- Coat 2 quart casserole with nonstick spray. Preheat the oven to 350°F.
- Melt butter in medium saucepan. stir in flour, mustard, paprika, and salt. slowly pour in milk, whisking continuously until there are no lumps in the flour. continue to stir with whisk, raise the heat, and cook until milk bubbles and thickens. Remove from stovetop and stir in sour cream, egg, and cheese.
- Toss macaroni and the cheese mixture together in a bowl and then pour it into the casserole. Top with the cornflake crumbs. Set in the oven and bake for 20 min, or until bubbling around edges.

- Preheat your oven to 400 degrees.
- Cut tops of acorn squash off. Scoop out seeds and pulp leaving about 1-2 inches on the sides and bottom. Place acorn squashes on a baking sheet.
- Melt 3 tablespoons of butter in the microwave then use a basting brush to spread butter on top and inside of each acorn squash.
- Bake squash for 40-50 minutes, until tender with a fork.
- While the acorn squash is baking, reheat the macaroni and cheese by adding in the remaining 2 tablespoons of butter and milk, then reheat in the microwave, stirring a few times when cooking.
- Remove the acorn squash from the oven, scoop 1 cup of macaroni and cheese into each acorn squash and enjoy!
- Optional: Top with breadcrumbs, shredded cheddar cheese, and broil for 2 minutes, if desired.

FAR FETCHED MAC & CHEESE
I got really bored one day and decided to put every flavor of cheese I had in my fridge with elbow macaroni, turned out really great and my 1 year old loved it! Great for adults and kids!

- 1. Preheat oven to 350 degrees, lightly butter pan.
- 2. Bring large pot of salted water to a boil.
- 3. Add oil to the boiling water, then add elbow macaroni. Boil for 7 minutes. Drain well.
- 4. Melt 8 tbs butter in large pan, stir in pasta.
- 5. In large bowl mix all cheeses evenly.
- 6. Add 2 cups of half and half to the large pan of macaroni. Stir well then add 1 1/2 of mix cheese in with macaroni.
- 7. When cheese is melted into the macaroni, add 1 cup of velveeta and 2 lightly beaten eggs.
- 8. Sprinkle 1/8 salt and pepper then transfer macaroni to buttered baking pan. Dash the remaining cheese and dot with the 1 tbs of butter. Bake until you see the top layer of cheese bubbling (35 minutes)
