CHEESY GROUND BEEF PASTA
This Cheesy Ground Beef Pasta is so yummy and comforting! It's a super easy ground beef recipe, loaded with veggies and topped with ooey-gooey melty cheese

Steps:
- Cook pasta according to package directions for 6-8 minutes.
- Preheat oven to 400 degrees.
- Heat a large skillet on medium high heat and then add in 2 tbsp. of olive oil.
- Sauté the peppers and mushrooms until tender then set aside in a bowl.
- Using the same pan, add 1 tbsp. of olive oil and sauté the onion until tender then add in the ground meat.
- Break up the meat well and cook until no longer pink then add in the salt, oregano, basil, black pepper, garlic and the tomato sauce, diced tomatoes, tomato paste and pasta water.
- Return the mushrooms and bell pepper to the pan.
- Mix well and let the sauce simmer on medium low heat for 5-7 minutes, covered.
- Turn off the heat and add in the cooked pasta. Let it cool for about 5 minutes and then add in the cheeses. Remember to keep 1/2 cup of each type to top the dish before baking. Mix together well.
- Transfer the pasta to a baking dish and then top with the remaining cheese.
- Bake covered with aluminum paper in a preheated 400 degree oven for 20 minutes, then remove the foil to bake another 10 minutes uncovered.
- Remove from the oven, sprinkle with some fresh parsley and serve.

- Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
- Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

- In a medium pot, mix the meat, onion, garlic and in a lower heat sauté for 5 minutes.
- To the cooking meat, add the celery, fresh tomatoes, tomato paste, tomato sauce, chili powder (berbere) or crushed pepper, paprika, carrot; stir well for 5 minutes in a lower heat.
- Add to the sauce, water, bay leaves and basil; cook the sauce for 20 minutes or until simmers.
- Add black pepper and salt; mix well; remove from heat.
- Serve it warm with pasta or rice. Keep it in fridge.

This pasta sauce quickly became a staple in my dinner during university. I would make a batch of this before each university term, freeze it, and take portions of it to university with me. It freezes extremely well and is very tasty!

Steps:
- Combine beef and onion in a Dutch oven (or a large pot that has a lid).
- Saute until lightly browned.
- Drain off fat if necessary.
- Add salt, Worcestershire sauce, and tomato sauce.
- Simmer, covered 45 minutes, stirring occasionally.
- Add cheese; stir until melted.
- Cool.
- Divide into equal parts and freeze in jars or plastic containers.
- Thaw to use (then heat) for lasagne, spaghetti, or your favourite pasta.
