Asian Tuna Noodle Salad image

Number Of Ingredients 18

3 tablespoons Grated Ginger
2 cloves Grated Garlic
2 teaspoons Sugar
1/4 cup Soy Sauce
3 tablespoons Sesame Oil
3 tablespoons Canola Oil
3 tablespoons Rice Vinegar
2 bunches Soba Noodles
3 pieces Scallions
1/2 head Cabbage or Lettuce (thinly sliced)
2 pieces Carrots (large-grated)
1 piece Cucumber (large-halved lengthwise, cored and thinly sliced)
6 pieces Radishes (thinly sliced)
1/2 cup Cilantro (chopped)
1/2 cup Toasted Sesame Seeds
1 1/2 pounds Tuna Steak (1 inch thick)
1 dash Salt
1 dash Pepper or 5 Spices

Steps:

  • Cook noodles until done, 3 minutes
  • Combine dressing by whisking or using an immersion blender to mix ginger, garlic, red pepper flakes, sugar, soy sauce, sesame and canola oils and rice vinegar.
  • Drain noodles and rinse with cold water. Shake to drain well. Place noodles in large bowl, toss with scallions and half the dressing. Place on a large serving platter.
  • Place cabbage/lettuce, carrots, cucumber, radishes, cilantro and sesame seeds in a large bowl. Toss with other half of dressing. Place around edges of tossed noodles.
