ENDIVE AND ROQUEFORT SALAD image

Number Of Ingredients 4

16 to 24 Belgian endive leaves (about 2 endives)
4 oz enoki mushrooms left whole, or other mushrooms thinly sliced
1/2 cup crumbled Roquefort or other blue cheese
1/3 cup vinaigrette

Steps:

  • 1) Arrange the endive leaves on a plate and lay a few mushroom pieces on each. Sprinkle with a little cheese. 2) Use spoon to drizzle with dressing.
