Steps:

  • Mix tuna, mayonnaise, peanuts, raisins, and celery in a bowl. Season with curry powder, salt, black pepper, sugar, garlic powder, and cayenne pepper. Stir in onion and green onions. Serve on sliced bread.

1 cup mayonnaise 1 lemon, juiced
3 teaspoons prepared horseradish
2 teaspoons hot sauce
2 tablespoons dill relish
Pinch kosher salt
Pinch freshly ground black pepper
Oil, for frying
2 eggs
2 to 3 dashes hot sauce
2 teaspoons seafood seasoning (recommended: Old Bay)
Kosher salt
1 cup cornmeal (medium ground for more texture)
1/2 cup all-purpose flour
1/2 cup cornstarch Freshly ground black pepper
4 catfish fillets, cut in 1/2, about 2 pounds
4 sourdough sandwich rolls
4 tablespoons butter, softened
4 romaine or red lettuce leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the Spicy Tartar Sauce: Mix all the sauce ingredients in a small bowl until well combined. Cover and refrigerate until ready to serve.
  • In a deep 12-inch pan set over medium-high heat, add enough oil so it comes 1/3 of the way up the sides. Heat the oil to 375 degrees F.
  • In a wide-mouth bowl, whisk the eggs with the hot sauce, seafood seasoning and a pinch of salt. In a small paper bag, mix together the cornmeal, flour, cornstarch, and salt and pepper, to taste. Dredge the catfish in egg mixture, then in the flour mixture. Gently shake off excess flour. Set aside and repeat with remaining flounder. Fry the fish in batches until golden, about 2 to 3 minutes each side, being careful to keep the temperature at 375 degrees F. Remove catfish to a paper towel to drain and immediately season with salt.
  • Slice the sandwich rolls in half, slather the cut sides with butter and season with salt. Arrange, cut side up, on a baking sheet and toast in the oven until lightly golden, about 8 minutes. An alternate is to put them, buttered side down, on a griddle or under a broiler, and toast until golden. Set aside.
  • To assemble sandwiches, slather the rolls with the Spicy Tartar Sauce, top with lettuce and catfish, and serve.

CRUNCHY BUFFALO CHICKEN SANDWICH

This recipe idea was born when I was attacked by a buffalo wing craving while trying to diet. As with all my recipes, feel free to sub full-fat ingredients if you want. I do suggest using the panko as it browns in the same amount of time that it takes for the chicken cultlets to cook through but stay moist.

2 chicken cutlets (or pound a BL, SL breast into submission- you want it thin)
2 egg whites, beaten (or 1/4 cup egg substitute)
1 tablespoon hot pepper sauce (NOT Tabasco! I used Texas Pete's brand but Franks' would be good, too)
1/2 cup panko breadcrumbs (I used & recommend Spiced Panko Bread Crumbs but you could use regular breadcrumbs)
1 tablespoon olive oil
4 tablespoons reduced-fat feta cheese (I prefer Blue cheese but it doesn't exist in my world in a lowfat variety)
2 tablespoons nonfat sour cream
1 tablespoon hot pepper sauce, to taste
2 whole wheat hamburger buns, toasted (I used Nature's Own Sugar-Free buns)
4 leaves lettuce

Steps:

  • Mix the hot sauce with the egg whites then set up your assembly line: chicken, egg dip, panko crumbs, baking rack.
  • Dip the chicken in the egg then roll in the panko crumbs. Press those crumbs on tightly. Place on baking rack to set while you get the frying pan ready.
  • Heat your large frying pan over medium-high flame and add the olive oil.
  • When the oil is hot, add the cutlets. Cook for about 3 minutes on the first side; flip and cook 2 minutes more, depending on the thickness of your chicken. Don't let the panko get over browned!
  • While the chicken cooks, toast the buns under the broiler.
  • For each sandwich, place 1 lettuce leaf on the browned bun bottom ( that's an odd phrase, huh?)and spoon over 1/4 of the "Buffalo" sauce. Top with a cutlet, another 1/4 of the sauce and a lettuce leaf.
  • If you have extra sauce, dipping your sandwich as you eat is encouraged.

favorite potato chips

Steps:

  • Place bread slices in front of you. Spread mayo on each slice.
  • Add 2 slices of deli ham on 2 of the bread slices.
  • Now grab a handful of your favorite types of chips (i'd always do it with hot cheetos! yum!). Place the chips on top of the ham covering it.
  • Now top off with a slice of tomato and lettuce. Place the other 2 bread slices on top!
  • Bite in and enjoy that yummy CRUNCH! :D.

