1 cup fresh orange juice
1 cup white sugar
1 (12 ounce) bag fresh cranberries
2 cups fresh or frozen raspberries

Steps:

  • Stir the orange juice and sugar together in a pan over medium heat. Add the cranberries and bring to a boil. Cook and stir until the cranberries burst. Stir in the raspberries; reduce heat and simmer 10 to 15 minutes. Refrigerate or serve warm.

a 12-ounce bag of cranberries, picked over
a 10-ounce package frozen raspberries in light syrup, thawed
1/2 cup firmly packed light brown sugar
3/4 cup cranberry juice cocktail

Steps:

  • In a heavy saucepan combine the cranberries, the raspberries with the syrup, the brown sugar, and the cranberry juice cocktail, simmer the mixture, covered, stirring occasionally, for 10 to 15 minutes, or until the cranberries have burst and the sauce is thickened, and let the sauce cool.

2 (12 ounce) bags cranberries, whole (fresh or frozen)
1 cup sugar
1 cup frozen raspberries, thawed
1/2 cup sugar (additional)
2 tablespoons Grand Marnier, see note (orange liqueur)

Steps:

  • Preheat oven to 350.
  • Spread cranberries in a 13x9 GLASS baking pan; sprinkle with one cup sugar and stir to coat all the berries.
  • Bake until mixture is hot and bubbly (berries will pop)--about 40 minutes. STIR TWICE DURING BAKING TIME!
  • Gently stir in the raspberries; sprinkle with remaining sugar and liqueur, stir again.
  • Pour mixture into a serving dish; cover and chill until set.
  • **NOTE**the Grand Marnier can be substituted with orange juice.

  • Boil water and add sugar. Stir until sugar dissolves. Add cranberries and continue to heat on medium to allow cranberries to simmer. Heat until berries pop 10-12 min. Add raspberries orange juice, and orange jest. Stir until combined.

12 ounces fresh or frozen cranberries
6 ounces fresh or frozen raspberries
1/2 cup honey + more to taste (can substitute granulated sugar [will not be refined-sugar free] or pure maple syrup)
3/4 cup red zinfandel wine (not white zinfandel!)
1/2 teaspoon ground cinnamon

Steps:

  • Rinse cranberries and discard any unripe or shriveled berries. Pick over raspberries and do the same. Place in a medium saucepan over medium heat. Add 1/2 cup honey, zinfandel, and cinnamon.
  • Cook uncovered, stirring occasionally, until cranberries pop and the sauce has thickened, about 20 minutes. Taste and add additional honey until the sauce has reached your desired level of sweetness. Remove from heat and let cool. Serve.
  • Keeps for up to one week refrigerated in an airtight container, or for up to two months in the freezer.

2 (12 ounce) packages fresh cranberries
1 teaspoon ground cinnamon
½ teaspoon ground allspice
2 teaspoons lemon zest

Steps:

  • Heat jam in a saucepan over medium heat; add cranberries, cinnamon, and allspice. Reduce heat to medium-low; cook, stirring frequently, until cranberries begin to pop, 10 to 15 minutes. Remove from heat; stir in lemon zest. Refrigerate for at least 1 hour to allow to thicken before serving.

  • In 2-quart saucepan, mix cranberries, brown sugar and water. Heat to boiling over high heat. Reduce heat to medium-high. Cook 8 to 10 minutes, stirring frequently, until mixture is thick and all cranberries have popped. Cool slightly, about 10 minutes.
  • Strain cranberry mixture, pressing berries to extract juice; discard berry skins. Stir jam into warm juice. Cool 30 minutes.

Its my job at Christmas and Thanksgiving to make the cranberry sauce, I decided to change it up this year. It was a hit, the raspberries add just that little something and the mandarin oranges topped it off. Try it on top of plain oatmeal, adds that zip you need to breakfast.

12 oz fresh cranberries
1 c sugar
1 c water
6 oz fresh raspberries
1 can(s) mandarin oranges

Steps:

  • 1. Add 1 cup water and 1 cup sugar to medium kettle. Heat to a slow simmer till sugar dissolves completely.
  • 2. Slowly add washed cranberries into simmering sugar water. Let simmer for 15 minutes, stirring occasionally.
  • 3. Add fresh washed raspberries to cranberries. Continue to simmer for 15 minutes, stirring occasionally.
  • 4. Remove from heat and let cool to room temperature. Add 1 can drained mandarin oranges, stir gently. Store in refrigerator.

1/2 cup old-fashioned oats
1/4 cup sugar
1/2 cup cold butter, cubed
1-1/2 cups unblanched almonds
1/2 cup packed brown sugar
1/2 cup dark corn syrup
2 large eggs, room temperature
4 ounces bittersweet chocolate, melted
2 tablespoons butter, melted
SAUCE:
2 cups fresh raspberries, divided
1 cup fresh or frozen cranberries, thawed
3/4 cup sugar
2 tablespoons port wine or water

Steps:

  • Preheat oven to 350°. Process flour, oats and sugar in a food processor until oats are ground. Add butter; pulse until crumbly. Press onto bottom and 1 in. up sides of an ungreased 10-in. springform pan. Bake until lightly browned, 14-16 minutes. Cool on a wire rack., Process almonds in a food processor until coarsely chopped. Beat brown sugar, corn syrup, eggs, chocolate and melted butter; stir in almonds., Pour into prepared crust.
