1/2 cup vegetable oil
1 cup sugar
1 cup light brown sugar
2 cups all-purpose flour
2 teaspoons baking powder

1 pinch salt
4 eggs
3 cups shredded carrots
1 cup ground toasted walnuts
1 teaspoon pure vanilla extract
8 ounces chopped toasted walnuts
2 cups coconut flakes
4 cups powdered sugar
1 cup simple syrup

Steps:

  • Preheat oven to 350 degrees.
  • Grease 3 round (9 inch) cake pans with 2 teaspoons.
  • of the butter.
  • In the bowl of an elctric mixer, fitted with a paddle, combine the 1/2 cup of the butter, oil, sugar and brown sugar.
  • Cream the mixture until smooth.
  • Sift the flour, baking powder, baking soda and salt into a small mixing bowl.
  • Add the eggs to the butter/sugar mixture, 1/2 cup at a time.
  • Add the carrots, ground walnuts and vanilla.
  • Mix well.
  • Pour the batter into the prepared pans and spread evenly.
  • Place in the oven and bake for about 25 to 30 minutes or until the center springs back when touched.
  • Remove from the oven and cool.
  • In the bowl of an electric mixer, combine the cream cheese and remaining 1/2 cup butter.
  • Mix well.
  • Add the walnut pieces and coconut.
  • Mix well.
  • Add the powdered sugar, 1 cup at a time and mix until the frosting is spreadable.
  • To assemble, slice each cake in half.
  • Place on half in the center of a serving plate.
  • Brush the top of the cake with the syrup.
  • Spread 1/2 cup of the frosting over the first layer.
  • Repeat the above process until all of the layers are used.
  • Ice the entire cake with the remaining frosting.
  • Refrigerate the cake for 30 mninutes.

1 tablespoon cornstarch

¼ teaspoon salt
1 ½ cups white sugar
4 eggs
¾ cup unsalted butter, cubed
1 tablespoon vanilla extract
1 cup coconut milk
6 ounces cream cheese, softened
½ cup unsalted butter, softened
¼ teaspoon salt
4 cups sifted confectioners' sugar
3 tablespoons coconut milk
1 tablespoon vanilla extract
1 cup white sugar
1 cup water
¼ teaspoon vanilla extract
½ cup shredded coconut

Steps:

  • Prepare the filling by placing the heavy cream, 3/4 cup sugar and 2 tablespoons coconut cream in a heavy saucepan over medium heat; bring to a simmer. Whisk together the cornstarch and 1 tablespoon coconut milk. Stir into the simmering cream until smooth; cook, stirring, for 3 minutes. Add the 1/2 cup butter and 1 cup shredded coconut; continue cooking, stirring 3 minutes longer. Cool to room temperature and then refrigerate until thickened, about 2 hours. Keep refrigerated until ready to assemble cake.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease three 9 inch round cake pans and line the bottoms with parchment paper. Grease the paper and then flour the pans lightly, tapping out any excess. Sift together the flour, baking powder and salt. Set aside.
  • Place the 1 1/2 cups sugar and eggs in a large mixing bowl and beat with an electric mixer for 1 minute. Gradually add the 3/4 cup butter, 1 tablespoon vanilla extract and 1 cup coconut milk; continue beating for 2 minutes. Add the flour mixture and beat for 1 minute.
  • Pour the batter evenly into the prepared cake pans. Bake in the center of the oven for 20 minutes or until a wooden toothpick inserted in the center comes out clean. Cool the cakes in the pans on a rack for 20 minutes. Unmold the cakes, carefully peel off the paper and allow to cool completely on a rack.
  • Prepare the icing by beating together the cream cheese and 1/2 cup butter. Add 1/4 teaspoon salt, confectioners sugar, 3 tablespoons coconut milk and 1 tablespoon vanilla; beat until smooth.
  • Prepare the syrup by placing the 1 cup sugar, 1 cup water and 1/4 teaspoon vanilla extract in a small saucepan. Bring to a boil and continue to boil, while stirring for 3 minutes. Remove from heat and brush the top of each cake layer with the syrup using a pastry brush. You don't have to use all of the syrup.
  • Assemble the cake by placing one cake layer on a serving platter. Spread it with a layer of the reserved filling and top with another cake layer. Spread the cake with the filling and top with the remaining cake layer. Ice the top and sides of the cake and sprinkle the top with 1/2 cup shredded fresh coconut.

