Mount Vernon Peanut Soup. image

How to make Mount Vernon Peanut Soup.

Number Of Ingredients 11

1 c. butter
2 c. chopped celery
4 med. Onions, chopped
½ c. all-purpose flour
5 c. milk
1 c. cream
1½ c smooth peanut butter
6 c. chicken stock
Juice of two limes
2 tsp. hot sauce*
2 tsp. curry powder*

Steps:

  • Melt butter in a large heavy pot.
  • Add celery and onions, sauté until transparent.
  • Stir in flour until well blended.
  • Reduce heat and stir in the milk and cream.
  • Cook until mixture is smooth and slightly thickened. Do not allow to boil.
  • Add the lime, chicken stock and peanut butter and stir until smooth.
  • Over the years I have added the *hot sauce and curry powder.
