Tomato-Watermelon Salad image

Number Of Ingredients 8

3 cups cut-up watermelons, seeds removed
1 medium yellow, orange or red ripe tomato, cored and cut into 1-inch pieces
1 tablespoon chopped fresh mint or 1 teaspoon dried mint leaves
1 tablespoon olive oil
1 tablespoon red wine vinegar
3 cups torn fresh spinach or torn Romaine lettuce
1 1/4 cups Smart Start® Antioxidants Ready-To-Eat cold cereal
1/3 cup crumbled feta cheese

Steps:

  • 1. In large bowl toss together watermelon, tomato and mint. Drizzle with olive oil and vinegar. Gently toss to combine.2. On 6 small serving plates arrange spinach. Top with watermelon mixture. Sprinkle with KELLOGG'S SMART START ANTIOXIDANT cereal and cheese.
