Great Salad for your summer gatherings...it is crisp, cool, flavorful and something different. It makes alot so it's great for taking to cookouts and other gatherings...take the recipe with you because everyone asks for it....Very simple and can be made ahead of time...ENJOY!!

Number Of Ingredients 10

1 pound(s) bow tie pasta (cooked al dente & drained)
2 cup(s) combo of colors of chopped peppers (red, yellow & green)
1 1/2 cup(s) shredded carrot or matchstick
1 cup(s) finely diced red onion
1 can(s) dark red kidney beans
DRESSING
2 cup(s) hellman's mayo
3/4-1 cup(s) granulated sugar
1 cup(s) white vinegar
1 can(s) sweetened condensed milk

Steps:

  • Cook & drain the pasta,rinse with cool water; while pasta is cooking drain & rinse kidney beans (set aside); Shred carrots and chop peppers and onion
  • Toss (I just use my hands) to combine the pasta, carrots, peppers and onions...add kidney beans last so as not to tear them all up in the tossing process.
  • Whisk together all ingredients for the dressing and combine with pasta/veggie mixture. Cover and refrigerate till good and chilled or overnight. Give it a stir before serving.

1 cup MIRACLE WHIP Dressing
1/2 cup milk
1/2 cup finely chopped celery
1 small red pepper, finely chopped
4 hard-cooked eggs, chopped
8 green onions, sliced

Steps:

  • Prepare Dinners as directed on package.
  • Add remaining ingredients; mix lightly.

I made this recipe one year for our Family Reunion. I added ingredients that I loved, and everyone else loved it too. You can also add cooked shrimp to this salad if you like. The recipe is just what it implies FAMILY REUNION SIZE. It is for a large crowd. This was one of about 27 items that I had on the menu that year. The family loved this recipe, some had never eaten cold spaghetti in a salad before, but really did like my version. It is very similiar to many versions with a few different changes, some recipes use less ingredients & others use more, it is all in what you like.

2 pound(s) spaghetti, cooked aldente(about 7 or 8 minutes)
1 large jar mccormick salad supreme
2 - 16 oz. bottles robust or zesty italian dressing
8 ounce(s) pkg. pepperoni, thin sliced save some for garnish)
2 cup(s) grated parmesan cheese
1 small can black olives, sliced (more if desired)
4 stick(s) celery, (chopped fine)
6-8 medium fresh tomatoes, chopped or( 4-16 oz. cans diced & drained)
2 large green bell peppers chopped( save some for garnish)
2 large red bell peppers chopped (save some for garnish)
1 bunch(es) green onions, chopped fine (optional)
1 pound(s) shredded or cubed provolone or mozzarella
1 - long roasting pan
- garnish of pepperoni, & red & green peppers if desired

Steps:

  • Cook spaghetti in a large pot of boiling salted water, for approximately 7 to 8 minutes, or just until al dente. Remove from heat & drain into large colander, & rinse in cold water till cool.
  • Empty into VERY LARGE bowl. Then add remaining ingredients, one or two items at a time and stir to mix as you go, till all of the remaining ingredients have been added. Toss with the Italian Dressing, and pour into a large pan, or several pans or containers. It is best to prepare salad a day in advance so that the flavors has a chance to marry.Store in fridge till ready to serve.
  • If fresh tomatoes are too expensive use 2 large or 4 of the 15 1/5 oz size, but WELL DRAINED. May also cut recipe in half if desired, and you have big pasta lovers in your crowd. NOTE: It is very important NOT TO LET SPAGHETTI sit in HOT WATER, as it continues to cook , and will get too soggy. Drain immediately after removing from heat.

I got this recipe from my niece after eating it at a family 4th of July picnic. I haven't made it myself yet because it makes a LOT and I haven't had an occasion to use the recipe yet. It really is tastey and I'll make it soon as I have the opportunity.

2 lbs boneless skinless chicken breasts
1 lb uncooked penne pasta
1 lb frozen beans and carrots, mixture (baby carrots, green and yellow beans)
2 cups frozen broccoli florets
1 (8 ounce) package sliced fresh mushrooms
2 tomatoes, diced
1/2 cup olive oil
1/3 cup white wine vinegar
1 teaspoon salt
1 teaspoon basil leaves
1 teaspoon oregano leaves
2 garlic cloves, minced (optional)

Steps:

  • Cut chicken into 1-inch chunks. Salt and pepper lightly.
  • In medium bowl, blend dressing ingredients.
  • In Dutch oven, cook pasta according to package directions, adding frozen vegetables after 8 minutes. Return to a boil. Cook 3 to 4 minutes or until pasta and vegetables are tender. Rinse in cold water to cool; drain.
  • Spray large nonstick skillet with nonstick cooking spray. Heat skillet over medium-high heat. Add chicken. Cook and stir 7 to 9 minutes or until chicken is browned and internal juices run clear.
  • In very large bowl, combine pasta, vegetables, chicken, mushrooms and tomatoes; mix well.
  • Add dressing to salad; toss to coat. Cover and refrigerate thoroughly before serving.
