1/4 cup mayonnaise
2 tbsp lemon juice
1 tbsp honey ((can sub other liquid sweetener, like agave or maple syrup))
2 cups broccoli slaw
1/4 cup dried cranberries
1/4 cup sunflower seeds ((raw or roasted - unsalted or just lightly salted))

Steps:

  • In a medium-sized bowl, whisk together the mayonnaise, lemon juice, and honey for the broccoli slaw dressing. Set aside.
  • Combine the broccoli slaw, dried cranberries, and sunflower seeds. Add the broccoli slaw dressing and toss to combine.
  • The cranberry crunch broccoli slaw can be served immediately, or can be covered and refrigerated several hours in advance. Any leftovers can be covered and refrigerated up to 48 hours.

The ultimate broccoli salad is made with crunchy almonds, bacon, sunflower seeds, tart cranberries, and a creamy citrus poppyseed dressing!

Number Of Ingredients 15

4 1/2 cups fresh broccoli, cut into small florets (about 2 heads of broccoli)
5 slices bacon, cooked and crumbled
1/4 cup red onion, finely chopped
2/3 cup dried cranberries ((reduced sugar would work too))
1/2 cup sliced almonds
1/3 cup roasted sunflower seeds
1 cup sharp cheddar cheese, cut into very small cubes ((or shredded if you prefer))
2/3 cup mayonnaise
1 Tbsp apple cider vinegar
1/4 cup granulated sugar
zest of 1 small lemon
zest of 1/2 orange
1-2 Tbsp lemon juice (freshly squeezed)
1/2 Tbsp poppy seeds
pinch of black pepper

Steps:

  • Bring a pot of water to boil. Chop broccoli into very small florets and set aside. Fill a large bowl with cold water and a cup of ice cubes.
  • Add a generous pinch of salt to boiling water and add broccoli. Boil for 20 seconds. Drain broccoli and transfer to prepared bowl with ice water. Let broccoli sit in cold water for a few minutes, until cool. Drain and lay broccoli out onto some paper towels to drain. Allow to continue air drying while you prepare other parts of the recipe.
  • Add finely chopped red onion to a small bowl of cold water and let sit 5 minutes, then drain. This takes some of the "bite" out of the raw onion.
  • To a small mixing bowl, add poppyseed dressing ingredients, then whisk together until smooth and combined. Set aside.
  • To a large mixing bowl, add dried broccoli florets, bacon, drained raw onion, cranberries, almonds, sunflower seeds, and cheddar cheese. Toss with citrus poppyseed dressing (start with about half the dressing, and increase to your liking).
  • Cover with plastic wrap and refrigerate for at least 30 minutes. Toss and serve.

1/4 cup sliced raw almonds
1 12-oz package store-bought broccoli slaw
1/2 cup dried cranberries
3 Tbsp extra-virgin olive oil
3 Tbsp rice vinegar
3 Tbsp agave nectar (or honey)
3 Tbsp Greek yogurt
1-1/2 tsp Dijon mustard
1/4 tsp kosher salt
1/4 tsp fresh black pepper

Steps:

  • In a small dry nonstick frying pan, toast the almonds over medium heat, shaking the pan frequently, until just starting to brown. Remove from heat and set aside to cool. Add the broccoli slaw and cranberries to a large mixing bowl. Combine remaining ingredients in a large measuring cup or mixing bowl. Whisk together until the dressing is smooth and emulsified. Pour the dressing over the broccoli slaw. Add the cooled almonds, and stir well to combine. Let sit for at least 30 minutes or up to 4 hours, stirring occasionally to redistribute the dressing that will settle on the bottom of the bowl. (On warm days, refrigerate until ready to serve.) Serve at room temperature or cool.

1 cup sugar
1/2 teaspoon salt
1/2 teaspoon poppy seed
3 tablespoons vegetable oil
1 (16 ounce) package broccoli slaw mix
2 apples, chopped
1 1/2 cups dried cranberries
1/2 cup pecans, finely chopped

Steps:

  • In a small saucepan, combine the vinegar, sugar, salt and poppy seeds and bring mixture to a boil.
  • Boil for 1 minute or until sugar dissolves.
  • Remove this from the heat and cool.
  • Once the liquid mixture is cool, whisk in the oil.
  • In a large bowl, combine the remaining ingredients and toss well.
  • Pour the liquid mixture over the slaw mixture and mix well.
  • Cover and chill for one hour before serving.

1/2 cup mayonnaise
1 to 2 tablespoons honey
1 teaspoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon celery seed
Dash pepper
3 cups shredded cabbage
1/4 cup chopped fresh or frozen cranberries

Steps:

  • In a small bowl, combine the first six ingredients. Place cabbage in a serving bowl. Add mayonnaise mixture and toss to coat evenly. Fold in cranberries. Serve immediately.
