Seafood Mac and Cheese image

Mac and cheese is already terrific on its own, but it's truly decadent with the addition of seafood! Lobster or shrimp work best.

1 lb elbow macaroni
1/2 cup unsalted butter, divided
1/2 cup flour
3 cups whole milk, room temperature
1 cup heavy cream, room temperature
4 cups grated Gruyère cheese
2 cups grated sharp cheddar cheese
1 tsp coarse salt
1 1/2 lb cooked lobster, crab, and/or shrimp, etc.
1 cup panko breadcrumbs

Steps:

  • Preheat the oven to 375F.
  • Coat a 2-quart baking dish with cooking spray (or lightly coat it with butter).
  • Cook the pasta just to al dente, according to the package directions.
  • Meanwhile, melt 6 tbsp of the butter in a large pot over medium heat. Add the flour, then whisk constantly until it's fully combined, about 30 seconds. Slowly add the milk and cream, whisking constantly, until it's combined and smooth, about one minute more. Reduce the heat to low.
  • Stir in the shredded cheeses, one handful at a time, stirring to combine completely between additions. Remove from the heat and gently stir in the cooked pasta and lobster meat. Pour the mixture into the prepared baking dish.
  • Melt the remaining 2 tbsp butter and mix it with the panko bread crumbs. Sprinkle them on top of the mac and cheese.
  • Bake for about 30 minutes, or until the seafood mac and cheese is hot throughout and the breadcrumbs are golden brown. Serve immediately.

Vegetable oil
1 pound cavatappi or elbow macaroni
1 quart milk
8 tablespoons (1 stick) unsalted butter, divided
1/2 cup all-purpose flour
12 ounces Gruyere cheese, grated (4 cups)
8 ounces extra-sharp Cheddar, grated (2 cups)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon nutmeg
1 1/2 pounds cooked lobster meat
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Steps:

  • Preheat the oven to 375 degrees F.
  • Drizzle oil into a large pot of boiling salted water. Add the pasta and cook according to the directions on the package, 6 to 8 minutes. Drain well.
  • Meanwhile, heat the milk in a small saucepan, but don't boil it. In a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, the pepper, and nutmeg. Add the cooked macaroni and lobster and stir well. Place the mixture in 6 to 8 individual gratin dishes.
  • Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

6 tablespoons butter
1/2 medium onion, finely chopped
1 garlic clove, minced

1 pound coarsely chopped cooked lobster, shrimp, crawfish, or crabmeat, or a combination
4 cups (1 pound) mixed grated cheeses, such as Parmesan, cheddar, Swiss, and fontina

Steps:

  • Preheat oven to 400 degrees. In a large pot of boiling salted water, cook macaroni 2 minutes less than al dente. Drain; rinse with cold water. Set aside.
  • While pasta is cooking, melt butter over medium in a large saucepan. Transfer 2 tablespoons melted butter to a medium bowl, and reserve. Add onion and garlic to pan; cook until softened, 3 to 5 minutes. Add flour; cook, stirring, 1 minute. Add milk; whisk until smooth. Bring to a boil; reduce to a simmer, and cook until sauce has thickened, 2 to 3 minutes. Season with 3/4 teaspoon salt, 1/2 teaspoon pepper, and nutmeg.
  • Remove pan from heat. Fold in seafood, macaroni, and cheese; transfer to a shallow 4-quart baking dish. To bowl with reserved melted butter, add breadcrumbs and Creole seasoning; toss, and scatter over macaroni mixture. Place baking dish on a rimmed baking sheet. Bake until topping is golden and sauce is bubbling, 15 to 20 minutes. Let cool 5 minutes before serving.

It is an adapted recipe from strong Southern women (Patti LaBelle, Mama Jean, and my son's girlfriend Ashley)...all wonderful foodies! I make this a day ahead.

