Roasted Sweet Potatoes With Hot Honey Browned Butter image

Doubling down on sweet potatoes' sweetness by adding honey is like adding fuel to the fire, but the nuttiness from the browned butter, heat from the crushed red pepper flakes and bright acidity from the vinegar all work together to bring it back from the brink. This hot honey browned butter is also good on roasted winter squash, over plain oatmeal and - if we are being honest -probably over ice cream. But that's a different conversation. 4 small to medium sweet potatoes (about 1½ pounds), scrubbed
6 tablespoons unsalted butter (3/4 stick)
2 tablespoons honey
1 tablespoon white wine vinegar or apple cider vinegar
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground pepper
Flaky sea salt

Steps:

  • Heat the oven to 425 degrees. Poke sweet potatoes all over with a fork and place them all directly on the oven rack. Roast until they are very tender, with bits of sweet potato sugar caramelizing in the spots they've been poked, 50 to 60 minutes.
  • Meanwhile, melt the butter in a small pot over medium heat, swirling the pot just until the butter starts to bubble and brown, about 5 minutes. Add the honey, vinegar and red pepper flakes, swirling to combine (it will bubble up quite a bit), and season with salt and pepper. Remove from heat and set aside.
  • Once the sweet potatoes are out of the oven, slit them down the middle. Warm the browned butter mixture, and pour over the sweet potatoes. (Alternatively, scoop the flesh out of the skins and transfer to a bowl or serving dish, then drizzle with the browned butter sauce.) Generously sprinkle with flaky sea salt.

This recipe first appeared in The Times in 1992, with an article by Molly O'Neill, when Edna Lewis, many years after writing her seminal cookbook "The Taste of Country Cooking," was the chef at the Brooklyn restaurant Gage & Tollner. The addition of lemon zest and juice make this brighter and less sweet than typical sweet potato dishes.

6 medium sweet potatoes
2 cups light brown sugar (or a mixture of light and dark)
1 teaspoon freshly grated nutmeg
A (6-inch) strip of lemon zest (yellow part only)
1/2 teaspoon salt
6 tablespoons unsalted butter
1/4 cup lemon juice

Steps:

  • Rinse the potatoes under warm water. Place in a large pot, cover with cold water, and bring to a boil. Reduce the heat and simmer until the potatoes are just tender, 25 to 30 minutes. Drain and let cool.
  • Combine the sugar, ½ cup water, nutmeg, lemon zest and salt in a medium saucepan, bring to a simmer over medium heat and cook for 10 minutes. Add 5 tablespoons butter and stir well. When the butter has melted, remove from the heat and beat in the lemon juice. Set aside.
  • Heat oven to 425 degrees. Peel the sweet potatoes and slice into 1/2-inch disks. Use the remaining tablespoon of butter to grease a shallow baking dish. Lay the sweet potatoes in the dish in a single layer and pour the lemon syrup on top. Bake until bubbling hot, about 30 minutes.

Warm Sweet Potato-Apple Pone image

Sweet potato pone is a baked custard pudding-like dish that's something like a crustless sweet potato pie. This version is made with whole shreds of sweet potato, which is how it's often served during the holidays throughout the Caribbean and parts of the American South. It's a versatile dessert that can be made with other warming spices like ginger, nutmeg or clove, a little orange zest, or even rum-soaked raisins. This is a simplified version that replaces half of the sweet potatoes with shredded apple, which adds natural sweetness and a bit of creaminess as it cooks down. Choose from baking varieties like Honeycrisp, Fuji or Gala. Serve the pone warm from the oven with a scoop of vanilla ice cream.

2 tablespoons melted unsalted butter, plus 2 teaspoons for greasing
1 medium sweet, crisp baking apple, such as Honeycrisp, Fuji or Gala
1 teaspoon lemon juice
1 medium sweet potato, peeled and shredded (about 1 1/2 cups)
1 cup evaporated milk
1/4 packed cup/55 grams light brown sugar
1/4 cup/30 grams all-purpose flour
1 large egg, lightly beaten
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon

Steps:

  • Heat the oven to 375 degrees. Lightly grease two 15-ounce au gratin pans or one 8-by-8-inch (or other similar size) baking dish with 2 teaspoons butter and set on a baking sheet.
  • Peel and core the apple, then shred the apple using a box grater. Quickly pile the shreds in the center of a clean kitchen towel and squeeze them over the sink to remove excess water. Transfer to a large bowl along with the lemon juice and toss to coat. Add the sweet potatoes, evaporated milk, brown sugar, flour, egg, vanilla, cinnamon, salt and the remaining 2 tablespoons melted butter. Stir until thoroughly combined.
  • Divide the mixture between the au gratin pans and bake for 30 to 35 minutes, or transfer to the 8-by-8-inch baking dish and bake for 55 to 60 minutes, until the pone is slightly puffed, golden brown at the edges and set just enough that it doesn't jiggle when you shake the pan. Let cool in the pan for 5 to 10 minutes, then serve warm with ice cream.

These sweet potatoes became a family tradition when I was a child and now is a one of my family's favorites. The flavor of fresh lemon compliments the sweet potatoes and the touch of brown sugar results in a nice glaze.