2 cups sugar
1 (12-ounce) can evaporated milk
1/2 cup butter
1 teaspoon vanilla extract
1 coconut, grated

Steps:

  • Preheat the oven to 350 degrees F. Beat the egg whites to soft peaks, while gradually adding 1/2 cup of the sugar. In a separate bowl, beat the egg yolks until thick. Cream the butter with the vanilla and beat in the remaining 1 cup sugar. Stir the egg yolks into the butter mixture and cream well. Sift the flour, baking powder, and salt together 3 times. Add enough milk to the reserved coconut milk to make 1 cup liquid. Alternate adding coconut liquid and flour mixture to the butter mixture. Blend in 1/4 cup of the coconut grating and beat well. Fold in the egg whites. Pour into two 9-inch or three 8-inch layer pans. Bake for 25 to 30 minutes. Frost the cake layers, assemble, and sprinkle with the remaining coconut grating.
  • Combine the sugar, milk, butter, and vanilla. Cook for about 5 minutes, until the mixture begins to thicken. Mix in the coconut. Frosts one 8- or 9-inch layered cake.

3 1/3 cups sifted cake flour (not self-rising; sift before measuring)

1/8 teaspoon pure almond extract
2 1/2 sticks unsalted butter, softened
1 3/4 cups sugar, divided
7 large egg whites, at room temperature 30 minutes
For frosting
3 large egg whites, at room temperature 30 minutes
2 1/4 cups sugar
3/4 cup water
1 1/2 tablespoons light corn syrup
1/2 teaspoon cream of tartar
1/8 teaspoon salt
1 teaspoon pure vanilla extract
Equipment: 3 (9- by 2-inch) round cake pans

Steps:

  • Prepare coconut:
  • Preheat oven to 350°F with racks in upper and lower thirds.
  • Pierce softest eye of each coconut with a small screwdriver and collect liquid in 2 separate bowls to sample. If either tastes rancid, discard that coconut and liquid and Start over with another. Strain liquid from 2 coconuts through a dampened-paper-towel-lined sieve into a 1-cup measure and set coconuts aside. (You should have about 3/4 cup liquid. If not, add water.) Bring to a simmer with sugar and a pinch of salt in a small saucepan, stirring until sugar has dissolved. Cool and reserve.
  • Bake coconuts on lower rack 15 minutes. Leave oven on. Break shells with a hammer, then remove flesh with screwdriver, prying it out carefully. Peel brown membrane from flesh with a vegetable peeler. Coarsely grate enough coconut on large holes of a box grater to measure 5 cups.
  • Make cake layers:
  • Butter cake pans, then line bottom of each with a round of parchment paper and butter parchment. Flour pans, knocking out excess.
  • Sift together flour (3 1/3 cups), baking powder, and salt.
  • Stir together milk and extracts.
  • Beat butter and 1 1/2 cups sugar in a large bowl with an electric mixer at medium speed until pale and fluffy, 2 to 3 minutes. At low speed, add flour mixture in 3 batches alternately with milk mixture, beginning and ending with flour mixture and mixing until each addition is just incorporated.
  • Beat egg whites in another large bowl with cleaned beaters at medium speed until they just hold soft peaks. Beat in remaining 1/4 cup sugar, 1 tablespoon at a time, then beat until whites just hold stiff, glossy peaks. Stir one third of whites into batter, then fold in remaining whites gently but thoroughly.
  • Spread batter evenly in pans and rap pans on counter several times to eliminate air bubbles.
  • Place 2 pans on upper rack and 1 pan on lower rack and bake 20 minutes. Switch position of pans and bake until golden and a wooden pick inserted in center of each cake comes out clean, 10 to 15 minutes more. Cool cakes in pans on racks 5 minutes, then run a knife around edges of pans and invert cakes onto racks. Discard parchment and cool completely, about 1 hour.
  • Make frosting and assemble cake:
  • Beat together egg whites, sugar, water, corn syrup, cream of tartar, and salt in a large deep bowl with a handheld mixer (clean beaters if necessary) until combined. Set bowl over a pot of simmering water and beat mixture at high speed until it holds stiff, glossy peaks, 5 to 7 minutes. (Humid weather may necessitate additional beating time.) Remove bowl from heat, then add vanilla and beat until frosting is cooled and very thick, 6 to 10 minutes. Transfer 2 1/3 cups frosting to another bowl and stir in 2 cups coconut to make filling.
  • Put 1 cake layer on a cake stand or large plate. Brush top with one third of reserved coconut syrup, then spread with half of filling. Repeat with another layer, more syrup, and remaining coconut filling, then top with third layer. Brush top with remaining syrup, then cover cake with remaining frosting and coat with remaining coconut, gently pressing to help it adhere.

