Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Line a square baking pan with aluminum foil.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Combine cream cheese, Parmesan cheese, bacon bits, and garlic in a bowl. Stir in cooked sausage and season with salt and pepper. Mix with your hands until all ingredients are well combined.
- Scoop sausage mixture into the pepper halves; press lightly to pack. Don't overstuff or understuff. Place in the prepared pan.
- Bake until stuffing has hardened slightly on the top, 18 to 20 minutes. Remove from the oven and immediately sprinkle with Cheddar cheese.
- Let sit for 5 minutes before removing from the pan.

PEPPERS STUFFED WITH SAUSAGE AND CREAM CHEESE
This easy, cheesy dinner is one of me and my wife's favorites! Depending on the peppers you get, these can have a little zing to them! We liked to prepare spaghetti with our favorite pasta sauce as a side dish for these stuffed peppers with cream cheese.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil.
- Bring a large pot of water to a rolling boil. Drop peppers into the boiling water. Turn heat off and let peppers soak until softened a bit, about 5 minutes. Remove peppers and set aside until cool enough to handle.
- Mix sausage and cream cheese thoroughly in a bowl. Fill peppers with sausage mixture and place on the prepared baking sheet. Roll any extra sausage mixture into meatballs and place next to the stuffed peppers. Spoon pasta sauce over peppers and meatballs and sprinkle with Parmesan cheese.
- Bake in the preheated oven until sausage mixture starts to turn golden brown and an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 35 minutes.

PUFF PASTRY PINWHEELS WITH BELL PEPPERS, CREAM CHEESE, AND SALAMI
These puff pastry pinwheels are my favorite party finger food and people love them. The chopping takes a bit of time as you want to make sure that the bell peppers and salami are very finely chopped. I sometimes use half peppered salami and half regular salami as well to cut down on the pepper. They are easily made in advance and then you only have to bake them when your guests arrive.

Steps:
- Heat butter in a skillet over medium-low heat and cook red bell pepper and yellow bell pepper until soft but not browned, about 5 minutes.
- Mix bell peppers, salami, cream cheese, Parmesan cheese, and egg in a bowl. Season with paprika.
- Dust a flat work surface lightly with flour. Unroll both puff pastry sheets and roll out to 2 large rectangles. Spread bell pepper mixture over the puff pastry, leaving a 1-inch border. Roll puff pastry up tightly like a jelly roll and place in the freezer until filling hardens, about 1 hour.
- Preheat oven to 400 degrees F (200 degrees C). Line 2 or 3 baking sheets with parchment paper.
- Remove puff pastry rolls from freezer and slice into 1/2-inch-thick slices; lay 2 inches apart on the prepared baking sheets.
- Bake in the preheated oven on the center rack until lightly browned and puffed up, 20 to 30 minutes.

CREAM CHEESE AND HAM STUFFED PEPPERS
These creamy and crunchy stuffed peppers are perfect for a packed lunch. Use scallion instead of parsley or deli turkey instead of ham for a variation.

- Slice the tops off of the peppers and remove the seeds.
- Place the cream cheese in a medium bowl and use a silicone spatula to smash and stir it until smooth. Fold in the ham, corn, parsley, 1/2 teaspoon salt and a few grinds of black pepper.
- Stuff each pepper generously with some of the cream cheese filling. Refrigerate in an airtight container for up to 3 days.
ONE-PAN BAKED CREAM CHEESE PASTA WITH CHICKEN SAUSAGE AND PEPPERS
Steps:
- Heat oven to 400ºF.
- Combine sausage, vegetables, garlic, vinegar, oil and crushed red pepper in 13x9-inch baking dish sprayed with cooking spray.
- Place block of cream cheese in center of sausage mixture.
- Bake 25 to 30 min. or until peppers are tender, stirring after 15 min.
- Add pasta and boiling water to ingredients in baking dish. Use back of spatula to gently press pasta into boiling water so most the pasta is covered with water. Cover with foil.
- Bake 18 min. Remove baking dish from oven. Stir ingredients in baking dish; cover. Let stand 5 min.
- Sprinkle with basil before serving.

CREAM CHEESE CORN AND PEPPERS
Steps:
- Melt butter in a pan. Add bell peppers and sautee for a few minutes. Add cream cheese. Drain the corn but reserve 1/2 can of juice. Once the cream cheese has melted, add the corn and reserved juice. Cover and slowly simmer on medium - low heat until heated through.
