1 1/2 lbs chicken breast halves, thin (slice down if thick, I use boneless and skinless)
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup half-and-half
1/4 cup milk
8 slices baby swiss cheese (can use more if you like lots of cheese)
6 ounces chicken flavor stuffing mix
1/2 cup unsalted butter, melted
1/4 teaspoon fresh ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon dried parsley flakes
1/2 teaspoon italian seasoning

Steps:

  • Place chicken in bottom of shallow oven pan.
  • Combine cream of chicken soup, milk and half and half.
  • Spread soup mixture over top of chicken breasts evenly.
  • Sprinkle with pepper, garlic powder, onion powder, parsley flakes and Italian seasoning.
  • Place Swiss cheese slices over soup.
  • In saucepan, mix melted butter and 1 box of the stuffing (bread and all).
  • Spoon stuffing mixture over cheese slices evenly.
  • Cover pan with foil.
  • Bake at 450 degrees for 45 minutes or until chicken is done.

This dish was first made in 1999. during my summer holidays. That summer was very hot, so hot one would not go out of the house at all; even the sea was warm, too warm to refresh. I had just some groceries I could not do anything as complete meal. I just had some of everything. And than, General Mapahche, a character from one of my favorite movies "The Wild Bunch" by Sam Peckinpah, came to my mind. He is a very mean soldier, general, very demanding, it seemed like a challenge to make him a meal; so this dish must be good, otherwise, you are going down.

500 g chicken breasts
1 lemon, juice of
1 garlic clove
2 zucchini (small)
150 g onions
150 g bell peppers
150 g tomatoes (fresh)
50 g corn (canned)
50 g red beans (red, canned)
3 tablespoons olive oil
1 cup chicken broth
1/2 teaspoon thyme (dried)
1 teaspoon oregano
1/2 teaspoon ground red chili pepper
1/2 teaspoon pepper
10 g salt

Steps:

  • Cut boneless and skinless chicken breasts into stripes (bones and skin use for cooking broth). Chicken stripes season with salt and soak into lemon juice. Leave it 1 hour in lemon.
  • In the meantime cut onion into rounds; mince finely garlic; cut bell peppers into stripes; cut tomato into small pieces (remove seeds), cut zucchini into stripes.
  • Wash canned corn and beans well to remove "can taste".
  • Heat olive oil in a frying pan (big one) and fry chicken until gets brown.
  • Put chicken aside, add some more oil and add vegetables following this order: first onion, sauté until softens; than peppers, sauté a bit, than tomato and garlic. Than add chicken, thyme, oregano, salt, pepper and chili. Add some broth and sauté until everything softens. Add corn and beans and stir. Add zucchini last (they get soft quickly).
  • Sauté everything for 5-10 minutes or more: all liquid must evaporate and sauce must be sticky.

KATO'S PHYLLO CHICKEN SURPRISE

The apricot lemon glaze makes a nice contrast to the savoury filling. This is very easy to make and looks very impressive. This dish is wonderful served with fresh fruit, a simple salad and rice.

8 sheets phyllo dough
1/2 cup melted butter
4 boneless skinless chicken breasts, and flattened
2 tablespoons butter
2 cloves garlic, minced
2 shallots, thinly sliced
1 large portabella mushroom, cleaned,diced
1/4 teaspoon thyme
1/2 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
2 teaspoons flour
1/8 cup dry white wine, good quality
1/2 cup swiss cheese, coarsley grated
1/2 cup apricot preserves, could use peach
2 lemons, juice of

Steps:

  • Step 1- Filling.
  • In a sauce pan saute mushroom in 2 tbsp of butter until golden brown, then set aside.
  • Next lightly saute shallots and garlic in same pan.
  • Mix mushrooms and shallots together add thyme, salt, pepper and flour to vegetables and mix well.
  • Now add the white wine and cook till all liquid is absorbed.
  • Taste, reseason if necessary and set aside to cool.
  • Once cooled add grated cheese to mixture.
  • Step 2- Phyllo Preparation- Preheat oven 350 degrees.
  • Brush 1 sheet of phyllo with melted butter.
  • Place a second sheet over the first and brush with melted butter.
  • Place the flattened chicken breast in the lower half of the phyllo sheet.
  • Put 1/4 of the filling mixture ontop of the chicken.
  • Fold the sides of the phyllo over the chicken envelope style.
  • Place on a baking sheet, seam side down, brush with melted butter.
  • Do the same to remaining chicken and bake in a 350 degree oven for 35 minutes.
  • Step 3- Apricot Lemon Glaze.
  • Heat apricot preserves and lemon juice together until well mixed.
  • Pour a small amount of glaze overtop of cooked phyllo chicken and serve the rest of the sauce on the side.
  • Enjoy.

4 -5 white medium potatoes, peeled and diced
2 tablespoons butter
2 red onions, chopped
2 tablespoons flour
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup half -and-half cream
1 teaspoon Dijon mustard
1/2 cup mayonnaise
4 slices bacon, Cooked and crumbled

Steps:

  • Cook potatoes in boiling salt water until tender. Drain and set aside. In saucepan melt butter. Saute onion in butter until soft, stir in flour, thyme, salt and peppr. Gradually add cream, stirringconstantly until sauce thickens. Remove from heat; let cool slightly. Add mustard and mayo, stir until smooth. Place potatoes in 1-1/2qt. Casserole dish. Cover with sauce. Bake @ 350 for 30 minutes. Before serving sprinkle edges of caserole with crumbled bacon.

4 boneless skinless chicken breasts (large)
125 ml italian salad dressing
125 ml peach jam or 125 ml apricot jam or marmalade
1/4 cup dry onion soup mix
1 cup fresh mushrooms, sliced
1/4 teaspoon pepper
1 1/2 tablespoons sherry or white wine (optional)

Steps:

  • 1. Marinate chicken overnight in salad dressing. (do not discard dressing).
  • 2. Preheat oven to 350 degrees.
  • 3. Lay marinated chicken in baking dish and pour dressing over top.
  • 4. Smear chicken with jam and sprinkle the mushrooms and onion soup mix over the chicken.
  • 5. Season with pepper and drizzle sherry over top of everything.
  • 6. Cook in a 350 degree oven covered for 55 minutes, then remove cover and cook for 20 minutes longer.

Easy Chicken dish which all my family loves including the grandchildren. This receipe came from my turn to cook Sunday dinner and what I had in the pantry and frig. We like the receipe because it is easy, spicy and a meal all in one. We serve it with green salad.

4 boneless chicken breasts
8 ounces low-fat cream cheese
1 jar cheese with green chili peppers
1/2 cup low-fat cheddar cheese
1 package corn tortilla
1/2-3/4 cup milk
red pepper

Steps:

  • Boil chicken breast until tender.
  • Remove meat from bone.
  • Spray 9 by 13 pan with low fat spray.
  • Cut at least 9 tortillas into strips.
  • Line the bottom of the pan until covered.
  • In a small skillet, melt cream cheese and the jar of cheese with chilies.
  • Add milk to a sauce consistency.
  • Sprinkle red pepper.
  • Break chicken into small pieces and place in pan, layer with tortillas strips and alternate until pan is filled.
  • Pour cheese mixture over the top.
  • Sprinkle cheddar cheese on top.
  • Bake at 350 for approximately 30 minutes.
