- In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomatoes, broth and water. Bring to a boil., Add celery, carrots, barley, thyme and pepper. Reduce heat; simmer, covered, for 10-12 minutes or until vegetables and barley are tender., Remove from heat; stir in parsley. Let stand 5 minutes.

EASY CHEESY HAMBURGER SOUP
This is a simple, easy, inexpensive soup that kids and adults love! I usually add about 1 cup frozen corn (thawed), and 1 can of green beans. This really adds to the veggie content, and overall heartiness of the soup. This is my husband's favorite!!!!!

Steps:
- In a 5 quart stock pot brown the ground beef with the onion and garlic.
- Add the tomatoes, water, bouillon, carrots, potatoes and celery.
- Simmer until the veggies are tender (about 15 minutes).
- Add the uncooked pasta- continue to simmer for about 10 minutes- until pasta is near cooked through.
- Add the cubed velveeta- stir until melted.
- Combine the milk and flour- whisk until smooth- add to simmering soup, stir until thickened.
- (you may have to adjust the milk flour ratio to desired consistency.).

CHEESEBURGER SOUP I
I use sharp cheddar cheese because I like the taste but any cheddar is good.

Steps:
- In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
- Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
- Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
- Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.

- In lg soup pot, brown beef; add next 4 ingredients.
- Cook and stir 2 minutes.
- Add broth, boullion cubes, and tomatoes.
- Cook and stir 2 minutes.
- Add italian seasoning, worcestershire sauce, and hot pepper sauce.
- Bring to a boil; reduce heat and simmer for 15 minutes.
- In small sauce pan, heat butter, add flour.
- Cook and stir on med until mixture is beginning to brown.
- Carefully mix into soup.
- Cover and simmer for another 15 minutes, stirring occasionally.

QUICK, HOMEMADE HAMBURGER SOUP
This is my favorite soup ever! It's what I make most often for myself and my daughter and it is soOo easy. During spring we use vegetables from the garden but the easiest way is just using regular canned produce. It's wonderful either way you choose.

- Heat a large pot over medium-high heat, and stir in the ground beef. Cook until the beef is crumbly, evenly browned, and no longer pink. Drain, and discard any excess grease.
- Stir in the potatoes, carrots, green beans, corn, tomatoes, tomato sauce, and water. Bring the soup to a boil over high heat. Reduce heat to medium-low, cover, and simmer until the potatoes are tender, about 20 minutes. Season to taste with salt and pepper.