2 cups coconut, drained and meat grated
1 cup milk, or as needed
3 cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
½ cup butter, room temperature
½ cup shortening
2 cups white sugar
4 eggs, room temperature
1 teaspoon vanilla extract
¼ cup water
1 cup white sugar
⅛ teaspoon cream of tartar
1 pinch salt
2 egg whites
1 teaspoon vanilla extract
⅔ cup butter, room temperature
2 cups grated fresh coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round baking pans. Reserve coconut juice and add enough milk to make 1 cup; set aside.
  • In a small bowl, sift together flour, baking powder, and salt. Set aside.
  • Beat the butter, shortening, and 2 cups sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla with the last egg.   • To Make Icing: In a saucepan, combine 1/4 cup water, 1 cup sugar, cream of tartar, and pinch of salt. Bring to a boil, stirring occasionally. Stop stirring once mixture is boiling. Cook until sugar syrup reaches soft ball stage on a candy thermometer (240 degrees F or 115 degrees C). If you don't have a thermometer, drop a little sugar syrup into a cup of cold water; when the syrup is ready, it will form a soft ball that holds its shape.
  • While syrup is boiling, whip egg whites at medium-high speed until stiff but not dry. Carefully pour the hot syrup down the side of the bowl, beating constantly at high speed. Keep beating until mixture is cool to the touch.
  • Drop butter, a tablespoon at a time, into egg white mixture, beating constantly. The mixture will deflate as butter is added; just keep mixing. When all of the butter is incorporated, frosting will fluff up again. Blend in vanilla.
  • Spread buttercream between, around and on top of each layer. Sprinkle grated coconut on top of each frosted layer.

Steps:

  • Preheat oven to 350°. Grease the bottom of two 9-inch cake pans. Cut wax paper to fit the bottoms, and grease and flour the wax paper. Cream the butter and sugar until light and fluffy. Beat in egg yolks one at a time. Sift the flour, baking powder, and salt together. Add alternately with milk, beginning and ending with dry ingredients. Whip egg whites until stiff but not dry. Fold into the cake batter along with the grated orange rind. Pour the batter into the pans and bake at 350° for about 25 minutes or until a toothpick inserted in the middle comes out clean. Let the cakes cool in the pans for a few minutes, invert onto rack, and peel off wax paper. ----------------------- Slice the layers in half to get 4 thin layers, prick with a fork, and drizzle with the mixture of orange juice and rum. Set aside. ----------------------- In saucepan, blend sugar with salt and cornstarch until mixture is smooth. Gradually add orange juice and bring to a boil on top of stove. Boil 1 - 2 minutes, remove from heat, and stir in butter, orange rind, and lemon juice. Cool. Spread 1/3 of mixture on first layer; stack second and third layers, repeating process. Add fourth layer. ----------------------- Whip cream until soft peaks form and add rum and sugar. Continue to whip until stiff. Spread over cake and pat shredded coconut onto sides and top. Yields one 4-layer 9-inch cake.

6 ounces self-rising flour
1 teaspoon baking powder

Steps:

  • Before you start with this cake, you'll first have to deal with the coconut.
  • Push a skewer through the top and make 3 holes and drain out the milk.
  • Then place the coconut pieces in a ziplock bag & sit it on a hard surface - a stone floor or an outside paving stone. Then give it a whack with a hammer - it won't be that difficult to break.
  • Now remove the pieces from the bag and, using a cloth to protect your hands, pry the top of a knife between the nut and the shell. You should find that you can force the whole piece out in one go.
  • Now discard the shell and take off the inner skin using a potato peeler.
  • The coconut is now ready to use.
  • The best way to grate coconut flesh is with the grating disc of a food processor, but a hand grater will do just as well.
  • Prepare Cake:.
  • Preheat oven to 325°F.
  • 2 8" pans, buttered and parchment lined.
  • Sift the flour and baking powder into a large bowl, holding the sieve high to give them a good airing.
  • Now just add all other ingredients, except the grated coconut, to a bowl & mix with an elecrtic mixer and combine everything until you have a smooth texture, about 1 minute or use wooden spoon.
  • What you should have now is a mixture that drops off a spoon when you give it a tap on the side of the bowl. If it seems stiff, add a drop of water and mix again.
  • Finally, stir in the 3 oz fresh grated coconut and divide the mixture between pans.
  • Place them on center shelf of the oven and bake 30-35 minutes.
  • To test whether the cakes are cooked, lightly touch the center of each with a finger: if it leaves no impression and then sponges spring back, they are ready.
  • Next, remove them from the oven and wait 5 minutes and then turn them out on to a wire rack.
  • Carefully peel off base papers, when the cakes are absolutely cool, carefully divide each one horizontally into two halves using a sharp serrated knife.
  • Prepare Frosting:.
  • Now make up the frosting by simply whisking all the ingredients together in a bowl to combine them.
  • Next select the plate or stand you want to serve the cake on - you'll also need a palette knife - then simply place one layer on first, followed by a thin layer of frosting(about a fifth), followed by the next layer of cake, and so on.
  • After that, use the rest of the frosting to coat the sides and top of the cake.
  • Don't worry how it looks: the good thing is that it's all going to be covered with the rest of the grated coconut next.

