FINNISH TURNIP CASSEROLE

Carrots and sugar sweeten the turnip in this side dish. A must for my family's Thanksgiving and Christmas dinners. The recipe is often requested.

3 large carrots, cubed
1 large turnip, cubed
3 tablespoons softened butter
½ teaspoon salt
¼ cup all-purpose flour
¼ cup white sugar
2 eggs
½ cup milk
2 tablespoons white sugar
¼ teaspoon ground cinnamon

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Place the carrot and turnip cubes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Return the carrots and turnips to the pot, and mash well with the butter, salt, flour and 1/4 cup of sugar. Whisk together the eggs and milk in a bowl, then stir into the mashed carrot mixture until blended. Scrape into the prepared casserole dish. Stir together 2 tablespoons of sugar with the cinnamon in a small bowl, and sprinkle over the top of the carrot mash.
  • Bake in the preheated oven until the carrot mash has slightly firmed and the top has begun to turn golden brown, about 45 minutes.

This hearty Finnish side dish is similar to mashed potatoes, but with the special, earthy flavor of yellow turnips (lanttu). Lanttulaatikko is a favorite Christmas dish on Finnish holiday tables.

1 large turnip, peeled
1/8 cup breadcrumbs
1/2 cup butter
1 large egg
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger powder
1/2 teaspoon ground nutmeg
salt & pepper

Steps:

  • Boil turnip till tender (15-20 minutes). Remove turnip and allow to cool.
  • When cooled, mash turnip with potato masher or ricer in a medium bowl. Mix in all other ingredients.
  • Put mixture in casserole dish and bake in oven at 325 degrees F for one hour. Casserole should be brown and fully cooked through.
  • Note: in the USA, "yellow turnips" are sold as "rutabagas".

My grandfather was born in Finland and came to Canada with his family when he was 2. Eventually he married an English-Canadian girl who learned to make this from his stepmother. I have no idea how close it is to the authentic dish but it is a Markanen family tradition for Christmas dinner.

1 (6") turnip peeled and cut in 3/4
1 large egg well-beaten
2 tablespoons white sugar more if needed
2 tablespoons butter
1/3 cup milk approximately
2 tablespoons butter
1/3 cup dry bread crumbs

Steps:

  • 1. Place turnip in a large pot with enough water to cover. 2. Bring to a boil and reduce heat. Cook turnip until it's very soft, 30 to 40 minutes. Drain well and return to pot. 3. Mash well. (My mother uses her electric mixer to beat it but I think it's better if it's not super smooth.) 4. Add the sugar one tablespoon at a time, stirring and tasting after each addition. The turnip should taste a little bit too sweet. 5. Stir in the butter until melted and well mixed then add the beaten egg and mix well. 6. Add milk gradually while stirring. Mixture should be relatively sloppy, so add more if necessary. 7. Spoon turnip into a shallow casserole. 8. Melt butter and stir in bread crumbs. Sprinkle mixture evenly on top of the turnip. 9. Bake in a 350(F) degree oven for about 45 minutes, until crumb topping starts to brown and a knife inserted in the center comes out cleanly.

2 medium yellow turnips or 2 medium rutabagas
2 tablespoons butter
1 cup milk, preferably homogenized or 1 cup half-and-half cream
1/2 cup fine dry breadcrumb
1 tablespoon granulated sugar
1 tablespoon brown sugar
1 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon fresh ground black pepper
2 tablespoons breadcrumbs
1 tablespoon melted butter

Steps:

  • Peel& cube turnip.
  • You should have at least 9 cups.
  • Place in a large saucepan& cover with water.
  • Bring to a boil over high heat.
  • Cover& reduce heat so water gently bubbles.
  • Cook until tender, from 25-30 minutes.
  • Then drain.
  • Using potato masher or electric mixer, mash turnip.
  • Stir in 2 tbsp butter until melted, then mix in milk.
  • Stil 1/2 cup bread crumbs with sugars& seasonings.
  • Stir into turnip.
  • If baking right away, preheat oven to 350 degrees F.
  • BUtter a 9x13" baking dish or coat with cooking spray.
  • Spread turnip evenly in pan and run fork over top to create a rough appearance.
  • Sprinkle with 2 tbsp bread crumbs& drizzle with 1 tbsp melted butter.
  • Bake uncovered in centre of oven until centre is hot& crumbs are golden-tipped- about 45 minutes.
  • Serve right away with roast turkey, chicken, pork or beef.
  • Note: To make ahead, prepare completely.
  • Do not bake.
  • Cover& refrigerate for up to 2 days.
  • A cold casserole may need 55-60 minutes baking time.
  • If frozen, turnip's texture may soften& water out.

3 tablespoons unsalted butter, softened
1/2 teaspoon salt
1/4 cup all-purpose flour
1/4 cup granulated sugar
2 eggs
1/2 cup milk
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°F Coat a 2 quart casserole dish with nonstick cooking spray.
  • Combine carrot and turnip chunks in a large pot. Pour in enough water to cover them. Add salt.
  • Bring the pot to a boil over high heat. Reduce heat to medium-low and simmer for 20 minutes until the carrots and turnip are tender. Drain and allow to cool for 1 or 2 minutes.
  • Return them to the pot and mash them.
  • Add butter, salt, flour and 1/4 cup sugar. Mix well.
  • Combine eggs and milk in a bowl and whisk well.
  • Add the milk mixture to the carrot mixture. Blend well.
  • Transfer the mixture to the prepared casserole dish.
  • In a small bowl, mix together 2 tablespoons sugar and cinnamon. Sprinkle over the mixture in the casserole.
  • Bake for 45 minutes or until the top starts to turn golden brown.
  • Serve hot.