  • Melt butterscotch chips and peanut butter over low heat, stirring constantly, until smooth.
  • Add cereal and stir until well coated.
  • Press HALF of the mixture into buttered 8-inch square pan.

Steps:

  • If you want you can toast the bread.
  • Combine the tuna with the mayonnaise. Stir in the yellow mustard if you like it.
  • Divide and spread the tuna mixture on the bread.
  • Top with the crushed potato chips.
  • Place a lettuce leaf on once slice of bread. Place two cucumber slices on top of the lettuce.

1/4 cup Kosher Salt
1/4 cup Sugar
1 1/2 pounds Chicken Cutlets
3 cup Flour
1 teaspoon Salt
1 teaspoon Pepper
Oil
1/4 cup Vegetable Oil
1 tablespoon Cayenne
1/2 teaspoon Paprika
1/4 teaspoon Garlic Powder
1/2 teaspoon Sugar
Potato Buns (to serve)
Slaw
2 cups Shredded Red Cabbage
1/2 cup Shredded Carrot (about 1-2 carrots)
3 Scallions (thinly sliced)
1 Bread & Butter Pickle (chopped)
1 cup Mayonnaise
2 Lemons (juiced)
2 Garlic Cloves (grated)
Salt
Freshly Cracked Pepper
Chips
3 Idaho Potatoes (thinly sliced)
Vegetable Oil (for frying)
Paprika (to taste)

Spread
1/4 cup Mayonnaise
1 tablespoon Honey
1 teaspoon Paprika

Steps:

  • quart Water 1/4 cup Hot Sauce 1/4 cup Kosher Salt 1/4 cup Sugar 1 1/2 pounds Chicken Cutlets
  • Whisk Water, Hot Sauce, Salt and Sugar in a bowl until Salt and Sugar dissolve. Add Chicken and refrigerate at least 1 hour.
  • Oil
  • In a large Dutch oven heat Oil to 350°F.
  • Remove Chicken from Hot Sauce marinade and pat dry. Arrange on a wire rack in a single layer.
  • cup Flour 1 teaspoon Salt 1 teaspoon Peppermarinated Chicken
  • In a medium bowl, combine the Flour, Salt, and Pepper. Transfer Flour to a mesh strainer and dust Chicken lightly on both sides. Allow to air dry in the refrigerator for 1 hour, keep the Flour.
  • seasoned Flourmarinated Chicken
  • Remove Chicken from the refrigerator, and dust heavily with more Flour and then press to help cake on the Flour for extra crispiness.
  • Fry Chicken in preheated Oil until it reaches an internal temperature of 160°F, about 3-4 minutes. Remove to a paper towel lined plate.
  • tablespoons Oil1 tablespoon Cayenne 1/2 teaspoon PaprikaSalt 1/4 teaspoon Garlic Powder 1/2 teaspoon Sugar
  • Heat 3 tablespoons Oil in small saucepan over medium heat until shimmering. Add Cayenne, Paprika, Salt, Garlic Powder and Sugar. Cook until fragrant, about 30 seconds. Transfer to a small bowl, and drizzle over the Chicken to serve.
  • Potato Buns (to serve)
  • Place a schmear of spread on the bottom Bun and top with Chicken. Finish with Coleslaw and Potato Chips.

  • For Slaw: Toss together the ingredients in a large bowl until evenly dressed. Adjust seasoning to taste.
  • Idaho Potatoes (thinly sliced)
  • For Chips: Soak sliced Potatoes in ice cold water for 30 minutes to remove excess starch.
  • Drain and pat dry with a clean kitchen towel or paper towels. Allow to dry before frying.
  • Vegetable Oil (for frying)
  • Heat Oil to 375°F.
  • Paprika (to taste) Garlic Powder (to taste)
  • Working in batches, fry Chips for 2-3 minutes until crispy but not browned. Remove to a paper towel-lined plate and season immediately with Paprika and Garlic Powder.
