The Frito Baked Potato image

I found this at a local deli by my job. I loved it so much that I came home and recreated it. My family loves it too.

Number Of Ingredients 13

6 large baking potatoes
1 bag(s) fritos
1 c cheddar cheese, shredded
1/2 lb fajita beef
1 lb ground beef
1 can(s) tomato paste
1/2 c each: bell pepper & onion (diced)
1 can(s) tomatoes, canned and chopped, with liquid
3 Tbsp masa (tamale flour)
1 pkg chili seasoning
1/4 c green onions (sliced)
1/2 c each: sour cream & sliced pickled jalapenos
whipped butter

Steps:

  • 1. Wrap each potato in foil, place in a pan and bake at 375 for 2 hours or until center is soft. While the potatoes are baking. Make your chili...
  • 2. In a dutch oven or large pot brown you Fajita beef (chopped it up 1st), onion, peppers and ground beef. Drain (but reserve a little for flavor. add to the meat the tomato paste, diced tomatoes, 2 cups of water and chili seasoning. Simmer for 30 minutes. Take the Masa and add it to the chili **add Cayenne or arbol pepper flakes if you want it spicy**
  • 3. Once the potatoes are done, take one and spli it open. add butter, cheese (as much as you need), sour cream and Chili. Top with Frito's. Garnish with green onion and jalapenos (optional). Repeat for each potato.
