This sweet and tart cranberry relish is much more refreshing than cooked cranberry sauce, and it takes about as long to make as it does to open a can. You'll need a food processor for this one; a blender will reduce everything to juice. Leftovers are great for breakfast with plain yogurt.

1 bag fresh cranberries
1 whole navel orange, skin included, washed and cut into chunks
1/2 cup shelled pecans
1/3 cup mild honey, such as clover

Steps:

  • Place all the ingredients in a food processor and pulse, then blend until you have a uniform, very finely chopped mixture with a crunchy texture. Chill until ready to serve.

This is a very refreshing recipe I have used for years. It comes from the bag of Ocean Spray Cranberries bought in the grocery store. This time of year cranberries are plentiful where I live (in fact I have a huge bag 21 pounds in the refrigerator) so right now I try to give new recipes a try before the fresh ones have to go into the freezer. Give it a try it goes great with your Thanksgiving dinner. Enjoy!

Number Of Ingredients 3

2 cups cranberries (fresh or frozen, 1 12oz bag is also enough)
1 medium orange, quartered (ends removed)
3/4-1 cup sugar (or eqivalent artificial sweetener)

Steps:

  • Slice unpeeled orange into eighths and remove any seeds. Place half of the cranberries and half of the orange in food processor. Pulse until evenly chopped. Tranfer to a bowl and repeat with the other half of orange and cranberries. Stir in sugar to taste and store in refrigerator of freezer.
  • You can also use a food grinder for the food processor step. The grinder is my preferred method, becaue that's how my Mom made it so many many years ago.

I always include this delicious cranberry-orange relish as part of our special Christmas Eve dinner.

1 unpeeled navel orange
2 cups fresh or frozen cranberries
1 unpeeled medium red apple
1 package (3 ounces) raspberry gelatin
1-1/3 cups boiling water
1 can (20 ounces) crushed pineapple, undrained
1/2 cup chopped walnuts

Steps:

  • Slice the orange into eighths; finely chop in a food processor. Add cranberries and process until chopped. Slice apple into eighths; add to orange mixture and process until chopped. In a large bowl, dissolve gelatin in boiling water; stir in pineapple and orange mixture. Chill for at least 4 hours. Just before serving, stir in nuts.

One 12-ounce package fresh cranberries
2 oranges, peeled
1 cup sugar
1/2 cup pecans, finely chopped

Steps:

  • Using a food processor, pulse the cranberries and oranges. Transfer the chopped fruit to a 1-quart bowl and add 1/2 cup of the sugar, stirring to mix. Add more sugar to taste, as the sweetness of the oranges will vary. Add the chopped pecans and serve.

This is an easy and bright addition to the Thanksgiving menu that doesn't require any cooking.

1 cup sugar
1/2 cup freshly squeezed orange juice
6 oranges, segmented, pith and membranes removed
1 pound fresh cranberries
Zest of 1 orange

Steps:

  • Place the sugar, 1 cup water, and the orange juice in a medium saucepan over medium heat. Stir until sugar dissolves, about 5 minutes.
  • Add cranberries; cook just until berries start to pop, about 15 minutes. Remove from heat, and stir in orange zest and segments. Cool, and refrigerate overnight.