2 2/3 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup coconut milk
1/2 cup milk
4 egg whites
2 egg whites
1 1/2 cups sugar
6 tablespoons water, cold
1 teaspoon vanilla
1 pinch cream of tartar
coconut, freshly grated

Steps:

  • CAKE:.
  • Preheat oven to 350.
  • Cream butter and sugar. Beat egg yolks in one at a time. Add vanilla.
  • Sift cake flour and re-sift with baking powder and alt.
  • Combine milks.
  • Add sifted ingredients to butter mixture in 3 parts, alternately with milks.
  • Beat egg whites stiff. Fold mix in by hand.
  • Pour into three greased 9 inch cake pans.
  • Bake 30 minutes.
  • ICING:.
  • Combine all ingredients, except vanilla and coconut in top of a double boiler. Blend well. Then, place over rapidly boiling water and beat constantly with rotary beater for 6 minutes.
  • Reove from fire and add vanilla.
  • Spread sparingly between layers and sprinkle with fresh coconut.
  • Secure layers with toothpicks.
  • Ice whole cake and garnish with coconut.

This was my Grandma's recipe , I think I remember her saying she made a cake with fresh coconut but that was so many years ago I wouldn't remember LOL. ***untried recipe by me*** Posted just in case someone was wanting a challenge and give this recipe a try... :)

CAKE INGREDIENTS :
1 2/3 c cake flour
1 c sugar
1/2 tsp salt
3 tsp baking powder
1/3 c shortening
1/2 c coconut milk, unsweetened
1/4 c sweet milk
3 unbeaten egg whites
1 tsp vanilla extract
FRESH COCONUT ICING INGREDIENTS :
2 tsp gelatin
4 Tbsp cold water
2 pt whipping cream
2 tsp vanilla
1/2 c sugar
grated fresh coconut

Steps:

  • 1. FOR THE CAKE :
  • 2. Sift into large bowl the cake flour , sugar , salt and baking powder ; Add shortening.
  • 3. Mix coconut milk ans sweet milk together ; Add 1/2 of milk mixture to dry mixture ; Beat on low speed foe 2 minutes ; scrapping sides of the bowl.
  • 4. Add the remaining liquid , unbeaten egg whites and extract ; beat 2 minutes longer , scraping sides of the bowl.
  • 5. Pour into 2 well greased and floured 8" tins.
  • 6. Bake @ 350° for 25 minutes , turn onto cooling racks.
  • 7. FOR THE COCONUT ICING :
  • 8. Soak gelatin in cold water and dissolve over Hot water ; cool.
  • 9. Beat whipping cream until its stiff ; beat in vanilla and sugar.
  • 10. Add to cooled gelatin ALL AT ONCE ; Beat until cream stands in peaks.
  • 11. Spread on top of one cake and place second cake on top of icing. Spread on sides and top of cake ; sprinkle with grated fresh coconut.

3 sticks butter
3 cups sugar
3 cups flour
6 eggs
1/4 teaspoon soda
1/2 pint sour cream
2 packages frozen coconut
2 teaspoons vanilla
2 teaspoons coconut flavoring
(have everything at room temperature)
GLAZE:
1 cup or more powdered sugar and enough milk to make a thin glaze to dribble over cake while hot and sprinkle coconut on cake.

Steps:

  • Cream sugar and butter. Add eggs one at a time, beating well after each. Add all other ingredients. Mix well. Bake at 325 degrees in greased and floured tube pan for 2 hours. Reserve a little coconut to sprinkle on cake.

1/2 cup coconut milk

1/2 cup grated coconut
Topping
1 cup heavy cream, whipped
1 tablespoon sugar
1/2 teaspoon vanilla
1 coconut, shredded or grated

Steps:

  • In a mixing bowl, cream butter until fluffy. Add 1/2 cup sugar, beating until light and fluffy. Add egg yolks, beating well. Add sifted dry ingredients alternately with the coconut milk. Stir in vanilla and coconut. Beat the egg whites with remaining 1/2 cup sugar until soft peaks are formed; fold into the cake batter. Pour batter into two greased and floured 8-inch layer cake pans and bake at 375° for about 25 minutes.
  • Remove fresh coconut cake to wire racks to cool.In a bowl, beat heavy cream with the 1 tablespoon of sugar until thick.
