The name says it all... everything you love about breakfast in one glorious dish. Great for breakfast, brunch and the occasional hangover.

1 lb sage breakfast sausage
3 medium red potatoes, thinly sliced
6 slices white bread (it is best with a fresh, dense bread like pepperidge farms)
1 cup Cheese Whiz (or other nacho cheese sauce)
4 eggs
1 1/2 cups milk
2 teaspoons dry ground mustard
salt
pepper
maple syrup

Steps:

  • Preheat oven to 350.
  • Cook breakfast sausage in skillet over medium-high heat until browned.
  • While sausage is cooking, grease a 8-by-10-inch baking dish and evenly distribute the bread cubes along the bottom.
  • Remove sausage from skillet with spatula and evenly layer sausage over bread in the baking dish. Do not drain the fat from the skillet.
  • Add sliced potatoes to the remaining fat in the skillet and turn occasionally until lightly browned. Add browned potatoes to the baking dish, evenly layering over sausage.
  • Evenly pour/smear cheese wiz over top of potatoes.
  • Whisk together eggs, milk and ground mustard, adding salt and pepper to taste. Pour over top of casserole dish.
  • Bake at 350 for 50 minutes, until center is set and puffy.
  • Allow to cool slightly before attempting to cut. Serve drizzled with maple syrup.

9 large eggs
1 pkg jimmy dean regular sausage
6-8 thick cut bacon cut 1inch pcs
1 pkg simply potatoes sothwestern hashbrowns
1 small shallot
10-12 large sliced mushrooms
3 green onions
1/2 c green pepper
2 c colby & monteray jack cheese
1/4 c milk
1/2 c heavy cream
1/4 tsp onion powder
1/8 tsp black pepper

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Fry up bacon and sausage and add 1 shallot. While this is cooking up dice veggies.
  • 3. Drain grease from bacon and sausage and add the green pepper and mushroom to the bacon and sausage mixture. Cook the green pepper and mushroom until just tender and set aside.
  • 4. Crack open the eggs add, heavy cream, milk, onion powder, and black pepper. Beat the egg mixture well and add diced scallions.
  • 5. Grease the bottom of a 9x13 in pan. I like to layer my Egg bake. First step, bottom of the pan is hash browns, next add the sausage bacon with the green pepper and mushrooms mixture, 3rd layer is 2 cups of cheese, 4th and last step spread the battered eggs over the top. Put in 375 degree oven for 35 mins until golden brown and cheese has melted to top.

This is a great way to clean out the fridge and repurpose ingredients you have on hand for a delicious breakfast, lunch or dinner. I like to use old bagels or croissants, leftover cheese cubes from appetizer trays, deli meats and extra veggies from dinner-but just about anything will work. This casserole can be assembled the night before and stored in the fridge (but note: the cook time will increase if you bake directly from the fridge).

Nonstick cooking spray
8 large eggs
1/2 cup whole milk
Kosher salt and freshly ground black pepper
4 cups bread cubes (bagels, baguettes, sourdough)
1 cup diced green bell pepper (about 1 medium pepper)
3/4 cup thinly sliced scallions, green and white parts (about 4 scallions)
1/2 cup lightly packed chopped kale, stems removed (about 2 large leaves)
1 cup cubed sharp Cheddar
1 1/4 cups diced ham, ground sausage, crumbled bacon or diced turkey

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch baking dish with cooking spray.
  • Whisk the eggs, milk and salt and pepper to taste together in a large bowl. Switch to a rubber spatula and fold in all of the remaining ingredients (bread, bell pepper, scallions, kale, Cheddar and ham) one at a time. Pour the egg mixture into the prepared baking dish. Bake, uncovered, until the center is firm and the top is golden, about 50 minutes.
  • Cool the casserole for 10 minutes before serving. Enjoy!

"KITCHEN SINK" EGG BAKE



I call this "Kitchen Sink" because it really will absorb just about anything you have on hand -- be creative! Just about any cooked meat or sausage works, and you can add extra vegies or leftover potatoes (cut bite-size). Any choice of cheese works, too -- just use your imagination to choose seasoning accordingly. Depending on what cheese and meat is used, this can also be very low calorie. And so EASY. Sometimes I combine the meat with everything else, then serve at room temperature in small squares as finger food at a party or picnic.

6 eggs
1 pint cottage cheese (I use fat free)
2 cups grated cheese, of choice (I like Swiss best)
1 (10 ounce) package frozen chopped spinach
2 cups cooked beef or 2 cups cooked chicken, bite-size
salt
pepper
herbs
spices (see below)
olive oil flavored cooking spray or Pam cooking spray
more grated cheese, for top,if desired
2 -3 tablespoons toasted wheat germ

Steps:

  • Preheat oven to 325°.
  • Thaw spinach, and squeeze out as MUCH moisture as possible.
  • Beat the eggs in medium bowl.
  • Stir in the cottage cheese, grated cheese, spinach and seasonings; stir until mixed thoroughly.
  • (Note: Seasoning depends on choice of cheese& meat. E. g. for Swiss w ham or chicken, use 1/4 tsp. nutmeg; for cheddar or jack w/ anything, use cumin, oregano and chili powder, or Italian seasoning.) Lightly spray glass 13x9 pan w/ olive oil or PAM.
  • Distribute meat/chicken/ham (whatever1) evenly over bottom of pan.
  • Pour cottage cheese mixture over meat; push w/ spatula to distribute evenly.
  • Top with extra grated cheese if desired.
  • Sprinkle top w/ toasted wheat germ.
  • Bake 45-50 minutes, until set and slightly brown at edges.
  • Let sit a few minutes out of oven before serving.
  • Serve hot or at room temperature.
