CROCK POT GOULASH

Crock Pot Goulash image

Seems like everyone in the Midwest has a recipe for goulash that has nothing to do with the Hungarian kind. This was my mom's recipe, which I adapted for the crock pot after living in a apartment with an unruly oven that would set off the smoke alarm no matter how often I cleaned it. This is a very simple recipe, but it's my brother's favorite meal in the world (thus I make it for him every Christmas Eve). Good with garlic-cheese bread.

HUNGARIAN GOULASH WITH TEMPEH (CROCK POT / SLOW COOKER)

Hungarian Goulash With Tempeh (Crock Pot / Slow Cooker) image

In this recipe from her cookbook "Fresh From the Vegetarian Slow Cooker," Robin Robertson replaces the meat in traditional Hungarian Goulash with tempeh. Robertson suggests serving this dish with wide noodles.

Provided by Sandi From CA

Categories     Tempeh

Time 6h

Yield 2-4 serving(s)

Number Of Ingredients 12

2 tablespoons olive oil
1 lb tempeh, cut into 1/2-inch thick slices
1 small yellow onion, halved and thinly sliced into half moons
2 cups sauerkraut, drained and rinsed
1 (14 1/2 ounce) can diced tomatoes, drained
1 tablespoon sweet Hungarian paprika
1/4 cup dry white wine
1 teaspoon caraway seed
2 tablespoons tomato paste
1 1/2 cups vegetable stock
salt & freshly ground black pepper, to taste
1/2 cup sour cream or 1/2 cup tofu sour cream

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the tempeh and brown all over, about 10 minutes. Set aside.
  • Without cleaning the skillet, heat the remaining 1 tablespoon oil over medium heat.
  • Add the onion, cover, and cook until softened, about 5 minutes.
  • Transfer the onions to a 4-quart slow cooker. Add the tempeh, sauerkraut, tomatoes, paprika, wine, caraway seeds, tomato paste, and stock and season with salt and pepper. Cover and cook on Low for 6 hours.
  • Just before serving, pour 1/2 cup of the simmering liquid into a small bowl and whisk in the sour cream. Stir this mixture back into the goulash, taste to adjust the seasonings, and serve at once.

CROCK POT BEEF GOULASH SOUP

Crock Pot Beef Goulash Soup image

This came out of a slow cooker book by Rick Rodgers. I adopted and adapted and *love* the results! Hope you do too :) BTW, the paprika amount may sound like a lot, but it is correct! The final consistency should be somewhere between a soup and a stew. Updated to add: I was recently in Budapest, Hungary (Oct 2010) and had gulyásleves (goulash soup) which tasted very much like this recipe and it was thin and brothy. The only difference was noodle dumplings (like German spätzle) instead of potatoes, and the addition of carrots.

Time 7h30m

Yield 5-8 serving(s)

Number Of Ingredients 15

1 tablespoon vegetable oil
1 lb boneless bottom round steak, cut in 1-inch cubes
1/4 teaspoon salt (to taste)
1/4 teaspoon black pepper
1 large onion, chopped
1 red bell pepper, chopped
1/4 cup all-purpose flour
2 garlic cloves, minced
3 tablespoons sweet Hungarian paprika
1 teaspoon caraway seed
4 -5 small potatoes, cut in 1/2-inch rounds
2 1/2 cups beef broth (extra strength)
1 cup water
1 cup tomato puree
sour cream (for garnish)

Steps:

  • Heat the oil in a large skillet over medium-high. Working in batches, brown the beef on all sides, making sure not to crowd the pan. Transfer to a plate and season with salt and pepper. Set aside.
  • Add more oil to the skillet (if needed) and heat. Add the onion and bell pepper, reduce the heat to medium, and cook, stirring often, until softened, about 5 minutes.
  • Add the flour, garlic, paprika, and caraway and stir for 1 minute. Remove from heat.
  • Place the potato rounds in the bottom of a 3 1/2-quart slow cooker. Add the beef and vegetables. Pour in the broth, water and tomato puree. Cover and cook on low until the beef is tender, 6-7 hours (takes my cooker closer to 7).
  • Serve in bowls with sour cream.

