Spicy Sausage Pasta image

This flavorful pasta dish is a great weekday meal, because everything is cooked in just 1 pan! Recipe adapted from kevinandamanda.com

Number Of Ingredients 9

19 oz hot italian sausage, cut into pieces
1 large onion, diced (appx 3 cups)
3-4 garlic cloves, minced
2 can(s) (10 oz each) rotel tomatoes with green chiles, mild
1 c heavy cream
4 c chicken broth, low sodium
salt and pepper
1 lb pasta of choice
2 c shredded cheese, divided (i used monterey jack)

Steps:

  • 1. In a large OVEN SAFE skillet over medium high heat, saute the italian sausage and onions.
  • 2. Once cooked, add in the garlic and cook until fragrant, about 30 seconds.
  • 3. Add in the broth*, rotel tomatoes (undrained), cream, salt and pepper, and uncooked pasta. Stir well. *I used organic, free range chicken broth (low sodium), and it seemed to be so much more flavorful than just normal chicken broth! Bring to a boil, then reduce heat to medium-low, and cover. Simmer, stirring occasionally, until pasta is tender, 13-15 minutes.
  • 4. Remove from heat and stir in 1 cup of shredded cheese. Sprinkle remaining cup of cheese on top and broil in the oven until cheese is melted, bubbly, and starting to get spotty brown.
