Cheddar Rice Potato Casserole image

This is so yummy. I got this recipe from a soup package and made a few changes and WahLah! I took it to a Christmas Party and it was the dish talk of the night. I had one of the ladies ask me if I would make one for her family's Christmas dinner. Wow what a compliment... Hopefully, this will soon become one of your family's...

1 pkg cheddar potato soup mix (12 ounce)
2 c instant rice
2 c chopped ham, chicken, ground turkey, or sausage
8 oz chopped mushrooms (optional)
2 Tbsp butter
8 c water
2 c shredded cheddar cheese
1/4 c grated parmesan cheese
1/4 c bread crumbs, buttered

Steps:

  • 1. In large sauce pan, mix water and soup mix with whisk until blended well. Bring to boil, reduce heat, and simmer for 10 minutes.
  • 2. Add rice, mushrooms, 11/2 cups cheddar, parmesan, and ham.
  • 3. Pour mixture into 9X13 buttered casserole dish. Top with the remaining 1/2 cup cheddar, Then sprinkle on bread crumbs.
  • 4. Cover with foil and bake at 350 degrees for 30 minutes. Removes foil and cook an additional 10 minutes.
  • 5. Remove from oven and let stand for about 10 minutes before serving.
