You don't need to wait for the county fair to enjoy delicious old-fashioned funnel cakes. You just need a funnel with a 1/2-inch opening that can hold a cup of batter.

8 cups vegetable oil for frying
1 ½ cups milk
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¾ cup confectioners' sugar

Steps:

  • In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
  • In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
  • While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.

Funnel cakes can be found at fairs, carnivals and parks all summer long. Bring on fun memories and make your own fried dough topped with a dusting of sugar.

Number Of Ingredients 8

1-1/2 cups all-purpose flour
1 tsp baking powder
¼ tsp salt
1-1/3 cup milk
½ tsp vanilla extract
1 egg
*Oil for frying (amt depends on your skillet size) I used peanut oil
¼ cup confectioners sugar for dusting

Steps:

  • Add dry ingredients into large bowl
  • Add in eggs, milk & vanilla & whisk until fully combined & there are very little lumps
  • In a large skillet add about ½ inch oil & heat to 350 degrees - watching closely
  • Transfer batter into a large squeeze bottle - you may have to do this in batches
  • Once oil has reached frying temperature - squeeze batter into funnel cake pattern - try to keep it somewhat circular
  • Allow to fry 30-60 seconds or until golden brown - flip & cook other side the same
  • *Note- keep watch of your oil temp as this can fluctuate.
  • Once both sides are done cooking use tongs to remove & place immediately in paper sack to drain off the oil
  • Continue with remaining batter & adding to the bag
  • Once complete dust each cake with confectioners sugar before serving
  • *Some like to also add some pie filling , berry sauce or chocolate sauce

2 large eggs, room temperature
1 cup 2% milk
1 cup water
1/2 teaspoon vanilla extract
3 cups all-purpose flour
1/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
Oil for deep-fat frying
Confectioners' sugar

Steps:

  • In a large bowl, beat eggs. Add milk, water and vanilla until well blended. In another bowl, whisk flour, sugar, baking powder and salt; beat into egg mixture until smooth. In a deep cast-iron or electric skillet, heat oil to 375°., Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into the funnel. Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed., Fry until golden brown, 2 minutes on each side. Drain on paper towels. Dust with confectioners' sugar; serve warm.

Steps:

  • To make the funnel cake:.
  • in a mixing bowl, combine eggs, sugar, milk (wet ingredients).
  • in another bowl, combine baking powder, flour, salt (dry ingredients).
  • pour dry ingredients into the bowl of dry ingredients; mix well.
  • add chopped cilantro; mix well again.
  • fill piping bag with mixture.
  • pipe in, making circular shape, the funnel cake mixture into a pan with hot oil; brown both sides then place on tray to drain excess oil.
  • To make taco beef:.
  • on a hot skillet, brown ground beef.
  • add chopped onions and chopped garlic; stir.
  • then add taco seasoning and water; stir more.
  • To make assemble:.
  • scoop taco beef on top of the funnel cake.
  • then add cubed avocado, salsa, sliced jalapeno, sour cream.

EASY CLASSIC FUNNEL CAKE

1 1/3 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 large egg, beaten
2 tablespoons granulated sugar
1 cup milk, plus more if needed
Canola oil, for frying
1 cup confectioners' sugar
1 teaspoon ground cinnamon
Whipped cream and/or fruit sauce, for serving (optional)

Steps:

  • Sift the flour, baking powder, baking soda and salt into a large bowl. In a smaller bowl, whisk the egg with the granulated sugar until pale. Whisk the milk into the egg mixture, then gently fold into the flour mixture. It should be a bit thicker than pancake batter but thin enough to pour. Add up to 3 tablespoons milk to loosen the batter, if needed.
  • Heat about 2 inches of canola oil in a large high-sided skillet or pot over medium-high heat until a deep-fry thermometer registers 375. Meanwhile, mix the confectioners' sugar and cinnamon in a small bowl. Hold a funnel in one hand with your finger plugging the hole at the bottom. Pour 1 cup batter into the funnel. Hold the funnel over the hot oil and remove your finger from the hole, letting the batter drop in a spiral pattern all over the surface of the oil. It will look like lots of individual pieces at first, but as you continue to add batter, the pieces will fuse together. Cook until the batter floats and the underside is golden brown, about 30 seconds. Flip with tongs and cook until golden brown on the other side, about 30 more seconds. Transfer to a paper-towel-lined plate and repeat to make 5 more funnel cakes. Dust with the cinnamon-sugar and serve with whipped cream and/or fruit sauce, if desired.

After having this special treat at a Pennsylvania country fair I just had to try and recreate this for my family. I believe I came pretty close, and I hope you enjoy them as much as we do!

1 quart oil for frying
1 ½ cups all-purpose flour
¼ teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon salt
1 egg
¼ cup packed brown sugar
¾ cup canned pumpkin puree
1 cup milk
¾ teaspoon pumpkin pie spice
½ cup confectioners' sugar for dusting

Steps:

  • Pour the oil into a deep pot or deep skillet, and heat to 375 degrees F (190 degrees C).
  • Sift together the flour, baking powder, baking soda, cinnamon, salt, and pumpkin pie spice in a mixing bowl.
  • Beat the egg, brown sugar, pumpkin puree, and milk together in a large bowl until well blended. Gradually add the flour mixture, stirring until the mixture is smooth.
  • Using your finger to close the opening, pour 1/2 cup batter into a funnel with a 1/2 inch wide spout. Release your finger, and drizzle the batter into the hot oil using a circular motion to make 4 to 6 inch circle, and then cross over the circle to make a spiral pattern. Cook until golden brown. Turn the cake over to cook the bottom side. Use a slotted spoon to remove from the oil, and drain on paper towels. Cool 5 minutes, and dust generously with confectioners' sugar.

Remember the funnel cakes the the vendor at the fair used to make? Well here is a recipe for them and you'll never have to wait for the fair again.

Number Of Ingredients 8

5 eggs
3 1/2 cups milk
1 teaspoon salt
4 cups flour (heaping)
1 1/2 teaspoons pure vanilla extract
3 teaspoons baking powder
1/4 cup sugar
10 teaspoons sugar

Steps:

  • Fill a 8 to 10 inch fry pan with oil (about 1/3 to 1/2 of the pan full of oil) and heat to frying temperature.
  • Combine the ingredients in order given.
  • Get a regular cooking funnel. Put your finger over the funnel spout; fill the funnel with the batter.
  • Start letting the batter funnel out in a criss-cross until all batter in funnel is gone. Batter will come together and cook until golden brown in about 30 seconds to 1 minute on each side. remove and top with what you want (when cooking make sure you make the batter cover the whole bottom of the pan--just keep criss-crossing until all holes are filled in).
  • Repeat with remaining batter. Makes 8 to 10 large cakes.
  • Toppers for the cakes after cooking: Dust with powdered sugar or powdered sugar mixed with cinnamon. The carnival also uses canned pie filling such as apple or any flavor you want.
