Steps:
- Preheat an oven to 325 degrees F (165 degrees C).
- Beat the eggs in a mixing bowl; whisk in the mayonnaise, cream of mushroom soup, broccoli, Cheddar cheese, onion, and butter. Spoon into a 2 quart casserole dish; sprinkle with the crushed crackers.
- Bake in the preheated oven until hot and bubbly, 30 to 40 minutes.

Steps:
- Preheat the oven to 350 degrees. Prepare a 9X13 baking dish by spraying the bottom and sides with non-stick spray. Set aside.
- Boil the broccoli florets in salted water for 3 minutes, drain them, and put them into a large mixing bowl.
- Season the broccoli with salt, pepper, garlic and onion powder. Stir the Velveeta Cheese into the broccoli until fully incorporated and all the cheese is melted.
- Pour the broccoli cheese mixture into the casserole dish and distribute evenly. Sprinkle the shredded cheddar evenly on top of the broccoli.
- Mix the crushed ritz crackers with the melted butter then sprinkle on the top of the casserole. Bake for 25-30 minutes until the cheeses are bubbly. Remove from oven and serve immediately.

- Preheat oven to 350.
- Cook broccoli on stove, drain.
- Add soup and mayo, mix well.
- Crumble 1/4 of the crackers and mix inches.
- Crumble the remaining crackers and place on top of casserole.
- Cook for 30 minutes, uncovered.

FIRST PLACE BROCCOLI CASSEROLE WITH RITZ CRACKERS
This recipe won first place in 1978 at the county fair. I make it over the holidays and everyone raves about it. There are some similar recipes on Recipe Zaar, but this recipe is different enough in my opinion to make it slightly better. You can use fresh or frozen broccoli, although the recipe calls for 2 packages, frozen chopped broccoli.

- Mix all above ingredients together, except butter and crackers.
- Put into 2-quart casserole.
- Melt butter in pan and saute stack of crumpled Ritz crackers.
- Spread over casserole.
- Bake at 350 degrees.
- Bake 30-35 minutes.
