Chipotle Honey Chicken Tacos image

2 pounds Chicken thighs (boneless, skinless)
4 tablespoons Honey
1.5 teaspoons Onion powder
1.5 teaspoons Garlic powder
.75 teaspoons Ground cumin
1.5 teaspoons Kosher salt
3 pieces Chipotles from a can of Chipotles in Adobo (finely chopped)
2.75 tablespoon Adobo sauce from a can of Chipotles in Adobo
20 ounces Canned black beans (rinsed and drained)
.5 bottle Beer
1 piece Lime juice, squeezed
1 box Tortilla
1 piece Avacado, pickled onion, lettuce, cheese, etc

Steps:

  • Preheat oven: 3 hours at 300 F degrees, 4 hours at 250 F degrees, or 5 hours at 200 F degrees
  • Combine the chicken, honey, onion and garlic powders, cumin, salt, chipotle chiles, adobo sauce, and beer in a 5 - 8 quart pot. Stir well
  • Cook in oven for 3 - 5 hours on low
  • Using two forks, coarsely shred the chicken in the sauce
  • Stir in the black beans and lime juice. Cover and let the beans warm through, about 5 minutes
  • Taste and add more salt, pepper, or lime juice as necessary
  • Serve in tortillas with pickled onion and avocado.
