1/4 cup sugar
1 teaspoon all-purpose flour
1 teaspoon ground mustard
1/2 teaspoon salt
1 large egg, lightly beaten
1/3 cup white vinegar
2 tablespoons water
1 teaspoon butter
1/2 cup mayonnaise
Torn mixed salad greens

Steps:

  • In a small saucepan, combine the sugar, flour, mustard and salt. Stir in egg until smooth. Gradually add vinegar and water. Cook and stir over medium heat for 3 minutes or until mixture reaches at least 160° and coats the back of a metal spoon. , Remove from the heat; stir in butter. Let stand for 5 minutes. Stir in mayonnaise until smooth. Cover and refrigerate until chilled. Serve with salad greens.

1 egg
1 cup water, plus
1 tablespoon water (divided)
2/3 cup all-purpose flour
2 teaspoons dry mustard
2/3 cup sugar
1/2 cup apple cider vinegar
3/4 cup vegetable oil
1 tablespoon lemon juice

Steps:

  • In a small bowl, beat the egg with 1 tbsp of the water;set aside.
  • In a saucepan, whisk together the flour, mustard, and sugar, then whisk in the remaining 1 cup water, vinegar, oil and lemon juice; heat over medium heat for 1 minute, whisking continuously (the dressing will be thick).
  • Add the egg mixture to the flour mixture and continue to cook for about 1 minute, stirring until the dressing has a mashed potato consistency and is off-white in color.
  • Remove from heat, cover, and cool completely.
  • Store in a covered jar in the refrigerator (will keep for several weeks).

1/2 cup cream or 1/2 cup mayonnaise
2 eggs, beaten

6 tablespoons vinegar
2 tablespoons butter

Steps:

  • Mix together and let come to a boil.
  • Cook until thick.
  • Add 1/2 cup cream or you can use 1/2 cup mayonnaise. Pour dressing over potato mixture.

1 can (20 ounces) pineapple chunks
2/3 cup sugar
1 tablespoon cornstarch
1/2 cup orange juice
3 tablespoons lemon juice
1 large egg, beaten
1/2 teaspoon butter

Steps:

  • Drain pineapple, reserving the juice. Set pineapple aside for salad. In a saucepan, combine sugar and cornstarch. Stir in the pineapple juice, orange juice and lemon juice. Add egg, mix well. Cook over medium heat, stirring constantly, until slightly thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat and stir in butter. Cover and chill. Serve over a mixture of fresh or canned fruit.

1 pound carrots, peeled, halved lengthwise, then cut crosswise into 1/3-inch-wide pieces
1/2 cup water
2 large garlic cloves, chopped
1/4 teaspoon coriander seeds
1/4 teaspoon dried crushed red pepper
1 1/2 teaspoons ground cumin
2 tablespoons fresh lemon juice
1 tablespoon olive oil (preferably extra-virgin)
1/3 cup chopped red onion
1/3 cup chopped fresh cilantro
4 Kalamata olives or other brine-cured black olives, pitted, chopped

Steps:

  • Combine carrots, 1/2 cup water, garlic, coriander seeds and crushed red pepper in heavy medium saucepan. Bring to boil. Reduce heat to medium; cover and cook until carrots are crisp-tender, about 7 minutes. Uncover; cook until water evaporates, about 1 minute. Transfer carrot mixture to medium bowl; cool slightly.
  • Meanwhile, stir cumin in heavy small skillet over low heat until fragrant, about 1 minute. Remove from heat. Stir in lemon juice and oil. Pour over carrot mixture; toss to blend. Cool completely.
  • Mix onion and cilantro into carrot mixture. Season to taste with salt and pepper. Sprinkle olives over salad and serve. (Can be made 2 hours ahead. Let stand at room temperature.)

This is an adaptation of several slightly different recipes, but slightly different from the rest. My family LOVES it--and so does everyone else who's tasted it! This is also wonderful as a topping for belgian waffles.

2 tablespoons flour
1/2 cup sugar
2 eggs
1 (20 ounce) can pineapple tidbits, juice of
1 lemon, juice of
1 orange, juice of
vinegar (approx. 1 T)
1 grated lemon, rind of
1/2 grated orange, rind of
1/2 pint whipping cream, whipped
2 -3 apples
2 oranges
3 -4 bananas
1 (20 ounce) can pineapple tidbits (you used the juice in the dressing!)
1 cup grapes
1 cup cherries (fresh, frozen, or canned)
fruit (in season, canned, or frozen)
miniature marshmallow (to taste(I use 1/2 bag)

Steps:

  • Whisk the flour & sugar together. Beat eggs until light, and whisk in flour & sugar.
  • Drain a can of pineapple tidbits into a 2-cup measure, add the lemon and orange juices, and pour in enough vinegar to make 1-1/4 cups total liquid.
  • Add to the egg mixture. Cook in double boiler, stirring constantly, until thickened.
  • Chill thorougly, then fold in whipped cream.
  • Fold into your mixed fruit--you really can use whatever fruit you have on hand. I've added mango, pears, starfruit, kiwi, and I can't remember what all!
  • Chill and enjoy!

WALDORF SALAD (WITH WONDERFUL COOKED DRESSING)



Waldorf Salad (With Wonderful Cooked Dressing) image

If you don't care for the mayonnaise dressed Waldorf Salads, this one is for you. It's from my grandmother and probably from the period of the 1930's or so. It's ABSOLUTELY DELICIOUS! I could eat this for dessert, and when I make it usually double or quadruple the recipe so I can send some home with everyone after the holiday dinner. It's best to make the dressing ahead of time so it has time to cool. I usually make it the day before the dinner so it's done and out of the way and ready to go when the salad is assembled the next day.

6 medium apples, washed, cored, and sliced, but not peeled
1 bunch celery, chopped
1/2 cup walnuts, chopped
2 -3 cups grapes, seed and halved
2 bananas, sliced and added just before serving
1 egg
2 teaspoons flour
2 teaspoons butter
1/4 cup vinegar
1/2 cup sugar
1/2 cup whipping cream, whipped

Steps:

  • Cook all of the dressing ingredients except the whipping cream in a double boiler stirring until it thickens. Take off the heat and set aside and let cool.
  • While the dressing is cooling, prepare the fruit and celery by cutting into the size pieces you like and chop the nuts.
  • When you are ready to assemble the salad, whip the cream and fold it into the dressing carefully, to make sure you keep as much volume as you can. Then mix in the fruit and nutmeats and put in the serving bowl.
  • If you are going to add bananas, do so close to serving time, so they don't turn brown. While grapes and bananas are optional, IMO they make the salad much nicer, and I've never made it without them. Don't use overly ripe bananas. Firm ones with a touch of green still on the stem, or solid yellow ones are best.

1 cup water
2/3 cup sugar
2 tablespoons lemon juice or 2 tablespoons vinegar
1 tablespoon cornstarch or 1 tablespoon arrowroot
1 tablespoon butter
1 whole egg
1 pinch salt
6 medium apples, chopped
1/2 cup coconut
1/2 cup chopped pecans or 1/2 cup chopped almonds

Steps:

  • Combine all the dressing ingredients in a saucepan (sometimes I add the raisins in also, so they plump up before they go into the salad).
  • Cook over low/medium low heat, while stirring constantly, until thickened and somewhat gloppy.
  • Allow to cool (I put it in a bowl and stick it in the freezer for about 15 minutes, stirring occasionally).
  • Mix together the salad ingredients (don't forget to toss in some extra lemon juice to keep the apples from browning).
  • Pour the dressing over the salad and stir together (the dressing is a little gluey, so you will have to work it into the salad).