1 (16 ounce) package whole wheat elbow macaroni
½ cup dried minced onion
1 pound cooked and cubed lobster meat
1 pound cooked shrimp, tails removed
1 (12 ounce) can evaporated milk
1 cup heavy cream
1 tablespoon all-purpose flour, sifted
3 eggs
1 stick butter
2 tablespoons all-purpose flour
1 pound shredded sharp Cheddar cheese
1 pound shredded Swiss cheese
1 pound shredded Monterey Jack cheese
1 stick butter
1 tablespoon dried onion seasoning (such as Pampered Chef® Three Onion Rub)
1 teaspoon herbes de Provence
2 cups crushed buttery round crackers (such as Ritz®)
1 stick butter, sliced into pats

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni and 1/2 cup dried onion in the boiling water, stirring occasionally, until macaroni is tender yet firm to the bite, about 8 minutes. Drain.
  • Place lobster and shrimp in a colander. Pour the cooked pasta and onions over shellfish; let drain.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Warm evaporated milk and cream slowly in a saucepan over medium-low heat. Whisk in flour. Whisk eggs together in a small bowl.
  • Cook sauce until small bubbles form. Add sauce very slowly, 1/4 cup at a time, to the bowl with the eggs, being careful not to cook and scramble the eggs. Slowly mix the egg-cream mixture back into the pan. Continue cooking on medium-low heat, stirring occasionally, until thick and smooth, 5 to 10 minutes.
  • Melt 1 stick of butter in the pot used to cook the pasta over medium heat. Add flour; cook until roux thickens and turns caramel in color, about 5 minutes. Stir in Cheddar cheese, Swiss cheese, and Monterey Jack cheese. Cook, stirring constantly, until mostly melted, about 4 minutes. Pour in the cream sauce and stir until smooth.
  • Stir pasta, lobster, and shrimp into the cheese and cream sauce to coat completely. Pour mac and cheese into a 9x11-inch baking dish.
  • Melt another stick of butter in the saucepan used to make the sauce. Add onion seasoning and herbes de Provence; stir. Add crackers. Cook and stir over medium heat until coating mixture is lightly toasted, about 5 minutes.
  • Cover mac and cheese with thin pats of butter. Top with the cracker coating.
  • Bake in the preheated oven until top is crispy and cheeses are melted, about 1 hour.

This recipe is proof that a good mix of cheeses makes a decadent dish. Add bacon and shrimp to the mix and you have a dish everyone wants seconds (or thirds) of. It's great just the way it is, but if you want to add a bit more bacon and shrimp. I am sure no one will argue with you!

2-1/2 tsp salt, divided
1 lb dry shell shaped pasta
5 Tbsp unsalted butter, divided
1 c medium cheddar cheese, shredded
1 c extra sharp white cheddar cheese, shredded
1 c monterey jack cheese, shredded
2 tsp fresh garlic, peeled and minced
4 Tbsp all purpose flour
2 c whole milk
2 c heavy cream
1/2 tsp black pepper
1 c gruyere cheese, grated
1/2 c bacon, cooked and chopped
1 jalepeno pepper, chopped
8 oz jumbo shrimp, shelled, de-veined and chopped
1/2 c fresh bread crumbs
1/2 c parmesan cheese, grated

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Fill a large pot with water and bring to a boil over high heat; add 1 teaspoon salt and the dry pasta. Return to a boil and cook 6 to 8 minutes, or until al dente. Drain in a colander, return pasta to the pot and stir in 1 tablespoon unsalted butter. Toss in the medium Cheddar, Monterey Jack, and Sharp Cheddar cheeses, and set aside.
  • 3. To make a sauce, add 4 tablespoons butter and garlic to a 2-quart saucepan and heat over medium heat, 1 to 2 minutes, or until butter is melted and garlic is softened. Add flour and stir continuously, using a whisk, to combine. Continue to cook over a medium heat and gradually whisk in the milk and cream. Stir continuously to prevent scorching; cook 6 to 8 minutes, or until starting to thicken. Remove from heat, and stir in 1-1/2 teaspoon salt, black pepper, and Gruyere cheese.
  • 4. Pour sauce over the pasta, add the bacon, jalapeno and shrimp and stir until well combined.Pour the pasta mixture into the dish.
  • 5. Toss breadcrumbs together with Parmesan cheese and sprinkle over pasta. Bake in pre-heated oven until top is golden, about 30 minutes.

