet rings (you can also use tuna fish cans with top and bottom removed)on medium, spoon in batter. Only fill halfway up, but spread thoroughly around the bottom. I got my crumpet/English muffin rings on Amazon for a steal.
  • Do not flip until you have sufficient bubbles atop. Then remove rings and flip. After a quick finish on the top, remove from frying pan, and do over until all batter is used.
  • I keep mine warm in a Pyrex casserole dish in the oven at the 175F-200F.
  • To make spread, allow all ingredients to warm to room temperature. Mix very well. You may serve at room temperature or refrigerate.
  • You may also serve these with jam and Devonshire Cream (clotted cream).
