Number Of Ingredients 24

10-12 large savoy cabbage leaves
kosher salt, as needed
1 lb ground beef
1 lb ground pork
1 1/2 c cooked rice
1/3 c sour cream
2 tsp kosher salt
1 tsp paprika
1/4 tsp allspice, ground
1 onion, finely chopped
3 clove garlic, minced
2 Tbsp butter
freshly ground black pepper, to taste
TOMATO SAUCE
1 15-oz can tomato sauce
1 15-oz can chicken broth
1 small can condensed tomato soup
1/2 onion, finely chopped
1 clove garlic, minced
1 bay leaf
1 Tbsp butter
1/4 c cream
1-2 tsp brown sugar
salt and pepper, to taste

Steps:

  • 1. Preheat oven to 375.
  • 2. For cabbage rolls: Bring a large pot of salted water to a boil, add cabbage leaves, cook until tender about 4 minutes. Drain and rinse with cold water, set aside.
  • 3. In a large bowl combine beef, pork, sour cream, rice and 2 tspn. salt.
  • 4. Heat 2 tbsp. butter in a medium size skillet over medium heat. Add onion, garlic, paprika and allspice. Cook until onions are soft about 7 minutes. Let cool.
  • 5. Add cooled onion mixture to beef mixture and combine well. Season with pepper to taste.
  • 6. Lay cabbage leaves on a work surface and blot dry with a paper towel. Slice off the ridged part of the thick rib at the bottom of each cabbage leaf. Place about 1/2 cup of the mixture in the bottom center of each leaf. Roll the bottom of the leaf over the mixture, fold in the sides, and continue rolling forward until completely closed (like your rolling up a burrito). Repeat with the remaining leaves. Arrange rolls seam side down in a 9-x 13-x 2-inch baking dish.
  • 7. For tomato sauce: Heat 1 tbsp butter in a medium skillet over medium heat. Add onions and garlic, cook until soft about 7 minutes. Add tomato sauce, chicken broth, tomato soup, bay leaf, brown sugar, salt and pepper. Bring to a boil and reduce to a simmer. Add the cream. Pour sauce over the cabbage rolls and cover tightly with foil. Bake for 1 hour.
  • 8. Remove the foil and continue cooking, basting occasionally, until lightly browned and cooked through, about 30 minutes more.

Yield 2 serving(s)

Number Of Ingredients 16

4 -5 leaves napa cabbage
1/4 onion
1/2 celery
5 cm piece carrots
200 g ground pork
1/4 cup fine panko breadcrumbs
2 tablespoons milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 pinch nutmeg
1/2 cup water
70 g white sauce
1 teaspoon chicken stock powder
1 teaspoon melted butter
1 pinch thyme
1 dried bay leaf

Steps:

  • Place the cabbage leaves on a wide microwave-safe dish then cook in the microwave for 3 minutes using 600W. You might need to cook more for another minute or two if you think that the cabbage are not soft enough to be rolled. Afterwards, put the leaves in a bowl of cold water to stop the cooking process and to keep it's nice green color.
  • Mince the onion, celery and carrot.
  • In a bowl combine the pork and the minced onion, celery and carrot. Add 1/4 cup of fine panko breadcrumbs, 2 tablespoons of milk, a quarter teaspoon each of salt and pepper and about a pinch of nutmeg. Mix the ingredients until it is well-combined. You can also use your hands to mix then divide the mixture evenly with the number of portions similar to the number of cabbage leaves you would want to use.
  • Form a portion of the meat mixture into a ball then put it near the root end of a napa cabbage leaf then roll until you reach the other end of the leaf. Repeat the process until you've used all of the meat and the cabbage then place the rolls in the microwave pressure cooker.
  • Combine half a cup of water, white sauce, chicken stock powder, melted butter and a pinch of thyme then mix well. White sauce are available at Japanese grocery stores which is usually in a box containing three 70-grams single packs.
  • Pour the white sauce mixture over the the cabbage rolls in the microwave pressure cooker then add a piece of dried bay leaf.
  • Cover the microwave pressure cooker then cook for 10 minutes using 600W. After 10 minutes, keep the microwave pressure cooker closed for another 10 minutes so that the remaining heat inside will continue to cook the cabbage rolls.
  • Remove the lid of the microwave pressure cooker then put the cabbage rolls into serving bowls. Pour some sauce on top before serving.
