Steps:

  • Combine apples, rhubarb, apple cider, sugar, and cinnamon in a large saucepan. Cover and cook over medium heat for 20 minutes.
  • Transfer to a mixing bowl and mix on medium-high speed until all chunks are gone. Serve warm.

1/2 cup packed brown sugar
1 teaspoon ground cinnamon

Steps:

  • In a Dutch oven, combine apples, brown sugar and cinnamon. Cover and cook over medium-low heat 30-40 minutes or until apples are tender, stirring occasionally. Remove from heat; stir in vanilla. Mash apples slightly if desired. Serve warm or cold.

1 large green apple, such as Granny Smith, peeled and diced
2 cups diced rhubarb (2-3 stalks)
1/4 cup diced red onion
1/2 cup unsweetened apple juice
2 tablespoons dried cranberries
1 tablespoon honey
1 slice ginger, 1/4 inch thick and peeled
1 teaspoon balsamic vinegar (to taste)

Steps:

  • Combine apple, rhubarb, onion, apple juice, cranberries, honey and ginger in a medium saucepan. Cover and cook over medium heat, stirring occasionally, until the rhubarb is soft and the apple is tender but not mushy, 10 to 12 minutes.
  • Remove from the heat and let stand for 5 minutes.

Tart, sweet, luscious, and oh-so easy. Just five ingredients and 30 minutes and you'll have quite possibly the best applesauce you've ever eaten.

6 apples (3 pounds, peeled, cored, and chopped into 1-inch chunks)
4 cups chopped rhubarb (about 1 1/2 pounds)
4 3- inch cinnamon sticks
1/2 cup granulated sugar + additional sugar if desired
2 cups water
1 - 2 teaspoons ground cinnamon (optional)

Steps:

  • Add apples, rhubarb, cinnamon sticks, 1/2 cup sugar and 2 cups water to a large pot set over medium heat.
  • When the mixture comes to a boil, reduce heat and simmer, partially covered, for 30-40 minutes until soft and thick. If any fruit chunks remain, mash with a fork or potato masher.
  • Remove cinnamon sticks. Taste for sweetness and add additional sugar if desired. Add ground cinnamon if desired.
  • Keeps refrigerated in an airtight container for 3 - 4 days.

2 golden delicious apples (unpeeled)
1 cup chopped rhubarb
1/2 cup sliced strawberry
1/4 cup white sugar
2 teaspoons freshly grated orange rind
1/3 cup orange juice (preferably freshly squeezed)

Steps:

  • Apple peel adds colour and fibre to this dish, so I recommend you don't peel the apples; however, you can certainly do so if you wish.
  • Core apples and chop into chunks; place in a saucepan along with 1 tbsp cold water.
  • Over medium heat, cook, stirring often but not continuously, for 5 minutes.
  • Add remaining ingredients and turn heat up; bring to a boil.
  • Once boiling, turn heat down to a simmer and let cook, stirring often, for 10 minutes or until rhubarb and apples have softened.
  • Taste; you may want to add more sugar depending on the tartness of your rhubarb.
  • You can puree this in the cuisinart, but I prefer to keep it chunky.
  • Refrigerate if not serving right away.

3 cups chopped fresh or frozen rhubarb
2 medium tart apples, peeled and chopped
1 egg
3/4 cup sugar
1/4 cup maple syrup
1/4 to 1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 cup all-purpose flour
1/2 cup packed brown sugar
Pinch salt
1/2 cup cold butter, cubed

Steps:

  • In a bowl, combine the rhubarb, apples, egg, sugar, syrup, nutmeg and cinnamon. Pour into a greased 2-qt. baking dish. In another bowl, combine the flour, brown sugar and salt. Cut in butter until the mixture resembles coarse crumbs; sprinkle over fruit mixture. Bake at 350° for 45-55 minutes or until bubbly.
