SPICY FIESTA TACO SOUP

Have a fiesta any day of the week! This soup is warm and filling - and easily prepared. Spicy and flavorful, and using ingredients readily found in your pantry, this soup comes together quickly and is sure to please a hungry family. Serve with a side salad and warm tortillas for dipping, or use the garnish option of crushed corn tortilla chips and shredded cheddar cheese. Ole!

1 teaspoon olive oil
1 -2 jalapeno pepper, fine dice (seeded and deribbed)
6 cups chicken broth (or water with chicken-flavored bouillon)
3/4 cup long grain brown rice, rinsed before cooking
2 tablespoons dried onion, minced
1 (8 ounce) can tomato sauce (regular or Mexican style)
2 tablespoons taco seasoning
1 tablespoon dried parsley
2 (15 ounce) cans pinto beans, drained and rinsed
1 (8 -10 ounce) can diced tomatoes, with juice (Rotel or regular)
corn tortilla chips
2 -4 ounces shredded cheddar cheese

Steps:

  • In a large stock pot, add olive oil and jalapeno. Sauté pepper until soft and fragrant, 3-4 minutes.
  • Add chicken broth and bring to a boil.
  • Meanwhile, measure out the rice. Put rice in a strainer/fine colander and rinse under cold running water until water runs clear. (This removes some of the starch.).
  • To the stock pot, add the brown rice, onion, tomato sauce, seasonings, pinto beans and diced tomatoes.
  • Reduce heat to medium-low, stir pot, cover and simmer 30-45 minutes (until rice is done, according to your package directions).
  • To serve, ladle soup into bowls. Add crushed corn tortilla chips and sprinkle with grated cheddar cheese.
  • Enjoy!

This is a very simple, very flavorful soup. It even has the husband's seal of approval! This is also Weight Watcher friendly. A 2-cup serving is 7 points.

1 lb lean ground beef, browned and drained
1 pkg taco seasoning mix
1 can(s) white corn, drained
2 can(s) black beans, drained
3 c chicken broth, fat free
1 can(s) tomatoes with green chilies (14.5 oz can)

Steps:

  • 1. Brown and drain ground beef. Add all ingredients to a large soup pan and let simmer for 30 minutes on medium heat.
  • 2. Top with cheese or tortilla chips, if desired. (WW tip: 2 cups equals 7 points. I topped with a slice of Kraft fat free American cheese for no extra points.)

this was a quick throw together that came out amazing... I have large men to feed and they each were very pleased with this soup on a cold snowy day after working outside in most of it. warms your bones, sticks to your ribs and fills you real good.

3 can(s) seasoned field peas
2 can(s) large cans tomatoe puree
1 can(s) large can crushed tomatoes
1 can(s) leavy spinach or 2 cups fresh spinach not cooked
1 can(s) dices seasoned tomato garlic and herb
1 can(s) no salt mixed veggies
1 bag(s) medium frozen whole kernel corn
2 lb taco seasoned meat (turkey) uncooked and crumbled.
1 each Tbsp salt, ground black pepper, garlic powder, onion flakes, onion powder, chilcken bullion(two cubes,crushed) adobo
3 c bottled water
1 Tbsp crushed garlic
1 medium yellow or white onion diced small
1 c shredded cheese of you favorite (optional)

Steps:

  • 1. in a large pot, mix your tomatoes/water/bullion/seasons/ and meat... bring to boil stirring often... do not let it stick
  • 2. after stock boils for 5mins reduce to simmer add your other items.
  • 3. stir often, reduce to low or 2-1 and let simmer as long as possible... the longer the better. taste comes with time.
  • 4. sever hot with buttered soft bread, or tortillas. and top with shredded cheese

This is a fast and easy dinner recipe I got from my mother-in-law. It's so good. The flavors blend together nicely.

1 lb ground beef
2 (15 1/4 ounce) cans corn (not drained)
2 (15 ounce) cans black beans (not drained)
1 (10 ounce) can Rotel tomatoes & chilies
2 (1 ounce) packets hidden valley ranch dressing mix
1 1/4 ounces taco seasoning
2 cups water
1/2 cup shredded cheddar cheese
8 ounces sour cream
tortilla chips

Steps:

  • Brown ground beef, drain.
  • In a pot mix together, cooked ground beef, corn, black beans, ranch packets, taco seasoning, Rotel and water.
  • Bring to a boil for 5 minutes stirring occasionally.
  • Cook on low for 20-25 minutes.
  • Serve hot. Top individual bowls of soup with a dollup of sour cream and shredded cheddar cheese.
  • Dip tortilla chips in soup.
