This creamy dessert is easy to make for weekday dinners, yet pretty enough for company. Instant chocolate pudding is layered with a mixture of pureed strawberries and whipped cream to create yummy parfaits. For quicker results, use whipped topping rather than whipping cream...or serve in a single bowl.

- In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; set aside. Drain strawberries (discard the juice or save for another use); place berries in a blender. Cover and process until smooth; set aside. , In a large bowl, beat cream and sugar until stiff peaks form. Gently fold in strawberry puree. Divide half of the chocolate pudding among four or six parfait glasses. Top with half of the strawberry mixture. Repeat layers. Garnish with a strawberry slice if desired.

- Prepare pudding as per the directions using 1 cup of milk, set aside. Crush graham cracker cookies and put a small layer into the bottom of 6 parfait glasses followed by a layer of strawberries, pudding and then COOL WHIP. Repeat. Garnish with strawberry slices, sprig of mint and chocolate.
- Refrigerate until ready to serve. Makes 6 (1-cup) servings.

- In a small saucepan, heat milk on medium-low heat until scalding around 180˚F (82˚C). Do not boil the milk.
- Pour hot milk over chocolate.
- Add vanilla and salt. Let it stand for 3 minutes to soften.
- Whisk together until fully incorporated. Let cool.
- Add yogurt. Whisk together until fully incorporated.
- Layer chocolate in the bottom of 2 cups followed by strawberries. Repeat until the glasses are full.

- Whisk together eggs and sugar in a heatproof bowl set over (but not in) a pot of simmering water until doubled in volume and a thermometer registers 160 degrees (6 to 8 minutes). Remove from heat. Add chocolate, cocoa, espresso powder, and salt. Stir in butter until melted. Let cool slightly.
- Meanwhile, whip cream to stiff peaks. Stir one-third of whipped cream into chocolate mixture until lightened, then fold in remaining whipped cream. Divide half of mousse between two glasses; sprinkle with crushed cookies. Top with remaining mousse and refrigerate until set, at least 1 hour and up to 1 day. - Place strawberries in a food processor; process until pureed. In a small saucepan, combine cornstarch and strawberries until blended. This is such a pretty recipe. I just love parfaits and I adore this light and fluffy mousse one. Butter cookies are among my fave and I love the fact that they are used in this recipe. Easy recipe with little prep needed.

- Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
- Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
- Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
- Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
- In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.
EASY STRAWBERRY MOUSSE PARFAITS
This is one of my hubby's delicious and eye-pleasing creations. He used tall parfait glasses, filled them 1/3 full of sliced strawberries, filled the glass the rest of the way with the strawberry mousse and then garnished it with a fresh, whole strawberry and sprig of mint. I should have taken a picture! DH used strawberries, but I look forward to trying it with other fruits such as mango, raspberries/blackberries (seived to remove the seeds) and peaches. Yum!

- Place 2 cups of sliced strawberries in a medium bowl. Stir in sugar and allow to macerate at room temperature for 15-20 minutes.
- Take 1 cup of the strawberry mixture and puree in a blender. Then add cool whip and blend until thoroughly combined, smooth and creamy.
- Spoon the reserved strawberry mixture (including juice) evenly into the bottom of four tall parfait glasses. Then fill each parfait glass to the top with the "mousse".

- In a bowl, toss strawberries and liqueur; cover and refrigerate.
- To make chocolate mousse: In a small saucepan, mix water with 2 tablespoons of the sugar. Bring to boil; reduce heat and simmer 1 minute.
- Place chocolate pieces in container of electric blender.
- Immediately add hot sugar mixture.
- Blend until chocolate is melted and smooth.
- In medium bowl, whip 3/4 cup of the cream to form stiff peaks. With rubber spatula, fold chocolate into cream to blend thoroughly. Cover and refrigerate until firm, at least 2 hours or up to 3 days.
- Just before serving, whip the remaining 3/4 cup cream to form soft peaks.
- Beat in the remaining 1/2 tablespoon sugar and the vanilla.
- In four 10 to 12 ounce stemmed wine glasses or in dessert bowls, layer mousse, whipped cream and strawberries, dividing equally.
- Garnish with mint sprigs.
- (Chilling time is included in the cooking time.).
