This is a basic egg salad I've made for years. I like it just as it is, but you can customize it by adding in chopped onion, tomatoes, relish or whatever you like.

6 large eggs
1/4 cup mayonnaise
1 tablespoon mustard
salt and pepper

Steps:

  • Place eggs in a pot and add enough water to cover eggs by at least one inch.
  • Quickly bring the water to a boil, then remove from heat and let the eggs sit in the hot water for 15 minutes.
  • Remove eggs from hot water and immediately place them in a bowl filled with ice until they're cooled completely.
  • Peel the cooled eggs and dice or mash them.
  • Mix together mayonnaise and mustard; combine with the eggs.
  • Add salt and pepper to taste.
  • Refrigerate for at least an hour to allow the flavors to combine.

3 hard-boiled eggs, peeled
1 stalk celery, chopped
1 green onion, chopped
3 tablespoons reduced-fat mayonnaise
1 tablespoon Dijon mustard, or more to taste
1 tablespoon yellow mustard
½ teaspoon prepared horseradish, or to taste
½ teaspoon paprika

Steps:

  • Mash hard-boiled eggs in a salad bowl with a fork. Stir celery and green onion into mashed egg. Mix reduced-fat mayonnaise, Dijon mustard, yellow mustard, and horseradish into egg mixture until thoroughly combined. Adjust amounts of Dijon mustard and horseradish to taste. Stir in paprika. I came up with this egg salad recipe when wanting a light something to add to my dinner. It is great for veggie dipping and I imagine would make a nice sandwhich spread, too. I hope you enjoy!

2 small eggs
1 1/2 tablespoons light cream cheese
1/4-1/2 teaspoon dried dill weed (use as much as you like, this comes down to personal preference)
1 sun-dried tomato, chopped (not the oil-packed kind)
salt and black pepper

Steps:

  • Place eggs in cold water in a pot. The eggs should just be covered by the water. Bring to a boil and let simmer for 10 minutes. Drain and rinse eggs with cold water for a minute or so (this makes peeling easier).
  • Peel the eggs and place in a bowl with the cream cheese. Mash using a fork until your egg salad has reached the consistency you prefer. I like to leave some larger chunks.
  • Add the dill, salt and pepper and sun-dried tomato pieces.
  • Mix and enjoy.