You can actually prep these ahead and bake before that romantic, possibly Valentine's, dinner. You probably want to take them out and let them warm up for 30 minutes before baking. By the way, only bake these until the tops are browned and the inside is just hot.

2 teaspoons vegetable oil
2 lobster tails, split in half lengthwise and deveined
2 tablespoons butter
1 ½ tablespoons all-purpose flour
1 ½ cups cold milk
¼ teaspoon paprika
1 pinch ground nutmeg
1 pinch cayenne pepper, or to taste
½ teaspoon salt, or to taste
3 drops Worcestershire sauce, or to taste
4 ounces grated sharp white Cheddar cheese
1 ounce grated Gruyere cheese
1 cup elbow macaroni, or more to taste
½ teaspoon fresh thyme leaves
3 tablespoons panko bread crumbs
1 tablespoon melted butter
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter 2 gratin dishes.
  • Heat oil in a skillet over high heat. Cook lobster tails in skillet until slightly golden and about halfway cooked-through, about 2 minutes per side. Transfer tails to a plate to rest. When cool enough to handle, remove lobster meat from shells and chop meat. Reserve shells.
  • Melt 2 tablespoons butter in the same skillet over medium heat. Whisk in flour; cook and stir until a paste forms and flour taste cooks off, 1 to 2 minutes. Add cold milk to flour mixture; whisk until completely incorporated. Bring to a simmer; reduce heat to low, and stir in paprika, nutmeg, and cayenne pepper. Cook, stirring occasionally, until thick, 3 to 4 minutes. Season sauce with salt.
  • Stir Cheddar cheese and Gruyere cheese into milk mixture until cheese is melted. Remove from heat and stir Worcestershire sauce into cheese sauce.
  • Bring a large pot of water with reserved lobster tails and a pinch of salt to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Remove and discard lobster shells, drain pasta.
  • Stir macaroni into cheese sauce with thyme leaves. Divide macaroni mixture between the 2 prepared gratin dishes. Top macaroni with chopped lobster meat, poking meat down into macaroni mixture with a fork.
  • Stir bread crumbs and melted butter together in a bowl. Add Parmesan cheese and stir. Top each gratin dish with bread crumb mixture.
  • Bake in the preheated oven until golden and bubbly, 15 to 20 minutes.

1/4 cup unsalted butter, plus more for greasing the dish
Kosher salt and freshly ground black pepper
1 pound elbow macaroni
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup heavy cream, plus more if needed
4 ounces cream cheese
One 16-ounce block sharp Cheddar, shredded
1 1/2 cups extra-sharp Cheddar, cut into 1/2-inch cubes
1 teaspoon granulated garlic
2 large eggs
1/2 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish with butter.
  • Bring a large pot of salted water to a boil, add the macaroni and cook, stirring occasionally, until al dente, about 7 minutes. Strain in a colander, run cold water over the pasta and set aside.
  • Using the same pot the macaroni was cooked in, melt the 1/4 cup butter over medium heat, add the flour and whisk until smooth. While whisking constantly, slowly add the milk and then the cream. Bring to a simmer, add the cream cheese and the shredded Cheddar except for 1/2 cup and stir until melted. Stir in the granulated garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove the cheese sauce from the heat and stir in the macaroni. Season with salt and pepper.
  • Whisk together the eggs and sour cream in a small bowl and then fold into the macaroni and cheese. Spread the mixture into the prepared baking dish, fold in the cubed Cheddar and top with the reserved 1/2 cup shredded Cheddar. Bake until the top just begins to brown, about 20 minutes. Loosely cover with foil and bake 10 to 15 minutes more.
