6 pork chops
1 cup flour
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons oil
2 cups milk
Kitchen Bouquet

Steps:

  • Mix flour, salt and pepper in a plate or shallow dish.
  • Dredge pork chops in seasoned flour (reserve unused flour).
  • Heat 4 tablespoons of oil in a large skillet.
  • When hot, add the flour coated pork chops and brown on medium-high.
  • Turn and brown on the other side.
  • Add 1/4 cup water.
  • Reduce heat, cover pan and simmer for 30 minutes or until pork chops are done.
  • Remove cover, increase the heat and recrisp the chops.
  • Remove chops to a paper towel lined plate.
  • Stir up any flour "crispies" to loosen.
  • Add more oil if needed to make about 3 tablespoons.
  • Add 3 to 4 tablespoons of the reserved seasoned flour to the hot oil, stirring constantly with a whisk until lightly browned.
  • Add 2 cups of milk all at once and continue stirring until thickened and bubbly.
  • If the gravy is too thick, add some water.
  • Add a couple of drops of gravy coloring (Kitchen Bouquet) if needed to give the gravy a rich color.
  • Season with salt and pepper.
  • Serve pork chops with cream gravy.

2 -2 1/2 lbs cube steaks, cut into serving size peices
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1/2 cup flour
1/2 cup milk
1/2 cup vegetable oil
1/4 cup flour
2 cups milk (more if desired)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Sprinkle steaks with 1 tsp salt, 1/2 tsp pepper and garlic salt.
  • Dredge steak in 1/2 cup flour and dip into 1/2 cup milk.
  • Return to flour and dredge again.
  • Brown steaks in hot oil in large, heavy skillet.
  • Remove from skillet and drain on paper towels: set aside.
  • Pour off pan drippings, reserving 3 tbs.
  • Add 1/4 cup flour to drippings; cook over medium heat until bubbly, stirring constantly.
  • Add 2 cups milk; cook stirring constantly.
  • Stir in 1/2 tsp salt and 1/4 tsp pepper.
  • Add steak to gravy; cover and reduce heat and simmer for 25 minutes.
  • Remove cover and cook an additional 5 minutes.
  • Serves 8.

This recipe appeared many years ago in Homemakers Magazine and since the first time I made it, it has become a family favourite. My daughter hates mushrooms, so I especially like the fact that I can chop them up finely and sneak them into the mixture and she is none the wiser! The cold leftovers make great sandwiches.

3 slices white bread
1 cup milk
2 tablespoons butter
3/4 cup chopped mushroom
1 small onion, finely chopped
2 cloves garlic, minced
1 lb ground beef
1 lb ground pork
2 eggs, lightly beaten
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon dried marjoram
1/2 teaspoon thyme
salt and pepper
3 slices bacon
chopped fresh parsley (to garnish)
1/4 cup pan dripping
2 tablespoons flour
1 cup beef stock
1 cup sour cream
salt and pepper

Steps:

  • Tear the bread into small pieces and soak in a large mixing bowl with the milk while you prepare the rest of the loaf.
  • Melt the butter in a small skillet and saute the mushrooms, onion and garlic until soft, about 3 minutes.
  • Let cool.
  • Mix the vegetables and meat into the bread mixture with your hands.
  • Add the eggs, ketchup, Worcestershire sauce, marjoram, thyme, salt and pepper; mix by hand in a circular motion.
  • Form into a free-form 9" x 5" loaf.
  • Drape with the bacon and place on a greased rack in a broiler pan.
  • Bake in a preheated 375 degree F oven for about 1 hour and 15 to 30 minutes, or until browned and meat is cooked through.
  • Lift off the rack and keep warm while making the gravy.
  • Pour 1/4 cup of the pan drippings into a small saucepan.
  • Stir flour into the drippings until smooth.
  • Cook, stirring, over medium heat 3 minutes.
  • Gradually stir in the stock and bring to a boil.
  • Reduce the heat and cook until thickened.
  • Stir in the sour cream; heat through but do not boil.
  • Season with salt and pepper.
  • Transfer to a heated sauce boat and sprinkle with parsley.

  • melt bacon grease and butter in a sauce pan over medium heat.
  • add flour and mix creating a roux.
  • whisk in milk slowly to prevent lumps.
  • whisk untill smooth and thick.
  • add bullion cube and salt and pepper.
  • TIPS- If your sauce gets to thick add more milk. If it is to runny, add more flour. You can serve this sauce over potatoes, biscuits, chicken fried steak, etc.

4 -6 tablespoons butter or 4 -6 tablespoons oil, for frying
4 slices country ham, about 1/2 inch thick
2 -3 green tomatoes, cored, sliced 1 1/2 inch thick, and soaked in milk
all-purpose flour, seasoned with
salt & freshly ground black pepper
1 pinch sugar
reserved cooking fat
1/3 cup all-purpose flour
2 cups milk
salt & freshly ground black pepper, to taste

Steps:

  • Melt 4 tablespoons of the butter in a heavy skillet and sauté the ham slices about 3 minutes on each side. Remove the ham to a heated platter and keep warm.
  • Drain the tomatoes and dust them with the seasoned flour. Add more butter to the pan if necessary and fry the tomatoes 3 minutes on each side or until tender, sprinkling each side with a little sugar. Remove and drain on paper towels, then arrange on the platter with the ham.
  • While the tomatoes are cooking, make the gravy:Pour off all but 3 tablespoons of the cooking fat. Stir in the flour and cook, stirring, for 1 to 2 minutes. Slowly whisk in the milk. Stir constantly until thickened, about 4 to 5 minutes. Season with salt and pepper.
  • Pour the gravy over the ham and tomatoes and serve immediately.

3 lbs sirloin tip roast, Cut into 1/2-inch thick slices
1 teaspoon salt, To Taste
1 tablespoon white vinegar, Distilled
3 cups unbleached flour
2 tablespoons pepper, Freshly Ground
vegetable oil, For Deep Fry
2 tablespoons unbleached flour
1 cup milk
1/4 teaspoon salt
1 sprig parsley

Steps:

  • Pound the meat with a spiked meat mallet to tenderize.
  • Cut each slice crosswise into 3 pieces.
  • Place in a large bowl.
  • Cover with water and add the salt and vinegar.
  • Marinate for 2 hours.
  • Combine the flour and pepper in a plastic bag and add the meat, (do not pat dry) 1 piece at a time, shaking to coat thoroughly.
  • Heat the oil in the deep fryer or deep large skillet, over medium heat, to 350 degrees.
  • Add the meat in batches (do not crowd) and fry until light brown, about 30 seconds per side.
  • Drain the meat on paper towels and place it on a heated platter that has been tented with foil.
  • For the gravy, pour off all but 2 Tbls of the oil in the skillet, leaving the browned bits.
  • Heat over medium heat and add the flour, stirring and scraping up all of the browned bits for 3 minutes.
  • Remove from the heat and gradually whisk in the milk.
  • Stir in the salt and continue to whisk until thickened, about 1 minute.
  • Serve over the steaks and garnish with parsley just before serving.
