- Heat 1 1/2 inches vegetable oil in a deep skillet over medium high heat. A cube of bread should brown in a 40 count when oil is ready.
- Set out 3 disposable pie tins. Mix flour with paprika, poultry seasoning, cayenne, and allspice. Divide seasoned flour between 2 tins. Pour buttermilk into a tin. Line up tins as such: flour, buttermilk, and then flour.
- Season chicken with salt and pepper. Coat chicken pieces in flour, then buttermilk, then a second coating of flour.
- Cook chicken 6 minutes on each side, until deep golden brown and firm. Drain chicken on paper bags and cool before packing up for picnic basket.

- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Gently press the luncheon meat slices into the flour to coat and shake off the excess flour. Dip into the beaten egg, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded luncheon meat slices onto a plate while breading the rest; do not stack.
- Deep fry the luncheon meat a few slices at a time until hot and golden brown, 3 to 5 minutes. Drain on a paper towel lined plate before serving.

- Place the eggs in a bowl and whisk with salt and pepper. Place the bread crumbs on a large plate. Dip the chicken in the egg and then dredge in the bread crumbs. Re-dip in the egg a second time and then dredge in the bread crumbs again.
- In a large, heavy skillet, heat the olive oil over moderate heat. Brown the double-dipped chicken in the hot oil for 3 to 4 minutes on each side, or until golden brown. Remove the chicken and drain on paper towels. The chicken can be made up to this point a day ahead of time. Wrap the chicken in aluminum foil and refrigerate.
- Simmer the tomato sauce until hot. Preheat the oven to 350 degrees F.
- Pour about 2 cups of the sauce in the bottom of a large gratin dish or large ovenproof, glass baking dish. Place the browned chicken breasts on top of the sauce and cover with 1/2 or all of the remaining sauce. Sprinkle with the cheese and bake on the middle shelf for 15 minutes, or until the sauce and cheese are bubbling.
- Serve hot, and sprinkle with parsley, if using.
- Linguine with Olive Oil:
- In a large saucepan of boiling salted water cook the linguine for 10 minutes, or until it is al dente and drain. In a large pan, heat olive oil, add garlic slices and saute. Add red pepper flakes, to taste. Add pasta and toss. Season with salt and pepper and serve sprinkled with parsley.
- Sauteed Broccoli Rabe:
- Cook broccoli rabe in a large pot large of boiling water until just tender, about 4 minutes, and drain in a colander.
- Melt butter in same pot over moderate heat, then cook garlic, stirring, until fragrant, about 30 seconds. Add broccoli rabe, tossing gently in butter to coat, and season with salt and pepper.

- Preheat oven to 350 degrees. Rinse pork chops, pat dry and tenderize with meat tenderizing mallet. Beat the eggs in a shallow dish and add the Parmesan cheese, black pepper and garlic powder. Place the flour in a second shallow dish and the bread crumbs in a third shallow dish. Coat the pork chops with flour, dip them in the egg, and dredge them in the bread crumbs. They can be dipped once or twice. Set them aside in a dish. Coat a pan on the stove with olive oil and fry on medium low until golden brown on both sides. - 1. Preheat oven to 450 degrees F. Spray a cookie sheet with cooking spray and set aside till needed.
- 2. In a medium size bowl add the two eggs and water, then beat together till mixed. Set aside till needed. In a large zip lock bag add the panko bread crumbs, the paprika, and garlic powder. Shake till well mixed together.
- 3. Next take a few slices of the spam and coat both sides with the egg mixture. Then drop into reclosable bag and coat evenly on all sides, then place onto prepared cookie sheet. Repeat till all of the spam has been coated evenly. Then lightly spray with non stick cooking spray, and place in preheated oven and bake for 8 or 9 minutes, till nice and crispy and golden brown.
- 4. Remove from oven & serve with mustard, catsup or your favorite condiment. Please note I always keep several batches of the panko mixture in the freezer for a quick fix meal idea, in a hurry.

- Mix eggs,milk and hot sauce in a bowl.Hot sauce does not maintain it's heat so use how much you want.
- Put flour salt and pepper in another bowl.
- Heat oil in a pan to about 300 deg.I use peanut oil.
- Dip Spam in egg then flour and fry til golden brown.I serve with Chicken gravy and mashed Potatoes.
