CRANBERRY-CHILE SAUCE

1 cup sugar
4 cups fresh or frozen cranberries
1/4 cup grated orange zest (from about 3 oranges)
2 dried guajillo chile peppers, stemmed and seeded
2 dried ancho chile peppers, stemmed and seeded
Kosher salt

Steps:

  • Place the sugar and 1 cup water in a medium saucepan over high heat and bring to a boil, stirring until the sugar dissolves. Add the cranberries to the saucepan and return to a boil. Turn down the heat to low and let simmer until the cranberries start bursting, about 10 minutes. Add the orange zest to the sauce.
  • Meanwhile, bring 1 cup water to a boil in a small saucepan over medium heat. Add the guajillo and ancho chiles and simmer until the chiles soften, about 5 minutes. Turn off the heat.
  • Transfer the chiles to a blender using a slotted spoon; blend until they become paste-like, adding some of the water from the pan to loosen. Add the chile paste to the cranberry sauce, season with a pinch of salt and stir. Heat and serve as a great twist to a Thanksgiving classic!

100g golden caster sugar
175ml white wine
½ mild red chilli , chopped, seeds left in
300g frozen or fresh cranberries

Steps:

  • Gently heat sugar and wine in a saucepan. Once sugar has dissolved, bring to the boil.
  • Tip in the chilli and cranberries, return to the boil, then turn the heat down and simmer for about 10 mins until the berries have popped but not completely collapsed. Take off the heat. The sauce will continue to cook with the heat from the pan, then thicken as it cools.

1 can (14 ounces) jellied cranberry sauce
1 bottle (12 ounces) chili sauce
3/4 cup packed brown sugar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 package (32 ounces) frozen fully cooked homestyle meatballs, thawed

Steps:

  • In a large saucepan over medium heat, combine the first six ingredients; stir until sugar is dissolved. Add meatballs; cook until heated through, 20-25 minutes, stirring occasionally. , Editor's Note: To prepare in a slow cooker, heat sauce ingredients as directed. Add sauce and meatballs to a 4-qt. slow cooker. Cook, covered, on low until heated through, 2-3 hours. , Freeze Option: Freeze cooled meatball mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary.

You can make this sauce a day ahead and chill it; if it's too stiff for your tastes when you remove it from the fridge, add a little water and sugar, reheat until simmering and then cool once more. Zest of 2 limes (2 teaspoons), divided
1 to 2 dried chiltepin, chile pequin or bird chiles, to taste, crushed in a spice mill or a mortar and pestle, or 1/2 teaspoon crushed chile pequin
1 1/4 pounds cranberries (4 1/2 cups)
Zest of 1/2 orange
3/4 cup sugar, more to taste
2 cloves, crushed in a mortar and pestle or ground in a spice mill
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Set aside the zest of 1 lime (about 1 teaspoon) for garnish. In a large saucepan, combine all the remaining ingredients with 1/4 cup water. Bring to a simmer over medium heat, then reduce heat to low and simmer, stirring often, until thick, 10 to 15 minutes. Remove from heat.
  • Transfer to a serving dish and allow to cool. (Sauce will continue to thicken.) Garnish with the reserved lime zest.

500g fresh or frozen cranberries
finger-sized piece ginger , peeled and roughly chopped
3-4 red chillies , roughly chopped (deseeded if you don't like it too hot)
200g golden caster sugar
100ml red wine vinegar

Steps:

  • Tip half the cranberries, the ginger and chillies into a food processor and whizz until very finely chopped. Scrape into a heavy-bottomed pan and add the remaining cranberries along with the sugar and vinegar, then bring everything to the boil, skimming off any scum that comes to the surface. Turn the heat down to a gentle simmer and keep cooking for about 20-30 mins, stirring occasionally.
  • Once the jam is starting to become sticky, continue cooking for a further 5 mins, stirring frequently so that the mixture doesn't burn on the bottom of the pan. It should look like a thick, bubbling lava. Cool slightly, then transfer to sterilised jars and leave to cool completely. Will keep for three months in a cool, dark place; keep in the fridge once opened.

100g light muscovado sugar
100ml orange juice, fresh or from a carton
250g pack fresh or frozen cranberries

Steps:

  • Tip 100g light muscovado sugar and 100ml orange juice into a pan, then bring to the boil.
  • Stir in 250g fresh or frozen cranberries, then simmer until tender but still holding their shape - this will take about 5 mins if using frozen cranberries or 8-10 mins if using fresh.
  • The sauce will thicken as it cools. Will keep in the fridge for 1 week. On the day, bring to room temperature before serving.
