MARINATED HEARTS OF PALM SALAD
I found this on a Ralph's grocery store recipe card. I LOVE hearts of palm! I think mushrooms, olives and onions would be great in this also. And I'll probably try it with tuna and I bet it would be good with salami too! Oooh...and I'll be topping mine with feta. Yum!

Steps:
- In a small bowl, whisk together garlic, olive oil, vinegar, mustard and salt and pepper to taste.
- In a large salad bowl, combine hearts of palm, artichokes, tomatoes and parsley.
- Pour dressing over hearts of palm mixture, tossing to coat.
- Cover and chill 30 minutes.
- Spoon marinated mixture over greens and serve.

Steps:
- Mix all the ingredient except for the hearts of palm together in a bowl.
- Slice the hearts of palm into coins. Add to the vinaigrette.
- Chill in the fridge for at least 2 hours before serving.
VEGETARIAN CEVICHE THAT LOOKS NOT-SO-VEGETARIAN
I use hearts of palm to mimic octopus rings. it's really pretty (even though i always hated octopus). It requires no cooking and all the flavor. Amounts vary with size of vegetables.

Steps:
- Cut hearts of palm in circles and pop out the middle. (i keep the middle in the dish but the little loops look like octopus).
- Chop everything else and mix together.
- Serve in martini or margarita glasses with a little cilantro and fresh black pepper on top.

Steps:
- Top and tail the carrots wash, scrape and dry. Cut the carrots into matchstick strips.
- Heat the butter in a deep pan over a medium heat. Add the finely chopped onion and cook until a golden colour. Add the carrots and stir well.
- Dissolve the stock cube in 125ml hot water, add to the pan with the bay leaf.
- Reduce the heat and simmer until the carrots are tender, stirring frequently.
- Season with salt and pepper, remove bay leaf and stir in the cream just before serving.
- Garnish with extra bay leafs if desired.
- For Vegetarian use Vegetable broth.
