Easy Apricot Pork Chops image

Canned apricots nicely complement the tender pork in this wonderful entree sent by Ron Gardner from Grand Haven, Michigan.

Number Of Ingredients 6

1 can (15-1/4 ounces) apricot halves, undrained
4 bone-in pork loin chops (3/4 inch thick)
1 tablespoon butter
1 tablespoon cornstarch
2 tablespoons cold water
Salt and pepper to taste

Steps:

  • Place apricots in a food processor or blender; cover and process until coarsely chopped. In a large skillet, brown pork chops in butter over medium-high heat. Add apricots. Bring to a boil. Reduce heat; cover and simmer for 7-10 minutes or until meat juices run clear., Remove the chops and keep warm. Combine cornstarch and cold water until smooth; stir into apricot mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Season with salt and pepper. Serve over pork chops.

Easy apricot pork chops image

All you need is one skillet to cook these, it's so easy and delicious. You can also use orange preserves instead of the apricot.

4 - boneless loin pork chops
1/4 cup(s) chopped onion
1/4 cup(s) apricot preserves
1 tablespoon(s) low-sodium soy sauce
2 teaspoon(s) minced garlic
1/4 cup(s) sliced green onions

Steps:

  • Spray a lg skillet w/ olive oil cooking spray. Place over medium-high heat. Add chops and cook for 6 mins on each side.
  • Remove chops from skillet. Add onion to pan, saute for 4 mins. Stir in preserves, soy sauce and garlic. Cook, stirring, until thickened. Add pork to pan and turn to coat. Sprinkle w/ green onions before serving.
