When you're having guests, you can pop this in the oven, bake,then keep warm for when you're ready to eat. It allows you more time for the rest of the meal.

Steps:
- Cover potatoes with water in lg pot.
- Cook until tender.
- Drain and mash.
- Add sour cream, cream cheese, and 3 T butter; mix well, add salt.
- Spoon into 11x7 baking dish.
- Melt 1 T butter; drizzle over potatoes.
- Bake, covered, at 350* for 30 minutes.
- Uncover and bake 10 minutes more.
COMPANY MASHED POTATOES
A very unique mashed potato casserole topped with a mixture of whipped cream, Gruyere and Parmesan cheese. Cook time is for baking and does not include the boiling of the potatoes. Absolutely delicious!

Steps:
- Peel and quarter potatoes, cover with water, bring to a boil and cook until tender, about 20 minutes.
- Drain and mash, add the butter and gradually add milk.
- Mash until smooth and stir in salt.
- Place mashed potatoes in a greased shallow casserole dish and cover to keep warm.
- Preheat oven to 450°.
- Whip heavy cream until stiff, then fold in gruyere cheese and 3 tablespoons of the Parmesan cheese.
- Spread cream mixture over top of potatoes and sprinkle remaining Parmesan over it.
- Bake for 12 to 15 minutes or until top is well browned.
- Serve immediately.

- Directions: 1 Preheat the oven to 350 degrees, and greased a baking dish. 2 Peel the film at the corner of the Simply Potatoes package to vent and heat on high for 3 minutes in the microwave. Carefully remove the film (be careful not to burn yourself with steam) and stir. Microwave on high for 1 more minute. 3 In a large bowl, mix the potatoes, goat cheese, cream cheese, and butter. Stir together until well-blended. 4 Carefully stir in the crumbled bacon, bell pepper, green onions, and pepper. Taste at this point and see if you want to add the salt. Stir in 1/3 cup of the cheddar and parmesan cheese until well combined. 5 Transfer to a prepared baking dish and sprinkle with the remaining cheese. 6 Bake, uncovered, for 20 to 25 minutes or until heated through. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
- In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
- Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

This is a great recipe to use at Thanksgiving or Christmas because it can be made ahead and heated through when needed. I usually make a half recipe because we are a family of 5. I got this recipe from Company's Coming.

- Cook potatoes as usual in salted water until tender. Drain. Push through potato ricer.
- Add cream cheese in pieces. Add next 5 ingredients. Beat until smooth and fluffy. Scrape into a 2 qt casserole.
- Place dabs of butter here and there over the top of the potatoes. Sprinkle with paprika. Cover and heat in 350 F oven until heated through (about 30-45 minutes, depending whether you've made it ahead and have taken it from the fridge).

- Peel and chop potatoes and boil in water until fork tender.
- Drain and mash potatoes in large bowl.
- Add cream cheese, sour cream, onion powder butter, egg, and garlic powder.
- Beat with hand mixer until fluffy.
- Scrape mixture into large casserole dish, and for nice appearance use back of spoon to "peak" potatoes like meringue.
- Dot with butter and sprinkle with paprika.
- *Mixture may be refrigerated at this point until needed, let stand at room temperature 1 hr before baking*.
- Bake in preheated 350°F oven for 30 minutes or until peaks slightly brown.
- Enjoy *this dish really holds its heat so be careful*.
