GRAPE SALAD

2 pounds seedless green grapes
2 pounds seedless purple grapes
One 8-ounce package cream cheese, room temperature
One 8-ounce container sour cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup brown sugar, firmly packed
1/2 cup pecans, finely chopped

Steps:

  • Wash the grapes and dry thoroughly with paper towels. Put the dry grapes in a 9-by-13-inch baking dish. In a bowl, combine the cream cheese, sour cream, granulated sugar and vanilla. Mix well using an electric mixer. Pour this mixture over the grapes and toss together until all the grapes are coated. Chill in the refrigerator.
  • Just before serving, sprinkle with the brown sugar and pecans.

This has been a traditional salad on our Thanksgiving table for many years. To give you an idea of how long, the only red grapes I could get at first had seeds in them. There was no such thing as seedless! This salad is so much less work now that I don't have to seed the grapes. And it really is delicious -- so different . And it has a make-ahead feature that is most welcome at this busy time. It can be started up to 2 days ahead. Recipe from BH&G. Chilling time is not counted in prep time.

2 cups fresh cranberries
1 cup sugar
1 cup red grapes
1/2 cup broken walnuts (or more, to taste)
1/2 cup heavy cream, whipped

Steps:

  • Put cranberries through the food grinder, using coarse blade. Or chop in processor. Stir in sugar. Let stand overnight.
  • Next morning, drain well, pressing lightly to remove excess juice. (Reserve the juice for another use. I like to add it to a fruit punch.) Cut grapes in half and remove seeds if necessary. Add grapes and nuts to well-drained cranberry mixture. This much may be done ahead. Refrigerate.
  • Just before serving, fold in the whipped cream. Mound in a lettuce-lined bowl, garnished with clusters of grapes. Serve immediately. Recipe doubles easily.
  • Note: You may add a small can of pineapple tidbits, well drained, with the grapes and walnuts, if you wish.

FRESH CRANBERRY JELLO SALAD

The women in my family are addicted to this mandatory holiday dish. It has cranberry tartness combined with the sweetness of grapes and mandarin oranges, all encompassed in the comfort of jello. It comes from the "It's About Thyme" cookbook by Marge Clark, who by her recipes must be a special lady.

1 (10 ounce) package fresh cranberries or 1 (10 ounce) package frozen cranberries, picked over and washed
4 cups water
1/4 teaspoon baking soda
2 cups sugar
9 ounces strawberry Jell-O gelatin dessert (3 small boxes)
4 cups miniature marshmallows
2 cups red apples, diced
1 cup chopped nuts (optional)
1 (9 ounce) can crushed pineapple, drained
3 (11 ounce) cans mandarin oranges, drained
1 -2 cup green seedless grapes or 1 -2 cup red seedless grapes, halved

Steps:

  • Cook cranberries in the 4 cups water to a boil.
  • Add soda and stir and enjoy watching it bubble up.
  • Simmer 10 minutes.
  • Stir in sugar, jello, and marshmallows.
  • Stir until melted.
  • Let mixture cool.
  • Add apples, nuts, pineapple, oranges, and grapes.
  • Pour into one 9" x 13" pan and one 8" x 8" pan.
  • Chill until firm.

I got this recipe from a coworker at the salon I work at. I didn't think it would be so wonderful and addictive! It's very creamy and sweet, and a great mix of flavors. It will be the best thing you ever use grapes for (except maybe wine!).

2 lbs red seedless grapes
8 ounces sour cream
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract, to taste
1 cup brown sugar, packed, to taste
1 cup crushed pecans, to taste

Steps:

  • Wash and stem grapes.
  • Set aside.
  • Mix sour cream, cream cheese, white sugar and vanilla by hand until blended.
  • Stir grapes into mixture, and pour in large serving bowl.
  • For topping: Combine brown sugar, and crushed pecans.
  • Sprinkle over top of grapes to cover completely.
  • Chill overnight.

2 (3 ounce) packages raspberry flavored Jell-O® mix
1 cup white sugar
2 cups boiling water
1 ½ cups cold water
1 pound cranberries
1 orange
1 ½ cups crushed pineapple, drained
2 cups seedless red grapes, halved
1 ½ cups diced apples

Steps:

  • Add the sugar to the gelatin. Stir in the boiling water and stir until the gelatin is dissolved. Stir in the cold water or the pineapples juice. Chill until gelatin is thick.
  • Finely grind the cranberries and the orange in food processor or run through the meat grinder.
  • Add the ground cranberry mixture, drained crushed pineapple, grapes and cubed apples to the thickened gelatin. Pour mixture into one 9 x 13 inch pan or a large bowl. Refrigerate overnight before serving.

1 cup white sugar
1 (20 ounce) can crushed pineapple, drained

1 pint heavy whipping cream
7 ounces miniature marshmallows

Steps:

  • Coarsely chop the cranberries in a food processor; put in a large, non-metal bowl and mix in the sugar. Cover and refrigerate for 12 hours.
  • Whip the cream until stiff. Add the pineapple and nuts to the cranberries, mix well. Fold in whipped cream and marshmallows; refrigerate until ready to serve.

1 cup white sugar
1 (3 ounce) package orange-flavored gelatin (such as Jell-O®)
2 bananas, diced
1 Granny Smith apple, diced
2 stalks celery, finely chopped
½ cup chopped walnuts

Steps:

  • Place orange juice, cranberries, and sugar in a 1 1/2-quart pot over medium heat. Cook until sugar dissolves and cranberries start to pop, about 5 minutes.
  • Remove from heat and stir in orange gelatin. Let cool to room temperature, at least 20 minutes. Stir in bananas, apple, celery, and walnuts. Refrigerate until set, 4 hours to overnight.