Time 7h10m

Yield 8 serving(s)

Number Of Ingredients 7

1 (15 ounce) can fat-free chili
1 (16 ounce) can fat-free refried beans
1 (12 ounce) can whole kernel corn (drained)
1 1/2 cups salsa
1 cup fat free cheese (your choice, shredded)

CROCK-POT HUNGARIAN BEEF GOULASH

Crock-Pot Hungarian Beef Goulash image

I had been searching for a good goulash recipe for quite some time, and finally made my own from bits of several others. No potatoes in this one (my crock-pot usually doesn't get them tender enough). It will need salt at the end or at the table - I cook with very little salt and add it at the end because many of my friends need low-sodium food. My SO has been telling people 'It was GOOD goulash' for days since I made it. Enjoy!

BAYRISCHER GULASCH: GERMAN GOULASH STEW - CROCK POT OR OVEN

Bayrischer Gulasch: German Goulash Stew - Crock Pot or Oven image

A firm favourite of mine when I lived in Herford in West Germany. This recipe comes from a German friend of mine who lives in Bavaria, and is delicious served with sour cream, dumplings or noodles - oh yes, don't forget the crusty sourdough bread as well! Although this is nice served with the above accompaniments, it is essentially a one pot meal which is sufficient to feed most hungry families. It can be cooked on the top of the stove or in a crock pot; the latter method is my favourite, especially when I am very busy or I need to go out!

1 (1 ounce) packet au jus mix (1 dry packet)
1 tablespoon cornstarch
3 cups water
1 teaspoon chopped garlic
1 1/2 teaspoons paprika (I always use half Hungarian and half reg)
4 ounces tomato sauce (1/2 small 8 oz can)
14 1/2 ounces beef broth (1 can)
3/4 cup corn (1/2 can drained)
2 1/2 teaspoons onion powder

1/2 cup sour cream
salt or pepper
elbow macaroni (cooked, drained, buttered)

  • When about ready to serve, add 1/4 cup of sour cream and simmer.
  • **I know some people do not prefer sour cream---but this amount will only add to the creaminess and help to balance the taste, otherwise it may be too thin. Add slightly less if there is a concern and you will not know that sour cream is added!**.

CROCK POT AMERICAN GOULASH

Crock Pot American Goulash image

A true comfort meal, this Crock Pot American Goulash is a tasty fix-it and forget-it recipe that the whole family loves!

Provided by @MakeItYours

Number Of Ingredients 11

1 pound ground beef
1 small sweet onion (finely diced)
1 green pepper (seeded and finely diced, optional)
2 teaspoons minced garlic (jarred or fresh)
24 ounces pasta sauce (I like Rao's Roasted Garlic Sauce)
8 ounce can tomato sauce
15 ounce can petite diced tomatoes)
1 cup water
1 ½ teaspoons Italian seasoning
1 tablespoon granulated sugar
1 cup macaroni noodles

Steps:

  • Brown and crumble ground beef along with diced onions and pepper in a large skillet. Cook until meat is fully cooked and onions and peppers are softened. Drain excess grease. Note: Many slow cookers have a sauté option. Please feel free to use this option on your slow cooker for less dirty dishes.
  • Add ground beef mixture into a 4-6 quart slow cooker.
  • Stir in garlic, pasta sauce, tomato sauce, diced tomatoes, water, Italian seasoning and sugar. (DO NOT ADD MACARONI NOODLES YET)
  • Cover the slow cooker and cook on low for 8-10 hours or on high for about 2-4 hours. Everything is already cooked so we're basically just letting everything simmer and for the flavors to come together.
  • During the last hour of cooking, add in the macaroni noodles and stir. Cover again. Cook until noodles are al dente (or softer if you prefer).
  • Then serve! We enjoy eating this with some fresh garlic bread and a salad.
