We took a traditional side dish and turned it into the best Christmas Holiday Ambrosia Salad. Loaded with cranberries, pecans, mandarin oranges and more. A holiday favorite!

1 14 ounce can whole berry cranberry sauce
1 8 ounce can crushed pineapple, drained
1 8 ounce can shredded pineapple, drained
1 11-15 ounce can mandarin oranges, drained
2 cups miniature marshmallows
8 ounces of homemade or store-bought whipped cream
1/2 cup vanilla yogurt
1 cup shredded coconut
1 cup chopped pecans

Steps:

  • In a large bowl, combine the whole berry cranberry sauce, both pineapples and mandarin oranges.
  • Add the whipped cream and vanilla yogurt. Mix and combine well.
  • Gently fold in the marshmallows, coconut and pecans.
  • Cover and refrigerate for at least 12 hours.
  • Serve chilled. Serve on lettuce or spinach leaves for holiday serving - looks incredibly festive!

1/2 cup pecans
3/4 cup heavy cream
1/3 cup sour cream
3 cups mini marshmallows
1 1/2 cups diced pineapple (1/2-inch dice)
1 cup sweetened shredded coconut
One 11-ounce can mandarin oranges in light syrup, drained well
One 10-ounce jar maraschino cherries, stems removed and halved

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
  • Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
  • Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

My Mom would make this every Thanksgiving and Christmas, and it has been a family favorite for three generations. The dressing is gently cooked, and the salad so light you can serve it anytime.

8 ounces uncooked orzo pasta
¾ cup white sugar
2 large eggs eggs, beaten
2 tablespoons all-purpose flour
½ teaspoon salt
2 (8 ounce) cans pineapple chunks, drained with juice reserved
1 (11 ounce) can mandarin orange segments, drained
1 cup shredded coconut
4 cups frozen whipped topping, thawed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, 5 to 7 minutes. Drain, transfer to a large bowl, and cool.
  • Whisk the sugar, eggs, flour, salt, and reserved pineapple juice together in a saucepan until smooth. Cook and stir over medium heat until the mixture thickens. Pour over cooled pasta, and toss to coat evenly. Cover and refrigerate overnight, or at least 8 hours.
  • Stir the pineapple chunks and mandarin oranges into the pasta mixture. Mix in the coconut if desired. Stir in the frozen whipped topping until evenly blended. Chill until serving.

8 ounce(s) can of pineapple chunks, drained
1 cup(s) minature marshmallows
1 cup(s) fresh red seedless grapes, halved
6 ounce(s) of sour cream
1 cup(s) coconut, flaked
1/2 cup(s) chopped pecans

Steps:

My mom always served this colorful, refreshing salad/dessert at Christmastime. Wouldn't be Christmas without it! I don't know where the recipe came from, but we're a southern family, so perhaps it's a southern tradition, I'm not really sure.

1 -2 blood orange
1 -2 pink grapefruit
2 -3 tangerines
1 (16 ounce) bag shredded coconut
1 (16 ounce) bag miniature marshmallows (optional)

  • Depending on how much you want, and how colorful you want it, you can vary the fruits each time you make it.
  • Carefully separate the fruits into sections and remove all membranes.

1 pound fresh or frozen cranberries
1 can (20 ounces) crushed pineapple, drained
1 cup sugar
2 cups miniature marshmallows
1 cup heavy whipping cream, whipped
1/2 cup chopped pecans

Steps:

  • In a food processor, cover and process cranberries until coarsely chopped. Transfer to a large bowl; stir in pineapple and sugar. Cover and refrigerate overnight. , Just before serving, fold in the marshmallows, whipped cream and pecans. If desired, top with additional chopped pecans.
